INGREDIENTS
Makes 12
12 slices of ham
(generally get wafer thin)
6 eggs
6 cheese triangles OR 200g plain
quark & 3 baby bel chopped up
6 baby tomatoes cut in half
(for top of bite)
1/2 each red, yellow and green
pepper chopped
1/2 onion (I use red) chopped
1/2 dozen mushrooms chopped
(about 75g)
1 heaped tsp turmeric, sprinkle of
chilli flakes, sprinkle of tarragon,
salt and pepper
Frylight
METHOD
1. Preheat oven to approx 200c. Line muffin tin with slices
of ham.
2. Fry peppers, mushrooms and onion until soft in a little
frylight. Add turmeric, tarragon and seasoning.
3. Add the vegetables to the ham cases.
4. Combine 6 eggs and the cheese/or/quark & babybel
until mixed together well. Add the egg mixture to the ham
& veg cases in equal amounts.
5. Add a half tomato on top.
6. Pop in the oven until baked - between 15 to 25 mins
depending on the size of the muffin tray.
7. They are nice hot or chilled - will keep a few days
in the fridge.
