FRUITY MALT LOAF
INGREDIENTS
200mls warm tea 2 eggs beaten
300g mixed dried fruit 250g plain flour
175g malt extract 1 tsp baking powder
85g dark brown sugar ½ tsp bicarbonate of soda
1 tsp ground cinnamon or mixed spice
METHOD
1. Pour the tea over the fruit and add 1tbsp malt extract, leave
overnight to soak or for at least 3 hours. (you can heat this in the
microwave for 2 minutes on full power and then leave to cool as a shortcut).
2. Preheat the oven 150C/ gas 3 and line a 2lb loaf tin with baking parchment
or loaf tin liner.
3. Add the remaining malt extract and the sugar to the mixed fruit and mix well.
4. Add the beaten eggs and the flour, baking powder and bicarb.
5. Pour into the prepared tin and bake for 1and a half hours. It will sink in the middle.
6. When cool, wrap in cling film and keep for at least 2 days before cutting.
Can be frozen and is lovely served spread with butter.

NORDEN WI UPDATE
Norden Wi have been keeping in touch during 2020
lockdown and have met, social distanced of course,
for a natter in Jubilee park.
Unfortunately not all our members are on email so we have
not had zoom meetings like some clubs but we have all been
there for each other through these very strange times. Chris
our president has written a newsletter each month to keep us up to date with things nationally
and in Lancashire.
We cant wait to be able to meet again and when we get the go ahead we will be returning to
the heart of Norden. We will be meeting at St Pauls Church Hall on the FIRST THURSDAY of
each month. We will keep you informed and will be welcoming members and new prospective
members to our meetings. It will be good to get together again.
Keep a lookout for announcements and posters around the village and area.
There will be a lot going on in 2021 as it will be Lancashire Federation of WI’s
Centenary plus 1- we will be celebrating seeing as all events scheduled for this year
have had to be cancelled.
