bekliyoruz. Gelecek sayımız ile CNR Food ve WorldFood
İstanbul fuarlarındaki stantlarımıza bekleriz.
Önce sağlık, sonra da bol kazançlar!
Fairs have become
the measure of normalization
Although the venues and events are opened one after
another, normalization does not fit the mind unless fairs
are held, especially the international ones. Whenever
fairs take the stage with people flowing in, then everyone
forgets about the pandemic.
There is a saying in the science of economics: “Unless
there is a problem, the value of accounting services
in companies is not valued”. That is to say, fairs have
such an importance beyond trade, even in social life.
Although everybody knew the importance of fairs in
trade for a long time, nobody knew that they had such
an important place in the social life.
The season started with the Istanbul beauty fair in early
September. There have been various fairs in Turkey and
worldwide, but our big hope is that if two food fairs in
November can be held, the real big step will have been
taken. Next year, the fairs will be halved in terms of visitors,
but I am sure that they will function at least twice as
much as the old fairs. We expect the demands that have
been stuck for two years to turn into trade at these fairs.
With our next issue, we would be happy to welcome you
at our stands at CNR Food and WorldFood Istanbul fairs.
I wish everyone first health and then lucrative businesses.

2020 ihracat hedefimiz olan 165,9 milyar dolara da

zaten halihazırda alıyorduk. Normalleşmeyle gelen
son üç aydaki ihracat rakamlarımız, yeni dönemin

2021-2023 Yeni Ekonomi Programı’nda da
“İhracata ve ithal ürünlerin yerli üretimine dayalı

verilen önemi vurguluyor. Ayrıca, büyüme hedeflerine

Touching on Turkey’s supports for exporters,
she said the country’s Eximbank in

Paritenin olumlu etkisi 475 milyon dolar
Son dönemde paritedeki artışın etkisi ihracata
pozitif yansıdı. Eylül ayında paritedeki artışın
pozitif etkisinin 475 milyon dolar olarak gerçekleştiğini
görüyoruz. Yılın ilk dokuz ayında ise
paritedeki yükselişin pozitif etkisi 38 milyon 521

40% reduction in specific
carbon emissions achieved
in Belgium production facility.
BENEO moves further towards
carbon neutrality at Oreye
chicory root fibre plant
BENEO, one of the leading manufacturers of
functional ingredients, has announced a 40%
reduction in specific carbon emissions at its
Oreye facility in Belgium. This achievement is a
result of a 10-year program of energy saving,
which closed with an 11 million Euro investment
into increased energy efficiency measures.
The reductions at Oreye show the company’s
continued commitment to prioritising sustainable
practices in all of its facilities. This latest
development marks an important step for
BENEO as it aims for carbon neutrality by 2050.
As part of the recent investment, a new gas
turbine and heat recovery boiler was installed
at the Oreye facility. As well as providing for
BENEO’s own electricity production needs,
the new system also enables the company to
export an additional five megawatts to the
public electric grid network each year.
Project planning for the system began in 2017.
As well as the installation of new equipment,
significant civil works had to be undertaken,
including the dismantling of old sections of the
building and the erection of a new steel structure
in the heart of the factory, to house the system.
The gas turbine went into pilot operation in
August 2019 and is now running at full capacity.
Philippe Dumont, Operations Managing
Director at BENEO’s Oreye facility, comments:
“Sustainable development is a cornerstone of
our business strategy and BENEO is committed
to achieving carbon neutrality by 2050. The
production plant in Oreye continues to contribute
to this target with a combination of solutions,
including the increased use of renewable
energy in future. The integration of the new
gas turbine system into our existing steam and
electricity production is an important part of

the energy efficiency program that we began
10 years ago. Our aim was to cut specific
carbon emissions on site and to date we have
achieved a total reduction of 40%, thanks to
significant fuel efficiencies and yield gains.”
BENEO has been producing prebiotic natural
chicory root fibres at Oreye since 1992, by using
a gentle hot water extraction method. The resulting
dietary fibres inulin and oligofructose can
be used in bakery, cereals, dairy, confectionery
and baby food products. The plant has been
supported by Oreye’s local agriculture for more
than 130 years. Today 700 farmers in the region
have a chicory contract with BENEO, and the
Oreye facility currently employs 300 people.
BENEO’s sustainability initiative at Oreye comes
as part of an overall 61 million Euro investment
in Belgium in the past 12 months. The company
also recently announced a 50 million Euro investment
in BENEO’s rice starch facility in Wijgmaal.
Eat better, live well.
Power up with functional ingredients.
Future wellbeing has become the common goal for consumers worldwide. Nutrition is the starting point in our journey
towards the good life, even more so, it is an essential part of it. Strong mental and physical health are the first line
of defence and safety net to face new and everyday challenges. Formulate food and drinks that power consumers’ lives
without compromising taste or health. Functional ingredients, like prebiotic fibre and slow-release carbohydrates,
set them on their way to a fulfilled and healthy life.

In terms of visitors the organisers of Anuga are

mevsimsel değişimlerini takip ederek
potatoes, sunflower seeds, pulses, seed
products, fresh vegetables, and fruits. For
example, almost all of the leading hazelnut
and raisin businesses with a significant share
in Turkey’s exports prefer TOMRA machines.
We support our export-oriented customers
with technologies that we have developed
specifically for products with high economic
value such as raisins, apricots, figs, hazelnuts,
and pistachios. Our main customers
in production for the domestic market are
the producers of potato products, frozen vegetables,
convenient greens, and pickles.
We also offer solutions for other areas such
as fresh vegetables and fruit, convenience
food, seeds, and pulses.
How are TOMRA sorting machines different
from traditional methods?
TOMRA Food is a leading manufacturer
of food sorting machines and processing
technology for fresh and processed food industries.
Thanks to our continuous R&D investments
and studies, we offer the most comprehensive
and most innovative sensor-based
sorting machines and solutions in the food industry
that can detect the most challenging
defects and foreign substances and classify
products according to their quality. We can
provide results for our customers that cannot
be achieved with traditional methods.
TOMRA Food’s innovative sensors process
food products in the most precise way
while keeping food waste and losses at the
lowest level, offering significant cost savings.
In this way, our solutions pay for themselves
as soon as possible.
TOMRA Food develops the widest range
of solutions in the industry. By using optical
technologies with different features ranging
from color cameras to multi-spectral cameras,
from x-ray sensors to laser technologies,
we can successfully define the biological
characteristics of the products that cannot
be performed with the human eye or conventional
sorting machines. By examining
the visual features, biological and surface
structures of the products, a precise contrast
is obtained between good or bad products.
As TOMRA Food, we can successfully solve
challenging problems such as quartz

stones from the field and plastic contamination
from the production process in
food products. Beyond that, we follow the
seasonal changes of food products in cooperation
with the producers, and provide
the opportunity to eliminate characteristic
defects such as rain, hail, insect damage,
sunburn, rot and aflatoxin that equal quality
loss in agricultural products.
Our BSI+ (Biometric Signature Identification)
technology is the cutting edge technology
in the multi-spectral cameras used today.
While defining the widest wavelength of light
in the industry with a precise and sharp
resolution, the special software we developed
performs sorting with unique success.
Thanks to BSI+ technology, it is possible to
identify biological differences and variations
between products examined.
TOMRA’s patented Detox laser technology,
one of our other important technologies,
also identifies aflatoxin found in products
such as figs and peanuts. The Detox laser
sorting machine has a unique optical
design that allows aflatoxin contamination
to be detected and eliminated. This laser
technique can capture extremely low-intensity
light reflected by fungi.
yağmur, dolu, böcek hasarı, güneş yanığı,

BSI+ (Biyometrik İmza Tanımlaması) teknolojimiz
ise günümüzde kullanılan çoklu
spektral kameraların geldiği son nokta.
Sektördeki en geniş ışık dalga boyunu
hassas ve keskin bir çözünürlükle tanımlarken
geliştirdiğimiz özel yazılım, benzersiz bir

Diğer önemli teknolojilerimizden TOMRA
patentli Detox lazer teknolojisi de incir ve
yer fıstığı gibi ürünlerde bulunan aflatoksini
tanımlıyor. Detox lazerli ayırma makinesi, aflatoksin
kontaminasyonunun tespit edilebilmesine
ve ortadan kaldırılabilmesine olanak

tekniği, mantarların yansıttığı son derece
düşük yoğunluklu ışığı yakalayabiliyor.
What are the disadvantages of manually
sorting with traditional methods? Could you
give information about the effect of sorting
machines on product quality?
Quality fluctuations due to selection performance
and returned products damage
the brand reputation and cause financial
and operational difficulties. Increasing
labor costs around the world and the labor
problem, which has become more pronounced
during the pandemic process,
are among the issues experienced by food
companies with uninterrupted production.
It is well known, manual sorting efficiency
highly depends on the mood of the
worker; that the quality and capacity of
the production cannot be changed due
to limitations of the order; that there is a
lack of experienced personnel, and also a
difficulty of labor supply based on regions.
TOMRA Food helps to eliminate all these
problems permanently, regardless of seasonal
changes in agricultural products.

Providing high quality and safe food is an
essential issue in our industry. The return of a
product can have reputational and financial
disastrous consequences for a company.
Food sorting and analysis equipment
play a crucial role in protecting both consumer
health and brand reputation. This
makes food sorting and analysis systems
even more necessary for food safety.
Geleneksel yöntemler ile manuel ayıklama
yapmanın dezavantajları nelerdir?
Ayıklama makinelerinin ürün kalitesine olan
etkisi hakkında bilgi verir misiniz?
Geleneksel yöntemler ve elle ayıklama
yapılan tesislerde seçme kalitesine bağlı
yaşanan kalite dalgalanmaları ve iade olan
ürünler, hem marka itibarını zedeliyor hem
de maddi ve operasyonel zorluklara neden
oluyor. Dünya genelinde artan işçi maliyetleri
ve pandemi sürecinde daha belirgin
hale gelen işgücü sorunu, kesintisiz üretim
yapan gıda firmalarının sorunları arasında
önemli bir yer alıyor. Elle ayıklamanın işçi
performansına göre anlık değişebilmesi,
sipariş gereği üretimde kalite ve kapasitede
değişikliğine gidilememesi, tecrübeli eleman
eksikliği ve bölgelere göre işçi tedariğinin
zorluğunu da eklemek gerekiyor. TOMRA
malzemesi operasyonlarda zorluk yaratabiliyor.
TOMRA’nın yenilikçi makineleri,
değişken giriş malzemelerinde bile kaliteli
Also, rising end product standards,
increasing food demand, and variable
input material can create difficulties in
operations. TOMRA’s innovative machines
ensure reliable processing of the quality
end product at high capacities, even
with varying input materials. One year
insect damage may be a problem for
producers, while another year, aflatoxin
problem appears, forcing manufacturers
to be prepared for the worst conditions.
At TOMRA, besides our technologies and
machines, we follow seasonal developments
with our experienced local teams
and optimize their systems for current
conditions; thus, we can ensure the best
efficiency in variable conditions.
What is the effect of TOMRA Food on the
proper use of quality and time management
of food processing companies?
The high capacity of TOMRA machines
enables the harvested products to be
processed in the shortest time possible. In
this way, it contributes to the reduction of
energy and labor costs.
Due to global warming, climate changes,
and excessive rain, hail, frost, or pest
infestation associated with unconscious
agricultural practices, the yield, and quality
of agricultural products can change
significantly every year. Shorter harvest
seasons require producers to process
high capacity in less time. In addition to
the increasing demand for food, stricter
food safety standards are needed every
year. The tolerance for foreign matter and
quality defects in some special products
and markets is almost zero. We offer the
industry the opportunity to tackle variable
challenges by sorting these products at
their source and processing facilities according
to the required quality.

son ürünün yüksek kapasitelerde, güvenilir
bir şekilde işlenmesini sağlıyor. Bir yıl böcek
hasarı, üreticiler için sorun olurken takip
eden sene aflatoksin sorununun baş göstermesi
üreticileri en kötü şartlara karşı hazırlıklı
olmaya zorluyor. TOMRA olarak teknolojilerimiz
ve makinelerimizin yanı sıra tecrübeli
yerel ekiplerimizle sezonluk gelişmeleri takip
ederek, sistemlerini güncel şartlara optimize
ediyoruz ve bu sayede değişken şartlarda
daha en iyi verimliliği garanti edebiliyoruz.
Gıda işleme firmalarının kalite ve zaman
yönetimini doğru kullanmada TOMRA
Food’un etkisi nedir?
TOMRA makinelerinin yüksek kapasitede
çalışması, hasat edilen ürünlerin en kısa
sürede işlenmesine olanak sağlıyor. Bu sayede
enerji ve işçilik masraflarının düşürülmesine
katkıda bulunuyor.
Küresel ısınma, iklim değişiklikleri ve bilinçsiz
tarım uygulamalarıyla bağlantılı aşırı yağmur,
dolu, don veya zararlı böcek istilası gibi
nedenlerle tarımsal ürünlerin rekoltesi ve
kalitesi her yıl çok ciddi değişimler gösterebiliyor.
Kısalan hasat sezonları üreticilerin
daha az sürede yüksek kapasitede ürün
işlemesini gerektiriyor. Artan gıda talebinin
yanında her geçen sene daha sıkı gıda
güvenliği standartları isteniyor, bazı özel
ürünlerde ve pazarlarda yabancı madde
ve kalite kusurlarında tolerans sıfıra yakın.
Biz bu ürünleri, ihtiyaç duyulan kaliteye göre
kaynağında ve işleme tesislerinde ayıklayarak
sektöre değişken zorluklarla mücadele
etme imkânı sunuyoruz.
Kullandığımız özel yazılımlar, üretim kalitesinde
ve kapasitede değişiklik yapılması gerektiğinde
çok hızlı ayarlama imkânı sunuyor. Bu
sayede farklı taleplere ve her işletmeye özel
ihtiyaçlara en verimli çözümü sunabiliyoruz.
TOMRA Yönetim Kurulu Başkanı Stefan
Ranstrand, “Gelecekten en büyük
beklentimiz, gıda israfını daha da azaltma
konusunda müşterilerimize yardımcı olmak
ve verimliliği arttırmak” demişti. Uzman
bir ayıklama teknolojisinin gıda israfını
azaltmadaki rolünden bahseder misiniz?
Dünyada üretilen tüm gıdaların neredeyse
üçte biri hiçbir zaman tüketilmiyor ve her yıl
1,3 milyar ton gıda israfı oluyor. Bu durum,

TOMRA Chairman of the Board, Stefan
Ranstrand said, “Our biggest expectation
from the future is to help our customers
further reduce food waste and increase
efficiency”. Could you tell us about the
role of an expert sorting technology in
reducing food waste?
Almost a third of all food produced in
the world is never consumed, and 1.3
billion tons of food is wasted every year.
This covers 45 percent of all fruits and
vegetables and 20 percent of meat. Just
a quarter of what we mention as the wasted
food equals to the need for feeding
the world’s 795 million hungry people.
Therefore, food waste appears like a billion-dollar
global problem.
tüm meyve ve sebzelerin yüzde 45’ini ve etin
yüzde 20’sini kapsıyor. Bahsettiğimiz boşa harcanan
gıdanın sadece dörtte biri, dünyadaki
795 milyon aç insanın beslenmesi anlamına
geliyor. Bu nedenle gıda israfı, milyar dolarlık
global bir sorun olarak karşımıza çıkıyor.
TOMRA Food, gıda israfı sorununun bilinciyle
israfı azaltmak üzere çiftçiler, işleyiciler ve
perakendeciler ile yakın çalışmalar yürütüyor.
Gıda israfı konusunda sözcü olmaya,
sorunu ele almaya ve tedarik zincirini iyileştirmeye
yönelik çözümler sunmaya çalışıyoruz.
Sensör bazlı ayıklama makineleri, görsel
kusurları bulunan ancak sağlıkla tüketilebilecek
durumdaki ikinci kalite ürünleri
yüksek başarıyla seçerek çöpe gitmelerini
engelleyebiliyor. TOMRA, doğru teknolojileri
ve yerel ekiplerinin ürün hakkındaki
uzmanlıklarıyla birleştirip her gıda ürününe
özel çözümler geliştirerek tarladan ürünlerin
toplanmasından, üretim tesislerinde
işlenmesine kadar olan sürede israfı ve ürün
kaybını en aza indirmek için çalışıyor.
Örneğin yılda bir kişinin 25 kg patates
tükettiği düşünülürse yüzde bire varan
verim artışı, ek kaynaklara veya ek arazilere
ihtiyaç duyulmadan sekiz milyondan fazla
kişiye patates sağlayabilir. Ayıklama sırasında
kötü ürünlerin içerisine kaçan sağlıklı
taneler uzun vadeli düşünüldüğünde işlet-
With the awareness of the food waste
problem, TOMRA Food works closely with
farmers, processors and retailers to reduce
waste. We strive to be a spokesperson for
food waste, address the problem, and offer
solutions to improve the supply chain. Sensor-based
sorting machines can prevent
them from going to waste by selecting
second-quality products with visual defects
but can be consumed healthily with high
success. By combining the right technologies
and the product expertise of its
local teams, TOMRA develops customized
solutions for each food product, working to
minimize waste and product loss due to the
collection of products from the field and
the processing in production facilities.
For example, considering that one person
consumes 25 kg of potatoes per year, a
yield increase of up to one percent can
provide potatoes to more than eight million
people without the need for additional
resources or additional land. Considering
the healthy grains that escape into bad
products during sorting, it is a financial loss
for businesses and a severe global problem
in terms of food waste. With its solutions,
TOMRA has managed to reduce this waste,
which is called “false reject,” to the lowest
levels in products such as hazelnuts (<1%),
raisins (<5%), and sunflower seeds (<1%)
which are endemic to our country.
Considering the benefit of TOMRA solutions
and 4% of waste in hazelnut processing,
28 FOOD & INGREDIENTS TURKEY | OCTOBER 2020
we can say that it is equal to 10,000 tons of
product per year depending on the yield.
A loss of about 60M dollars is prevented.
As a result, TOMRA Food continues to develop
sustainable solutions with its customers
and many other companies.
For which products and foods can TOMRA’s
modern sorting technology be used?
Leading companies in many areas of the
food industry are using TOMRA machines.
We have the broadest portfolio in the
industry. A wide range of food production,
packaging and processing facilities
worldwide, including fresh fruit and vegetables,
nuts, dried fruits, grains, seeds,
pulses, pet foods, meat and seafood,
increase their productivity with TOMRA
technologies and machines.
What kind of conveniences do you provide
to your customers in after-sales service?
TOMRA Food’s center in Turkey is located
in Istanbul. Here we have a wide variety of
sorting equipment for training and testing
purposes. Also, we have service engineers
to act quickly in case of emergency service
calls, which are extremely important
for companies working 24/7. Thus, we can
better follow the products and product
features together with our customers. In
addition to our local service teams in the
Black Sea and Aegean, we can make
instant online connections thanks to the remote
access feature of our machines and
make interventions when necessary.
With our service organization, TOMRA Food
offers various Preventive Maintenance
Agreements (PMAs) that are adapted following
our customers’ needs while keeping
sorting equipment at an maximum level.
Thanks to these special maintenance agreements,
our customers can minimize the
risk of downtime, which can be very costly
during the production season, and prevent
the high cost of emergency services.
TOMRA Care experts provide speedy support
to our customers in malfunctions that
cause production downtime or a machine
interruption. In some cases, on-site intervention
may be required. Quick access
meler için maddi bir kayıp olmanın yanında
küresel anlamda gıda israfı açısından ciddi
bir sorundur. TOMRA sunduğu çözümlerle
“false reject” diye tabir edilen bu israfı
ülkemize has fındık (<%1), kuru üzüm(<%5)
ve çekirdek(<%1) gibi ürünlerde en düşük
seviyelere çekmeyi başarmıştır.
TOMRA çözümlerinin sağladığı fayda ile fındık
işlenmesinde engellenen %4’lük israf düşünüldüğü
zaman rekolteye bağlı olarak yıllık
10.000 ton ürüne eşittir, yani yaklaşık 60M
dolarlık bir kaybın önüne geçilir diyebiliriz.
Sonuç olarak TOMRA Food, müşterileri ve
diğer birçok firma ile sürdürülebilir çözümler
geliştirmeye devam ediyor.
TOMRA’nın modern ayıklama teknolojisi
hangi ürün ve gıdalarda kullanabilir?
Gıda sektörünün birçok alanında lider
firmalar TOMRA makinelerini kullanılıyor.
Sektördeki en geniş portfolyoya sahibiz diyebiliriz.
Taze meyve - sebze, kabuklu yemiş,
kuru meyve, tahıl, çekirdek, bakliyat, evcil

TOMRA Türkiye olarak kısa, orta ve uzun
vadede neleri hedefliyorsunuz?
Gıda sektörü, kriz anlarında dahi büyümeye
devam eden ve giderek daha sofistike hale
gelen çok geniş bir endüstri. Gıda güvenliği ve
gıda israfı, sektördeki en önemli konular arasında
olduğundan sektörde teknolojinin kullanımı
her geçen gün artarak devam ediyor.
edecek. Pandemi nedeniyle iş gücünde yaşanan
düşüş tarladan ürünlerin toplanmasından,
gıda üretim tesislerine kadar farklı alanlarda
makineleşme ve otomasyonun önemini bizlere
hatırlattı. İlerleyen dönemlerde genel olarak
gıda üretiminde son teknolojinin daha da fazla
kullanılacağını söyleyebiliriz.

At TOMRA Food, we know that customers
want to make the most of their
investments, including improving their
knowledge of the equipment or their
choice. Therefore, we offer training at
our headquarters in Istanbul or at their
production sites to ensure that customers
have the necessary knowledge
to operate their machines and maximize
profits. Our training programs are
entirely adapted based on the needs
of our customers.
As TOMRA Turkey, what are your goals at
short, medium and long terms?
The food industry is a vast industry that
grows and becomes more and more
sophisticated, even in times of crisis.
Since food safety and food waste are
among the most critical issues in the
industry, the use of technology in the
sector increases day by day. Therefore,
although the year 2020 has been challenging
for all industries, the food sector
shows a growth trend despite the pandemic
period, differentiating dynamics,
and all the difficulties in the food sector.
During the coronavirus epidemic, food
demand and production, especially
products with long shelf life such
as dried fruits, nuts, sunflower seeds,
pulses, frozen food, have increased in
direct proportion to the world. While
there is an increase in the export of
agricultural products in Turkey, we,
TOMRA Food, continue to support
food processors with our sorting machines
and technologies.
In 2021, the food sector will continue to
change depending on future developments
and demands. The decrease in
the workforce due to the pandemic
reminded us of the importance of mechanization
and automation in different
areas, both during the collection of
products from the field and food production
facilities. In future periods, we can
say that the latest technology will be
used even more in food production.

Seluz obtained Turkey’s leading exporter
award in fragrance sector again also this
year and carried its success in fragrances
to food flavors. Seluz, which made an
entry into the food flavor industry that has
an annual import input of over 200 million
dollars and a total market volume of over
320 million dollars in Turkey, started to
produce value-added products for a wide
range of food products in its new flavor
headquarters that has been built with an
additional investment of 20 million dollars
over 15,000 m 2 just near its fragrance
campus located in Istanbul.
“Turkish food producers will compete with
world’s leading brands”
Seluz debuting the flavor sector with the
mission of supporting national production
and supply in the Turkish flavor industry
carries its successful strategy that it applied
in fragrance sector into flavor sector in
order to increase the competitiveness of
Turkish producers against foreign brands.
Murat Öztürk, Founder and CEO of Seluz,
summarizes the issue as follows: “Flavor
industry’s market volume is 14 - 15 billion
dollars across the world. In Turkey, we foresee
a market volume of 320 million dollars. An
important part of this amount, which is
about 200 million dollars, is unfortunately
met through imports. We have invested in
flavor sector, because there are too few
flavor producers in Turkey, and we know that
automation is not well established even in
the largest of the manufacturing companies.
On the other hand, we manufacture valueadded
products. We have already achieved
this in our fragrance business.
Therefore, search for a new field with valueadded
products urged us to invest also in
the flavor industry in which we can utilize
our R&D power. With the investments to
be made in R&D, production, technology
and human resources, we strongly believe
that flavor industry in Turkey will be rapidly
developed; production of value-added
products will be rapidly increased; and
export figures will be improved. Besides, we
want food producers in Turkey to be more
competitive worldwide. For this reason, by
producing flavors at the level of European
standards, even with more precise

COVID-19’un

kakao tedariki ve işlenmesi
Cocoa sourcing and processing
in Africa during challenging
times of COVID-19
Jo, COVID-19 sırasında Afrika’da iş
sürekliliğinin nasıl olduğunu açıklayabilir
misiniz? İlk öncelikleriniz nelerdi?
İlk düşüncemiz halkımızın güvenliğiydi ve
bunu hızla değişen bir durumda ele almak
zorunda kaldık. Dikkatimizi kendi çalışanlarımızın
haricinde güvenlik ekiplerimize ve
bize teslim edilen kamyon şirketlerinde çalışanlara
gibi dış kaynaklı hizmetlere çevirdik.
Jo, can you describe what business
continuity looks like in Africa during
COVID-19? What were your first priorities?
Our first consideration was the safety of our
people, and we had to address this in a rapidly
changing situation. Our care also extended
beyond our own employees, to outsourced services,
such as our security teams and workers
from trucking companies who deliver for us.

The response from government directives on

05.00’de sona eren bir sokağa çıkma yasağı
vardı, bu yüzden büyük soruyu ele almak
zorunda kaldık - siteleri ve fabrikaları normal
şekilde nasıl çalıştırırız? İlk adım sokağa
çıkma yasağı etrafında çalışmak için vardiyaları
tekrar oluşturmaktı. Bu yüzden vardiya
ve fabrikadaki çalışma arkadaşlarımız, fabrikanın
üretimini etkilemeden, on iki saatlik iki
vardiya şeklinde tamamen farklı bir vardiya
yapısı düzenlemek için birlikte çalıştılar.
Acil zorluklardan bahsettiniz,
uyguladığınız yapıcı sorun yönetimi
önlemlerine örnekler nelerdir?
Sosyal mesafe açısından, bunu yerinde
yapmak nispeten kolaydır, ancak Afrika’daki
toplu taşıma araçları, genellikle otobüsler,
istisnai olarak hıncahınç doludur. Dolayısıyla,
sosyal mesafeyi korumanın daha karmaşık
bir problem olduğunu hayal edebilirsiniz.
5am, so we had to address the big question
- how do we keep sites and factories running
as normal? The first step was to reconstitute
the shifts to work around the curfew. So our
shift and factory colleagues worked together
to organize a totally different shift structure,
two shifts of twelve hours, without any impact
on the output of the factory.
You mention the immediate challenges,
were there examples of creative issue
management measures you put into place?
In terms of social distancing, it is relatively
easy to do this on-site, but public transport
in Africa, typically buses, are exceptionally
packed. So you can imagine that it is more of
a complex problem to maintain social distancing.
Therefore we decided to rent buses to
specifically pick up our people to take them
to and from their homes to sites in a safe way.
38 FOOD & INGREDIENTS TURKEY | OCTOBER 2020
In Ghana, cities such as Accra, Tema and
Kumasi were locked down, and we had
the situation where key workers, such as
our QA colleagues, could not travel from
their homes in Accra to Tema. To address
this, we took the decision to rent an entire
guest house, near our factory in Tema to
allow our people stay there safely. Some
of our colleagues have been living there
for over 3 weeks now.
What is the situation with cocoa sourcing
and the delivery of cocoa - is it ‘business
as usual’?
In terms of cocoa farming, cocoa has not
stopped growing, despite COVID-19. So
the cocoa is indeed still flowing and we
are still purchasing. Our common aim,
however, is to support farmer livelihoods
and communities, and second, continuing
our sourcing business as usual, without
contaminating up-country operations.
kiralamaya karar verdik. Bazı meslektaşlarımız
3 haftadır orada yaşıyor.
Kakao tedarikinde ve kakao dağıtımında
durum nedir - ‘her zamanki iş’ midir?
Kakao yetiştiriciliği açısından, COVID-19’a
rağmen kakao büyümeyi durdurmadı.
Yani kakao gerçekten hala akıyor ve biz
hala satın alıyoruz. Ancak ortak amacımız,
çiftçi geçim kaynaklarını ve topluluklarını
desteklemek ve ikincisi, ülke operasyonlarını
kirletmeden tedarik faaliyetlerimize her
zamanki gibi devam etmektir.
OCTOBER 2020 | FOOD & INGREDIENTS TURKEY
39
Genel olarak, kakao yetiştiren topluluklardan
daha az trafik geçiyor. Daha az trafik, daha az
nakit enjekte edildiği, restoranlar ve dükkanların
açık olmadığı anlamına gelir. Bu sebeple yerdeki
ekiplerimiz Fildişi Sahili, Gana, Kamerun, Nijerya
ve Tanzanya’daki çiftçi topluluklarını desteklemek
için çok çalışıyorlar. Mesela, tarım topluluklarına
ek gelir sağlayan topluluklardan yerel
olarak sabun alıyoruz, el yıkama ekipmanları,
koruyucu maskeler, dezenfektan kitleri bağışladık
ve COVID-19 önleyici tedbirlerin duyarlılık faaliyetleri
ve hijen faaliyetleri konusunda müşterilerimizle
ve yerel hükümetle ortak olduk.
Ayrıca muhtaç ailelere gıda paketleri dağıttık ve
buna içinde çalıştığımız ve içinde yaşadığımız
topluluklardaki aileler de dahil. Gana’da, mesela
fabrikamızın yakınında yaşayan yaklaşık 500 aileyi
desteklemek için gıda paketleri bağışladık.
In general, there is less traffic
passing through cocoa growing
communities. Less traffic means
there is less cash being injected,
restaurants and shops are not
open. So our teams on the ground
have been working very hard to
support farmer communities in
Côte d’Ivoire, Ghana, Cameroon,
Nigeria and Tanzania. For example,
we have been buying locally made
soap from communities which
has provided additional income
to farming communities, we have
donated hand washing equipment,
protective masks, sanitizer kits and
partnered with our customers and
local government on sensitization
activities of COVID-19 preventive

measures and hygiene activities.
We have also distributed food
parcels to needy families, and this
includes families in the communities
in which we work and live in. In
Ghana, for example, we donated
food parcels to support around 500
families living near our factory.
Has there been any silver linings
during COVID-19?
What I felt during this period was
the entire Region Africa team
coming closer together. Our people
are really passionate about
supporting the operations during
COVID-19, of adapting to how they
work, adjusting to different shift
patterns or staying in alternative
accommodation close to our sites.
The creativity and ingenuity of our
people has also shone at this time.
The additional washing facilities at
our sites, these were hand made. I
also saw how the communications
evolved during this time. As the
situation unfolded, communication
was critical to informing our people
and for maintaining business continuity.
Our issue teams who met
every day, discovered that actually
the best way to communicate
was not via email or notice boards
in our sites, but by creating team
Google Hangout groups or via text
messaging to keep everyone up to
date on a timely basis.
We also had a visit from one of the
medical officers who is a member
of the advisory team working with
the Ghanaian government on
COVID-19 situation. She reviewed
the interventions that we had put
in place to support our people and
the feedback that we received
was that they were so impressed
with what we had done - that we
could transport our people, provide
accommodation to our people,
to keep them safe. This is something
we can be very proud of.

Hyve Connect meetings offer export
opportunities before the exhibition
Ülgen reminded that the business volume of
300 million euros created at the WorldFood Istanbul
2019 was supported by Hyve Connect,
a virtual trade platform, and underlined that
the platform has been actively used since
2018. He said, “The feedback we receive is
positive and supports the traditional exhibition
approach. As part of the buyer committee
event that we hold with the support of İHBİR,
foreign buyers who are unable to attend our
exhibition will meet our exhibitors who want
to deliver our local delicacies to all over the
world, through our Hyve Connect application.
For our users who adopt the next-generation
trade approach, Hyve Connect will be a
highly important platform to establish correct,
efficient, and quick business connections.”
Noting that the effects of the transformation
process on supply chains will increase and
that food safety will gain importance in agricultural
policies, Ülgen reminded that the
actions that can be taken in Turkey in this regard
will be discussed in detail at the events
to be organized as part of the exhibition.
He also underlined that they brought
exhibitors and foreign buyers together
at warm-up tours until the exhibition and
held meetings with them through the Hyve
Connect application.
Ülgen said, “At the virtual trade meetings
we held on August 11 and 12, we brought
together 25 foreign buyers from 19 different
countries and more than 100 exhibitors.
A total of 782 business connections were
established in these virtual meetings in 2
days. Thanks to this infrastructure that we
provided before the exhibition, our exhibitors
developed their business networks,

connected with the right customers, and
took advantage of export opportunities.
Owned by Hyve Group, the Hyve Connect
infrastructure offered export opportunities
to our local exhibitors before the exhibition.
We want to expand our series of meetings,
which attracted great attention and received
positive feedback, and to take similar
steps before other exhibitions in Turkey.”
Okutur said, “Social trends increase the
purchases of foreign companies from our
country.”
Stating that WorldFood Istanbul is a cooperation
and trade platform that will contribute
directly to Turkey’s exports, President
of İHBİR Haluk Okutur reminded that being
an exhibitor is an effective way to increase
sales, promote products, and gain new
customers by communicating directly with
a large number of representatives from
food wholesalers and retail chains who are
involved in the purchase of food products.
Okutur said, “WorldFood Istanbul is an ideal
platform for foreign companies to disco-

yanına ulaştırmak isteyen katılımcılarımız ile
buluşacak. Yeni nesil ticaret yaklaşımını benimseyen
kullanıcılarımız için doğru, verimli

Connect çok önemli bir platform olacak.”
Tedarik zincirleri açısından dönüşüm sürecinin
yansımalarının ve tarım politikalarında
gıda güvenliği başlıklarının da öneminin
artacağını belirten Ülgen, bu konuda Türkiye’de
neler yapılabileceğinin de Fuardaki etkinliklerde
detaylıca konuşulacağını hatırlattı.
Ülgen, Fuarın kapılarını açacağı tarihe kadar,
katılımcılar ile yabancı alıcıları ısınma

Noting that significant amount of their members
are preparing for the exhibition, Okutur
reminded that many new products will be
introduced to the food world at WorldFood
Istanbul, the international meeting point of
the Turkish food industry, with the participation
of more than 1,000 brands. He said, “As
İHBİR, we will increase the efficiency of the

Okutur; pandemi döneminde temel gıda ürünlerine
talebin arttığını, tüketim evden yapılsa

koruduğunu, özellikle un tüketiminin
pandemi döneminde 10 kat arttığını ekledi.

Fuarın programı ve etkinlikleri ile ilgili detaylı
bilgilere de kolayca erişme fırsatı sunan Hyve
Connect, Kovid-19 pandemisiyle birlikte ihtiyaç

Fuar boyunca gerçekleştirilen tüm etkinliklerin

Hyve Connect uygulamasındaki bir diğer yeni
özellik ise katılımcı profilleri ile ilgili. Bugüne
kadar katılımcılar sadece firma profillerini kısıtlı
bir şekilde, ürün bilgilerini ekleyerek kullanabiliyorlardır.
Güncellenen ve geliştirilen Hyve
Connect; katılımcılara, profillerine istedikleri

be downloaded to smartphones. Hyve
Connect is also supported by a web-based

Providing easy access to detailed information
on the program and events of
the exhibition, Hyve Connect is getting

option, which supports and enables the
practice of social distance in line with
the needs that arise from the COVID-19
pandemic, at WorldFood Istanbul. In
this way, users will be able to video chat
with the professionals they want via a
virtual platform during the exhibition and
provide information about their products
to each other using the application. In
addition, all the events organized during
the exhibition will be able to be followed
on Hyve Connect with live broadcasts.
Another new feature of the Hyve
Connect application is related to user
profiles. Up until now, exhibitors could
only use company profiles in a limited
way by adding product information. The
updated and improved version of Hyve
Connect enables exhibitors to customize
their profiles and promote their products
in a more detailed and comprehensive
manner by adding product images,
related PDF files, and videos, if any.

Dozlamanın
geleceği
The future
of dosing
Söz konusu ürün çeşitlendirme, küçük partiler veya biyo-izleme
olduğunda, gıda endüstrisindeki artan talepler ve teknik
gelişmeler dozlama sistemlerini sürekli olarak yeni zorluklarla
karşı karşıya bırakmaktadır. Bir dozlama sistemine yatırım
yapan herkes, sahip olacağı sistemin gelecekte yaşanacak
gelişmelere kolay ayak uydurabilecek yapıda olmasını ister.
Syntegon Technology (eski adıyla Bosch Packaging Technology)
tarafından sunulan yeni dozlama platformunun sahip olduğu
esneklik, dozlama teknolojisinin hem günümüzdeki hem de
gelecekteki gerekliliklerini karşılar ve aynı zamanda diğer tüm
sistemlere kıyasla daha hassas dozlama yapar.
Whether product diversification, small batches or biomonitoring,
the increasing demands of the food industry and technical
developments are constantly presenting dosing systems with new
challenges. Anyone investing in a dosing system today wants to
be sure that it will be able to keep pace with the developments of
the future. The flexibility of the new dosing platform from Syntegon
Technology, formerly Bosch Packaging Technology, meets the
requirements of dosing technology today and in the future - and
at the same time doses more precisely than any other system.
Çok katmanlı tatlılar veya sarmal şekilli vanilyalı
ve çikolatalı pudingler gibi karmaşık
ürünler buzdolaplarında göze gerçekten
çok hoş gelmekte ve müşteriler bunları
satın almayı çok sevmektedirler. Bu konuda
sürekliliğin sağlanabilmesi için gıda üreticilerinin
ürün portföylerini sürekli olarak uyar-
Complex products such as multi-layer
desserts or swirled vanilla and chocolate
puddings are real eye-catchers in chilled
cabinets – and consumers love buying
them. To keep things that way, food manufacturers
need to constantly adapt and
renew their product portfolios. This results
68 FOOD & INGREDIENTS TURKEY | OCTOBER 2020
not only in product diversity but also in
smaller batches. Dosing systems therefore
have to meet very specific requirements
while at the same time minimizing machine
downtimes during changeovers.
Added to this are increasing hygiene requirements
for allergen-free products. These
require more intensive cleaning processes
when changing products to completely
remove even the slightest residue of the
predecessor product. In the future, current
technological developments such as
biomonitoring will help to reduce cleaning
times. They determine the degree of soiling
of the machine and filler within the production
line and initiate cleaning independently.
Versatile, future-proof dosing systems
Given today’s extensive requirements and
tomorrow’s potential developments, it can
be difficult to make the right choice for
a dosing system. With a portfolio of well
over 50 dosing systems, Bosch Packaging
Technology – since January 2020 Syntegon
Technology – has been able to precisely
meet the most unusual requirements. However,
the large number of dosing systems
makes the choice very complex for manu-
lamaları ve yenilemeleri gerekmektedir. Bu
durum sadece ürün çeşitliliği sağlamakla
kalmayıp, aynı zamanda üretim partilerini
de küçültmektedir. Bu nedenle dozlama
sistemlerinin, belirli gereklilikleri karşılarken,
bir yandan da ürün değiştirme işlemleri
sırasında makinenin üretim dışı kaldığı süreyi
en aza indirmesi gerekmektedir.
Buna ek olarak alerjen içermeyen ürünlere
yönelik giderek artan hijyen gereklilikleri
bulunmaktadır. Bu ürünleri işlemek için ürün
değişimi sırasında daha ayrıntılı bir temizlik
yaparak önceki ürüne ait en ufak kalıntıların
bile tamamen temizlenmesi gerekmektedir.
Gelecekte biyo-izleme gibi mevcut teknolojik
gelişmeler, temizlik sürelerini kısaltmaya
yardımcı olacaktır. Bunlar makinenin ve
üretim hattındaki doldurucuların kirlilik düzeyini
belirlemekte ve temizleme çalışmasını
bağımsız olarak başlatmaktadır.
Çok yönlü, geleceğe yönelik
dozlama sistemleri
Günümüzde yaygın olarak görülen gereklilikler
ve gelecekte yaşanması olası gelişmeler
dikkate alındığında, bir dozlama sistemi
için doğru seçimi yapmak oldukça zordur.
Syntegon Technology, eski adıyla Bosch

When changing products,

Her
Her biri
doldurulacak ürüne uyarlanan konik nozül ve
düz vana, 0,5 ile 1.500 mPas aralığındaki meyfacturers.
With its new modular dosing
platform, Syntegon is now consolidating
this diversity and making it easier for
customers to find their way around, even
when they have specific requirements.
With five flexibly selectable dosing
systems, the new dosing platform covers
around 90 percent of all food products
that are filled into containers or bottles.
Depending on the dosing system used,
the platform is suitable for a wide viscosity
range from 1 to 25,000 millipascal
seconds (mPas), covering everything
from liquid and viscous products to
high-viscosity foods with chunks up to 25
millimeters in diameter.
The five flexibly selectable dosing systems
include rotary slide, cone nozzle, flat valve
and two versions of the cutting slide. Each
dosing system is available in four different
volume ranges from 50 to 600 milliliters
and more. The rotary slide fills large
volumes of liquid and viscous products in
a range from 500 to 2,500 mPas at high
speed, with and without particles. The
cone nozzle and flat valve, each adapted
to the product to be filled, are suitable for
liquids with fruit flesh and fibrous materials
between 1 and 1,500 mPas, whereby the
cone nozzle doses evenly and virtually
without foaming. The cutting slide covers
70 FOOD & INGREDIENTS TURKEY | OCTOBER 2020
a particularly wide range from 1 to 25,000
mPas and can be used for everything
from milk to ready meals. It is available in
two versions which are characterized by
different feeding systems.
High hygiene standards with short
changeover times
With its different dosing systems, the dosing
platform can be variably integrated
into all Syntegon filling machines for
cups and bottles, including thermoforming
machines. It can also be upgraded
in hygienic versions from clean and
ultra-clean to aseptic. Several dosing
systems can be flexibly combined to fill
multilayer products, such as puddings
with cream toppings, or to create patterns
such as a yogurt with dots or swirls
of syrup. Changing the dosing nozzles is
quick and easy: The dosing plate is height-adjustable
by 40 centimeters which
improves accessibility for changing of
dosing nozzles. The dosing systems can
also be retrofitted to different hygiene
levels, for example from ultra-clean to
aseptic, and thus offer food manufacturers
the greatest possible flexibility.
Seal-less alternatives are optionally available
for some dosing systems. This guarantees
the highest dosing accuracy
because there are no seals that could
influence the dosing result as a consequence
of wear. At the same time,
changeover times can be reduced to a
minimum as there is no need to replace
seals when changing products. The
seal-less design also requires just one
general maintenance cycle per year.
The future of dosing technology has
already begun
The system of the future even goes one
step further: self-optimizing biomonitoring
not only determines the frequency
and duration of the cleaning itself,
but also becomes part of the overall
product and factory planning process.
Within this context, the system learns
the optimum product sequence and
makes its own decisions – a step into
the future that the new, modular dosing
platform will be able to take.
Dozlama sistemi yenilenerek
ultra temizden sterile gibi farklı hijyen seviyelerine
yükseltilebildiği için gıda üreticilerine
muazzam bir esneklik olanağı sunar.
Bazı dozlama sistemleri için isteğe bağlı olarak
contasız alternatifler de sunulabilmektedir. Bu
özellik, aşınma nedeniyle dozlama sonucunu
etkileyebilecek herhangi bir conta bulunmadığı
için mümkün olan en yüksek kesinlik ile
dozlama yapılmasını garanti altına almaktadır.
Aynı zamanda ürünleri değiştirirken conta değişimi
yapmaya gerek olmadığı için değiştirme
işlemlerinin süresi de en aza inmektedir. Son
olarak, contasız tasarım ayrıca yılda sadece bir
kez genel bakım yapmayı gerektirmektedir.
Dozlama teknolojisinin geleceği çoktan geldi
Geleceğin sistemi bir adım daha ileri gidiyor:
Kendi kendini optimize eden biyo-izleme,
sadece temizleme işleminin sıklığını ve süresini
belirlemekle kalmayıp, aynı zamanda genel
ürün ve fabrika planlama sürecinin de bir
parçası oluyor. Bu bağlamda sistem, ideal ürün
sıralamasını öğrenebilme ve kendi kendine karar
verebilme yetisi ile yeni, modüler dozlama
platformunun geleceğe doğru ileri yönde bir
adım atabilmesini sağlamaktadır.

Compac EMEA direktörü Roberto Ricci,
konu ile ilgili olarak; “COVID-19 ve küresel

In a cherry season that was like no other
before, Compac, its distributor ICOEL and
Turkish agent Sardas demonstrated how
even the most difficult hurdles can be
overcome with good teamwork and outof-the-box
thinking. The major projects
they completed in Turkey and Uzbekistan,
installing four turnkey grading and packing
lines totaling 42 InVision2 lanes during the
pandemic, are excellent examples of their
resourcefulness and determination to help
their customers succeed.
Careful planning and a global footprint for
on-time completion
“The COVID-19 pandemic provided an
unexpected level of challenge, with significant
restrictions on the movement of people
and materials,” comments Roberto Ricci,
Compac Regional Director EMEA. “In spite
of the situation, we delivered in full and on
time! How did we do it? First, through careful
planning of the logistics with our partner
ICOEL, and we leveraged our global supply
chain and logistics capabilities.”
All the Compac InVision2 equipment
for the four projects was produced at
Compac’s facility in New Zealand and at
TOMRA Food’s manufacturing center in
Slovakia. The company’s global manufacturing
footprint, which also includes a plant
in China, gives it the scale and flexibility to
deliver projects around the world efficiently
– even in the complex situation created
by the pandemic. All the equipment for
the four projects was delivered to each site
in time to begin installation and be ready
for the beginning of the cherry season.
High quality grading for demanding markets
Perla Fruit, Karaali and Unifrutti in Turkey,
and Uz-Segang in Uzbekistan are all big
exporters that serve some of the most
demanding markets when it comes to the
quality of cherries, such as China.
Turkey, the largest cherry producer with
just over 25% share of the global market,
has made the strategic choice to develop
its export market and focus on sweet cherry
varieties, which are more in demand.
Between 2005 and 2016 alone, its production
of sweet cherries increased from 6 mil-

lion to 21.5 million. Perla Fruit was founded
in 2019 by a family of pioneers who put the
Turkish cherry industry on the map, closed
successfully its first season exporting more
than 4,000 tonnes to markets in Europe,
the Far East and the Middle East. Karaali,
a family business established in 1992, has
an annual export capacity of around
3,000 tonnes, the majority of which goes
to the Russian market. Unifrutti, a wellknown
Italian global fruit exporter, established
its base in Turkey in 1991 and started
operation of its new sorting and packing
plant this cherry season processing 3,000
tonnes for the European market.
Uzbekistan is a fast-developing market,
which has already risen to be the 5th
largest cherry producer in the world.
The government is investing heavily and
devoting significant efforts to developing
its exports of fruit and vegetables. It has
recently signed a protocol with China for
the supply of cherries to the market and
has undertaken negotiations with South
Korea to facilitate exports. Its proximity to
China, the world’s biggest cherry import
market, is attracting the interest of Turkish
cherry export companies who see it as
a platform to reach a significant pool of
new customers. Uz-Segang grows fruits,
vegetables and legumes in the very
fertile soil of the Fergana valley. It exports
mainly to the Chinese market, benefiting
from being located just a 3.5-day truck
drive away – and South Korea.
The four companies chose Compac for
their grading and packing plants because
of the high-quality product they would be
able to guarantee their customers with its
technology. Compac carefully analyzed
their respective requirements and developed
tailored solutions for each, all of them
featuring its InVision2 platform. The InVision2
platform achieves extremely accurate and
consistent grading for size, shape, color
and blemishes through a combination of
powerful imaging using color and infrared
technologies, controlled lighting and
cherry rotation. With its partners ICOEL and
Sardas, it installed a 16-lane system at Perla
Fruit, 10 lanes at Karaali and at Unifrutti,
and 6 lanes at Uz-Segang.
jistik kabiliyetlerinin üstünlüğünü yeniden
göstermiş olduk,” diye belirtti.
Dört ayrı projedeki Compac Invision2 kiraz
sınıflandırma ünitelerinin parçaları Compac’ın
Yeni Zellanda’daki fabrikasında ve
TOMRA Food’un Slovakya’daki tesislerinde
üretildi. Compac’ın küresel ölçekteki üretim
yetkinliği (Çin Halk Cumhuriyeti’ndeki üretim
tesisi de dahil), zorlu pandemi koşullarında
bile projeleri taahhüt edilen zamanda teslim
etme esnekliğini destekledi.
Yüksek kalite talebinde bulunan pazarlar
için üstün sınıflandırma üniteleri
Compac, çözüm ortakları ICOEL ve Sardas
ile birlikte Perla Fruit’a 16 hat, Karaali ve
Unifrutti Türkiye’ye 10 hat ve Uz-Segang’a 6
hatlı kiraz sınıflandırma ve paketleme ünitesi
kurulumu gerçekleştirdi.
Perla Fruit, Karaali, Unifrutti Türkiye’de ve
Uz-Segang ise Özbekistan’da Çin gibi yüksek
talepli pazarlara tedarik yapan büyük
ihracatçı firmalar olarak üretim yapıyor.
Türkiye, küresel piyasanın kiraz ihtiyacının
%25ini karşılayan bir ülke olarak ihracat
kapasitesini stratejik bir kararla genişleterek
daha çok talep gören sofralık tatlı
kiraz çeşitlerinin tedarikine yöneliyor. Buna
dayalı olarak 2005-2016 yılları arasında
sofralık tatlı kiraz üretimi 6 milyondan 21.5
milyona yükselmiştir. 2019 yılında faaliyete
başlayan Perla Fruit, ilk sezonunu Avrupa,
Uzak Doğu ve Ortadoğu’ya 4,000 tonun
üzerinde kiraz ihraç ederek tamamladı.
1992 yılında kurulan Karaali, öncelikli pazarı
Rusya olmak üzere 3,000 ton ihracat
kapasitesi ile sezonu bitirdi. Türkiye operasyonuna
1991 senesinde başlayan dünyaca
tanınan İtalya merkezli global yaş

gelişmesine çok önemli katkılar sağlıyor.

Compac’ı tercih ediyor. Bu süreçte müşterilerinin
beklentilerini çok iyi analiz eden Compac, Invision2

ihtiyaçlarına göre özel çözümler geliştirdi.
Compac’ın InVision2 sistemi, renk ve kızılötesi

Covid-19 dolayısıyla seyahat kısıtlamaları ve sınırların
kapatılması yalnızca malzeme sevkiyatlarını
değil, Compac teknik ekiplerinin dört adet kurulumun
yapılacağı işletmelere gidebilmelerine de
engel oldu. Roberto Ricci, konuyla ilgili olarak; “7

Remote installation with round-theclock
virtual support
The travel restrictions and countries
in lockdown due to Covid-19
presented a challenge not only for
shipping the equipment, but also for
the Compac team to reach the four
locations. Roberto Ricci explains:
“We leveraged our remote service
capabilities with resources located
to cover all continents and time
zones. These remote resources allowed
us to provide support literally
around the clock, 24/7, to the three
separate technical teams that were
on the ground working to install and
commission the four lines.”
“Yes, it was 24/7, because of the
time zones” adds Mustafa Sakarya,
Senior Director of Sardas, Compac
agent in Turkey, who conducted all
four installations. Compac managed
the four projects from its base
in New Zealand, supported by its
Assistance teams based in the USA,
and its importer ICOEL headquartered
in Italy. “It was a difficult
year, but we had so many gains.
We understood that we can manage
the lack of persons on site with
a good remote support. We proved
that we can complete installations
entirely remotely.”
Success also required a close partnership
with the customers, who
provided fast broadband connectivity
in the packhouses. “We
also asked them to set up cameras
throughout the packhouse so we
could follow them round the clock
and see the progress on the mechanical
and electronic installation,”
says Mustafa Sakarya.
“We also used a bit of creativity to
overcome the logistic limitations of
commercial flights into Uzbekistan,”
adds Roberto Ricci. “With the help
of Uzbek Ambassador in Rome,
Uz-Segang obtained permission to
bring ICOEL technicians into the
country and chartered a private

flight for them – definitely the most
exclusive mode of transport that
the technical team has ever experienced!
The customer organized
accommodation and made eating
arrangements at the packhouse for
the six ICOEL staff, who never left
the site in the almost 4 weeks of the
project to respect the lockdown
and distancing rules.”
The determination of the customer
to run this year’s cherry season on
the new line was matched by that
of Compac and its partners, who
pulled out all the stops to deliver
the result he wanted. Their efforts
were rewarded when the facility was
honored with the official visit of the
President of the Republic of Uzbekistan,
Shavkat Mirziyoyev, on June 5th.
A successful cherry season for all
All 4 lines were commissioned on
time and were ready to start in
mid-May, when the season usually
begins. This year, however, the season
was a little late and the cherries
started to arrive from the field at
Perla Fruit and Uz-Segang on the
week of May 25th, and at Karaali
and Unifrutti a week later.
“The cherry season started, and
the customers needed to run their
machines, we were working day and
night to complete the installation,
but everyone had their lines running
on time,” says Mustafa Sakarya.
All four companies closed the season
with success and report superior
results compared to other systems
with respect to the quality of the
pack, and the efficiency of the sort
process. “They have received great
feedback about the superior quality
of their pack compared to other
suppliers, coming both from their
distributors and retailers as well as
the quality inspectors who inspect
the fruit at the packhouse before it
enters the distribution chain,” concludes
Roberto Ricci.
lar ve makinelerin çalıştırılması sürecini pürüzsüz
yönetebildik,” diyerek açıkladı.
Dört kurulumunda aksaksız tamamlanmasını
sağlayan, Compac’ın Türkiye temsilcisi ve çözüm
ortağı, Sardas’ın Genel Müdürü Mustafa Sakarya;
kurulum desteklerinin Compac’ın Yeni Zelanda’daki
genel merkezinden, Compac Amerika ekibinin
ABD’den ve partner ICOEL’in İtalya’daki merkezinden
yönetildiğini ifade ederek, “Zor bir sene olmasına
rağmen bu senenin bize katkıları da oldukça
fazla. Kurulumlarımızı çok etkili bir uzaktan destek
organizasyonu ile yönetebileceğimizi gördük. Adeta
uzaktan destekle kurulum yapabilme yetimizi
ispatlamış olduk” şeklinde ifade etti.
“Ülkeler arası sevkiyat ve lojistik kısıtlamaların ve
Özbekistan’a tarifeli seferlerin yasaklanmasının üstesinden
gelebilmek için bir takım maliyetli ancak
pratik çözümler üretmek durumunda kaldık” diyen
Roberto Ricci; “Roma Özbekistan büyükelçisinin
katkılarıyla, UZ-Segang tarafından özel izinle ICOEL
teknik ekipleri, özel uçak ile Özbekistan’a seyahat
etti ve bu muhtemelen teknik ekibin tecrübe
ettiği en özel transferlerden birisiydi. Müşterimizin,
4 haftalık süreçte teknik ekibimizin tesis içerisinde
konaklama ve yemek ihtiyaçlarını karşılayarak gerekli
önlemleri ve soysal mesafe kurallarını titizlikle
uygulaması bizim için çok önemliydi,” dedi.
2020 kiraz sezonunda operasyona başlamak konusunda
müşterilerinin kararlılığı, Compac ve çözüm
ortaklarınınki ile birleştiğinde bütün zorluklar
başarıyla aşıldı ve istenilen sonuca ulaşıldı. Bütün
bu çaba, Özbekistan Cumhuriyeti Devlet Başkanı
Sayın Shavkat Mirziyoyev’in Uz-Segang paketleme

Amsterdam/ The Netherlands: Fi Europe co-located with Hi Europe has announced
they are postponing the live event to 2021 and are transitioning to virtual for their 2020 event.
Fi Europe ekibi, haftalar ve aylardır,
sektörün öncü isimleri ve partnerleri ile
Covid-19’un gıda ve içecek sektörlerine

industry due to COVID-19. While the event
was set to take place this December with
Informa’s AllSecure guidelines incorpora-

ting the highest standards of hygiene and
cleanliness, the decision to postpone the
live event and transition to virtual was taken
as a result of the global nature of the event.
Fi Europe co-located with Hi Europe is
a truly international event which brings
together key industry players from all over
the world. Given international travel is only
returning gradually, stakeholders and partners
felt it was difficult to ensure the same
level of participation typically expected at
the live event, and thus the Fi Europe team
made the difficult decision to transition to a
virtual format in 2020, with the expectation
that they will return to Frankfurt as a bestin-class
physical event from 30 November
to 2 December 2021. The following year the
show will take place in Paris.
For 2020, the Fi Europe team are transforming
Europe’s largest F&B exhibition into

buyers for customers’ products and solutions.
Julien Bonvallet, Brand Director for Fi Europe
adds: “The year 2020 has changed the world
and the food industry: issues such as food
safety and secure supply chains, along
with the health aspects of nutrition, have
become even more important. At our virtual
experience, experts from all segments exchange
views on these highly relevant topics
and buyers and suppliers can connect with
their peers in the F&B industry. That’s why it
was important for us to create a virtual experience
that, even in these difficult times,
will be successful for all participants.”

sa da, etkinliğin küresel doğası gereği fuar
alanındaki buluşmayı bu yıl erteleme ve
sanala geçiş kararı alındı.
Fi Europe ile birlikte eşzamanlı olarak gerçekleştirilen
Hi Europe fuarı dünyanın her
