help finish. He makes all the pickles, which
include dill pickles, spicy dill pickles, sweet
pickles and pickled okra. They do all the
filling of jars and packing.
Beth experiments with recipes and
adjusts for the perfect jellies and jams. Some
chefs will ask her for special combinations.
Chef Christian Watson at The Waverly
Local asked her to create cocktail style
jams and herb jams. From this request, the
flavors Beth created included Strawberry
Champagne, Satsuma Vanilla Bourbon,
Blueberry Basil and Cranberry Port. Since
Watson didn't use the Strawberry Basil,
they started running batches of it, and it
has become extremely popular.
Some of their other products include
Peach Habanero, Raspberry Ghost Pepper
Jelly, Blackberry Jalapeno Jelly, Bramble
Jam, Strawberry Lemonade, and many
others.
During the holidays, they assemble gift
baskets. A wicker basket is filled with two
jars of jams, pickles and their honey, then
tied with a festive bow.
The Hornsbys have four children, Sully,
13; Levi, 10; Stella,7; and Cody, 2. The older
boys will help their dad pick vegetables and
fruits. Josh is planning on teaching their
children farming as they get older and
plans for them to have the farm one day.
“It is awesome to be on this land,”
Josh says. “It is very gratifying have this
product.”
