The blue agave plant takes 6-12 years to mature,<br />

when the piña, or the heart of agave, reaches its peak<br />

in sugars and will yield the most tequila. The piña is<br />

the fruit or, “heart,” of the agave from which sugars<br />

are extracted and tequila is made. The cooking of the<br />

piñas requires 36 to 40 hours, it refines the taste and<br />

prepares it for grinding in a stone mill.<br />

La planta de agave azul tarda de 6 a 12 años en madurar,<br />

cuando la piña, o el corazón del agave, alcanza su punto<br />

máximo en azúcares. La piña es el “corazón” del agave del<br />

cual se extraen los azúcares y se hace tequila. La cocción<br />

de las piñas requiere de 36 a 40 horas, refina el sabor y lo<br />

prepara para moler en un molino de piedra.<br />
