Antojitos Yucatecos<br />

Sopesitos de Longaniza de Valladolid<br />

Sopes are thick corn cakes, topped with<br />

famous sausages from the colonial town of<br />

Valladolid. First made by Felipe Pérez Vázquez<br />

in the end of the XIX century, they are made of<br />

pork meat ground manually, with the addition of<br />

a unique mix of spices, such as garlic, vinegar,<br />

pepper, cumin, thyme, cloves and achiote paste.<br />

Los sopes son gruesos pasteles de maíz,<br />

coronados con salchichas famosas de la ciudad<br />

colonial de Valladolid. Elaborados por primera vez<br />

por Felipe Pérez Vázquez a fines del siglo XIX,<br />

están hechos de carne de cerdo molida<br />

manualmente, con la adición de una mezcla única<br />

de especias, ajo, vinagre, pimienta, comino, tomillo,<br />

clavo y pasta de achiote.
