This traditional panucho is a fried corn tortilla<br />

with a small cut, filled with refried black beans<br />

and topped with a black stew made from burnt<br />

dried chiles and turkey – and is one of the most<br />

representative dishes of Yucatecan cuisine.<br />

Este panucho tradicional es una tortilla de maíz<br />

frita con un pequeño corte, rellena con frijoles<br />

negros refritos y servida con recado negro de<br />

chiles secos y pavo, y es uno de los platos más<br />
