Napa Valley Merlot<br />
The Napa Valley is a wonderland for growing great<br />
Bordeaux varieties. Intense daytime heat is mitigated<br />
throughout the region by rolling fogs sweeping in<br />
off the Pacific, and cooler-temperature pockets exist<br />
throughout the Valley, especially in the southern<br />

The steady rise of a new power<br />
Winemaking in Chile<br />
may go back to<br />
the 16th century,<br />
but it wasn’t until<br />
the mid-19th century<br />
– when wealthy, worldtravelling<br />
Chileans developed a<br />
taste for French grape varieties –<br />
that the modern Chilean winemaking<br />
era was born.<br />
Viticulturalists began importing<br />
cuttings (serendipitously before<br />
the phylloxera louse devastated<br />
the vineyards of Europe) and<br />
experimenting with great grapes<br />
such as Cabernet Sauvignon,<br />
Merlot, Sauvignon Blanc, Chardonnay<br />
and others. With its dry<br />
conditions, sandy soil and protection<br />
provided by the Andes<br />
mountains, Chile has always<br />
managed to avoid phylloxera<br />
infestations and is one of the few<br />
countries that grows almost<br />
all its vines on original rootstock.<br />

During the 19th century, Chile<br />
became one of the first New<br />
World countries to export wine.<br />
A variety of internal and international<br />
political crises caused<br />
Chile to experience a period of<br />
decline throughout the first twothirds<br />
of the 20th century. In<br />
the 1980s, a new generation of<br />
winemakers emerged, including<br />
renaissance man Aurelio Montes,<br />
who had rediscovered the<br />
French varieties. Shortly after,<br />
Chilean wines burst back onto<br />
the international scene and caught<br />
the attention of producers around<br />
the world, resulting in important<br />
investments from several foreign<br />
wine companies, like Miguel Torres<br />
– pioneers in their own right<br />
who had opened a winery in Chile<br />
in 1979.<br />
With the influx of foreign<br />
investment came an increased<br />
level of expertise and a ground-<br />
breaking discovery: in 1994, it<br />
was determined that many of the<br />
vines that growers called Merlot<br />
were actually Carmenère.<br />
Producers quickly adapted their<br />
viticultural techniques to help<br />
it thrive. As the wine scene continued<br />
to grow and evolve, a<br />
new group of producers came to<br />
the fore. This third wave of winemakers<br />
pushed the vineyards into<br />
higher elevations, seeking out<br />
new, cooler climates for fresh white<br />
wines and elegant Pinot Noirs.<br />
Armed with a better understanding<br />
of the terroir and a deep<br />
respect for the land, these modern,<br />
forward-thinkers have also taken<br />
the lead in Chile’s eco-friendly<br />
wine movement.<br />
Today, Chile continues to create<br />
exciting wines at all quality levels.<br />

Bordeaux took its place of<br />
honour by chance. For decades,<br />
local winemakers thought<br />
Carmenère vines were Merlot,<br />
as the original cuttings had<br />
been labelled as such. In 1994,<br />
Jean-Michel Boursiquot, a<br />
French ampelographer (a botanist<br />
who classifies grapevines)<br />
identified the variety’s true colours,<br />
and the Chileans embraced<br />
the discovery with gusto. The<br />

sure If you haven’t yet discovered the wines of<br />
Southwest France, get ready for a revelation –<br />
this area has long been home to some of the French wine scene’s best-kept secrets. Tucked<br />
away inland just south of Bordeaux, this cluster of wine regions has an ancient and proud winegrowing<br />
history that actually predates that of the Médoc. Once upon a time, the area was<br />
legendary as the preferred wine country of Kings and Czars. Recently, these regions have enjoyed<br />
a well-deserved resurgence, thanks to winemaking advances and greater international exposure.<br />
This is a landscape of character-packed regions (and wines) with highly individual identities, and<br />
a myriad of indigenous grape varieties, many of them exclusive to the area.

Get to know some key regions and grapes of France’s southwest.<br />

F R A N C E<br />
Cahors is the ancestral home of Malbec, and has been perfecting it since the<br />
Middle Ages. Warmer than Bordeaux, this climate is able to ripen Malbec to make<br />
robust, flavourful and distinctive versions.<br />
Madiran is known for deep, dark, long-lived wines made from Tannat. Since this<br />
grape is exceptionally tannic (hence the name), winemakers here have explored new-oak<br />
barrels and micro-oxygenation techniques to soften them for earlier accessibility.<br />
Negrette is the grape at the heart of Fronton, where it creates floral, enticingly<br />
aromatic, elegant reds. It also lends itself well to blending, either with other local grapes<br />
or with international varieties.<br />
Gaillac is thought to be one of the earliest-established French wine regions.<br />
Peppery, plush red wines crafted here are made with Fer Servadou (aka Braucol),<br />
a variety named for the iron-like strength of its vines – though the wines too<br />
show plenty of hardiness.

Climate control<br />
From the earliest days of Ontario’s wine renaissance, Riesling was<br />
pegged as a natural in Niagara’s cool climate. In the 1970s, the<br />
federal government even provided a grant to Hermann Weiss, to<br />
plant the Weiss Riesling clone he’d developed in Mosel, Germany.<br />
Weiss sculpted the land, planted the vineyard and built the winery<br />
that became Vineland Estates. His assumptions about his version<br />
of the variety were correct: it thrived in Niagara. Riesling ripens late,<br />
so in all but the warmest years, Niagara’s climate accentuates its<br />
brilliant acidity and piquant flavours. “2008 was a very good vintage<br />
for Riesling,” says Jackson-Triggs winemaker Marco Piccoli. “Cooler<br />
summer temperatures and cold nights during October created intense,<br />
floral varietal aromas.”<br />
Down to earth<br />
Although other grapes, like Chardonnay, are very successful in<br />
Niagara, Riesling’s purity of expression captures Niagara’s limestoneladen<br />
soil perfectly, especially on “Bench” or Niagara Escarpment<br />
sites. The limestone adds chalky, stony minerality to the brisk<br />
acidity, creating some of the most vibrant, mouth-watering whites on<br />
the planet. But as in Germany, different sites offer different nuances,<br />
especially as vines mature. According to Matt Loney of Creekside<br />
Estate Winery, the 35-year-old clay- and limestone-pebbled Butler’s<br />
Grant Vineyard “creates a distinctive ginger note in Riesling. In the<br />
Ontario’s cool climate is a natural fit for Riesling<br />
grapes; breezes from Lake Ontario help make<br />
the Niagara Peninsula a prime growing area.<br />

warmest vintages, it’s often like ginger/<br />
pear, and cooler years it delivers<br />
ginger/key lime aromatics.”<br />
Ageing gracefully<br />
The best structured Rieslings from<br />
these same lower-yielding, older<br />
vine sites age longer than any other<br />
commonly grown white variety (the<br />
first Niagara Riesling producers like<br />
Vineland, Cave Spring and Henry of<br />
Pelham all have older vintage libraries<br />
as proof). Henry of Pelham’s Daniel<br />
Speck predicts their 2008 Riesling<br />
Reserve, harvested from vines planted<br />
in 1984, will develop secondary<br />
characteristics and improve with<br />
3 to 8 years cellaring. As it ages, the<br />
characteristics will include aromas<br />
of honey, apricot, perhaps even<br />
caramel. The wine also will begin<br />
to taste drier as it matures.<br />
The Age<br />
of Reason<br />
It’s an age-old belief: White wines<br />
don’t tend to age as well as reds.<br />
But Riesling often proves to be an<br />
exception to this rule. Thanks to<br />
its relatively high acidity and an<br />
array of complex flavour compounds,<br />
Riesling has enough<br />
structure and backbone to age<br />
beautifully, becoming rounder and<br />
more graceful over time. Typically,<br />
Ontario Rieslings can be laid<br />
down for 3-8 years; the very best<br />
vintages will reach their peak<br />
after 20 to 50 – yes, 50 – years.<br />

THE INSIDE STORY<br />
Perhaps no other whisky distillery in the world<br />
is as fervently dedicated to tradition as Springbank.<br />
Founded in 1828 on the site of an illicit still,<br />
Springbank is the oldest family-owned distillery in<br />
Scotland, producing handmade single malts<br />
loved by whisky aficionados around the world. The<br />
distillery malts its own barley using traditional<br />
floor maltings – one of just a few operations in<br />
Scotland using this painstaking method. Timehonoured<br />
traditions aside, this is a whisky worth its<br />
salt. Indeed, it boasts a subtle salty character that<br />
intensifies as the spirit ages, accenting the myriad<br />
flavours within (much the way table salt heightens<br />
the flavours in foods). This Springbank hallmark<br />
comes courtesy of the distillery’s coastal location<br />
near Argyll, which means strong winds that blow<br />
damp sea air into the draughty warehouses. Way<br />
back in 1838, Johnnie Walker bought whisky from<br />
Springbank to create his now-famous blends;<br />
when we discovered this one a century and a half<br />
later, we liked it too – so much so that we followed<br />
his lead and put it on our shelves.<br />
GOOD TASTE<br />
A new favourite with Springbank whisky fans,<br />
this 12-year-old is one of the most complex of all<br />
malt whiskies. It’s golden-straw coloured, and<br />
has oak influences, with aromas of grass, hay, leather,<br />
tar and a faint peatiness. Full bodied, with<br />
sweet, rounded flavours and hints of licorice, bitter<br />
oranges, pine resin and cinchona (a tree with<br />
medicinal bark that yields quinine). The finish is<br />
long and rich, with a hint of smoke.<br />
SERVE IT UP<br />
Bottled at cask strength, this whisky is designed<br />
for the addition of pure water to suit individual<br />
taste; the added water will also coax out notes of<br />
black tea and cinnamon. Purists might enjoy<br />

achieve this they forgo oak treatment or malolactic<br />
fermentation, thereby allowing the core expression<br />
of the grape to shine through. The results are<br />
magical. Notes of honeydew melon, apples and<br />
pineapple entreat the nose, while the palate shows<br />
exquisite tropical fruit and certainly delivers on the<br />
