President’s Message
Happy 2009! I hope everyone had a great Christmas holiday
and is well on the way to accomplishing their new years
resolutions. We have a lot on the go this year at the Club and
as such, I have a great deal to share with everyone in this
edition of the Club News.
First, let me provide an update on the expansion proposal.
Given the size of the proposed expansion, prior to taking the
final detail to members, the Board wants to ensure that the
City will not request any significant changes. To this end, we
have had a predevelopment permit meeting with the City of
Calgary. We are currently reviewing the City’s initial
comments and work is underway for the development permit
application. Our goal is to submit an application to the City
in February 2009.
Further on the expansion proposal, the Board has voted
unanimously to postpone the member vote from this spring to
late fall. We find ourselves in the fortunate position of
possible flat to declining construction costs in 2009. We
believe the Club will be much better positioned to take
advantage of changes in the construction market in the fall
to early winter 2009 time frame. This is quite a change from
early 2008 when we had to consider escalation on
construction of close to 18% per year. Prior to going to
members in the fall we will update the proposed cost of
the project and adapt the plans to accommodate requested
changes from the City. We will begin to roll out
communication on the proposal shortly after everyone returns
from the summer for fall programs.
In addition to working on the expansion proposal, the Board
is starting two more initiatives that I would like to make you
aware of. First, we are in the process of developing an
ongoing measure of member satisfaction at the Club. This
measure will be established in a way that it can be repeated
over time giving us an indication of how your satisfaction
with the Club, and its services, is changing. We will be able to
focus on specific areas and services. This may require a small
amount of time on the part of members in the future. The
return on that time is providing a glimpse of where we should
focus our efforts to serve members better.
The Board is also in the process of beginning benchmarking
on costs. We intend to start at a macro level and focus
internally initially. The process will grow to a more detailed
view in the future, eventually having benchmarks that are
comparable to external sources. The purpose here is to
develop a set of indicators that tell us how well we are
managing costs and where effort should be focused for
improvement.
One more interesting initiative I would like to inform you of
is the start of a staff member service committee. This
committee consists of 14 staff from all departments. The goal
of the committee is to develop a uniform service philosophy
and strategy, making service both the top priority and
consistent everywhere throughout the Club. The committee’s
philosophy is summarized as CWC – “Certainly We Can”. I
look forward to updating you in the future as this committee
begins implementing this plan to engrain this service
philosophy throughout the Club.
Finally, I look forward to seeing many of you at the volunteer
appreciation evening on February 24 th . It’s always impressive
to see how well attended this event is, an indication of how
many people give of their time to contribute to our Club.
We recognize that the last two registrations have not been ideal, specifically
handling the number of registrations beginning right at 6 am. Therefore we will
move to a two day split.
Prior to the last registration, we consulted with our IT contractors as well as
“Game Time”, to try and resolve all past issues. Before the beginning of the last
registration, we implemented key hardware and software changes that we were
assured would solve both the registration speed as well as “kicking” people out
of the system. On registration day it was apparent that all those key changes were
not enough.
Since registration, “Game Time” has found a major error in the software code.
They are creating a new version, which will look very similar to the user, but will
be significantly upgraded “behind the scenes”. They are expecting a launch date
of the new software in spring of this year; however we have asked they use
another Club to test it first. Once the testing has been complete, we will change
over from the old software to the new software. Please be assured however, that
we will continue to have a split registration until the time that we can be 100%
certain that the system can handle a one day registration. We will keep you posted.
General Manager Quarterly
Greg Lundmark | 403.338.2414 (local 414) | gregl@calgarywinterclub.com
The General Manager’s Quarterly is a new feature that will appear on a quarterly basis in the Club News.
This column is intended to provide members with information to give a better understanding on common operational issues.
FOOD aND beVeraGe PrICING
Over the past few years, concerns have been often raised about the price of food and beverage (F&B) menu items. I would
like to feature my first article, to provide a better understanding on how the budget and pricing structure works at the Club.
The F&B department budgets for a small contribution of approximately $50,000 annually to the Club’s net income. This is
not profit. The F&B budget does not account for general maintenance, cleaning, taxes, and utility expenses for F&B space.
Those costs are estimated to be $200,000 annually and are covered by membership dues. If we apply $200,000 that is not
covered in the F&B budget and we see $50,000 net contribution from F&B, the service is actually costing the Club $150,000.
Of course this is acceptable - what would a private Club be without the F&B operation? This is a very common way of
budgeting for F&B in a private Club.
The budget philosophy of menu pricing for 818 Cafe, Snack Bar, and internal catering functions is similar to sport section
wind up parties, which is user pay. In other words, on average, menu prices are intended to cover most of the costs of
preparing, serving, clean up and dishwashing. As a private club, we need to be open longer hours even if we are not busy.
These extensive hours of operation actually cause us to lose money in the 818 Cafe. Thankfully, these losses are offset by
profit made from the outside primarily, non member banquet functions.
Our margins have not changed over the years; however, our prices
have gone up. We have been forced to increase our menu prices to
offset substantial increases in food commodities and fuel prices, and
the labour shortage has led to higher wages for kitchen, dishwashing
and serving staff. If we did not increase prices we would not have
recovered costs and membership dues would have gone up more to
cover losses. Our budget philosophy implies that membership dues
will not subsidize eating and drinking at the Club. The chart on the
right shows a breakdown of the costs associated with sales.
Management also considers a competitive comparison when finalizing the menu pricing. It is difficult to compare “apples to
apples” with competitors so we also consider the value quotient. This quotient considers not only price but also quality and
quantity of food or beverage. It would be easy to lower our prices if we were using lower quality product such as sirloin
instead of strip loin in our steak sandwich or if we put less food on the plate. We could also reduce our menu price if we
reduced kitchen and service staff hours or hired less qualified staff. Of course we would never do those things because the
quality of the food and service would suffer. Our members expect and deserve high quality food and service. As you can see,
the chart below shows a small sample of some common menu items. Some menu prices are higher and some are lower than
the competitors but all are within a reasonable market range.
Strip Loin
Buffalo Wings Steak Sandwich Domestic Beer
Winter Club 11.95 16.95 4.25
Cactus Club 10.50 22.00 6.00
Earls 10.00 18.00 6.00
The good news is that with the current economic issues, we are not likely to see comparable increases over the next few years.
I hope that this answers some of your questions about food and beverage pricing. If you have more, I would be happy to
discuss them with you. Please give me a call at 403-338-2414 or email me at gregl@calgarywinterclub.com.
Sport-Specific Training
Sport-specific training requires fitness-related skills that are
universal, no matter what the sport. These skills are:
• Speed - the ability to rapidly propel the body from one
point to another.
• Power - the function of speed and force (strength) and
is the ability to produce maximum force in the shortest
time.
• Agility - the ability to change direction quickly and
efficiently.
• Quickness (reaction time) - the time required to initiate
a response to a given stimulus.
• Balance - the ability to maintain the body in proper
equilibrium.
• Coordination - the integration of the nervous system
and the muscular system to produce correct, graceful
and harmonious body movements.
Understanding these definitions is essential for them to be
applied to the pool environment.
Speed is rapid movement; which can be traveling from one
location in the pool to another or moving a body part quickly.
Control of movement and the body is essential for quick
movements to be done safely.
Power is when much force is necessary to generate speed
against the flow of the water.
Agility is applied when movements change directions or too,
by traveling quickly across the pool and back.
Quickness requires mental focus and ability to respond to a
change in exercise or moving to another activity.
Balance is constantly challenged in the water’s dynamic
environment, by simply walking upright, focusing on gait
and posture.
Coordination influences how smoothly and effectively we
execute and overcome an unstable pool environment.
Whether training for a specific sport or performance, many
of these skills are needed for overall fitness and can enhance
and improve daily living activities and abilities.
Club security Card access Doors
Members are reminded that they should not allow other
individuals to enter the Club premises with them through any
of the unattended card access doors (i.e. curling entrance, back
parking lot locker room entrance, the back parking lot green
door entrance). We understand that no one wants to appear
rude, and that holding a door open for the next person is really
seen as just being considerate, however in order to ensure the
best possible security for all members of the Club, please do
not hold a card access door open for other individuals. There
is no way of being sure that all individuals are Club members
unless they do swipe their access card or key fob to open the
door. This will help to ensure that only Club members are
entering the Club via the card access doors and will assist with
overall Club security by reducing opportunities for
non-members and potential thieves from entering our building.
Club security access Cards and key Fobs use
There are a great number of members who still do not bring
their Club access cards with them to gain access to the Club
at the Front Desk security point of entry. Access card and key
fob use is the accepted and best way to enter the Club at the
front desk. Members who do not carry their access cards cause
delays for other members, inconvenience for themselves and
congestion at the Front Desk. When members do not carry
their access cards, it makes the security system less effective
and service levels of the staff is affected due to having to assist
more members thus causing delays for other members who
need to deal with staff directly for other services.
Effective immediately, the Club will be initiating a more firm
policy for Club security access. When a member does not have
their access card or key fob with them they will be asked to
sign in at the front desk. Once you sign the Club Register, staff
Alberta Junior Jesters
Our Club co-hosted the prestigious Jesters event in
November. Second only to the National Championships in
importance, this event always brings a host of top juniors
from all parts of Canada to compete.
Continuing early season success in local tournaments, we
again had a large contingent of our juniors enter and after
some truly memorable squash, we came away with three
champions and three runner-up! Congratulations to
champions Samantha Roberts, girl’s U13; Jenna Sherven,
girl’s U13 novice; and Michael Banks, boys U11 novice.
Also kudos goes out to runners-up Derek Field, boys U17;
Jason Field, boys U15; Brett Schille, boys U11; and to all
our other juniors who played in the event.
International Experience
Several of our top junior players have been fortunate enough
to play in some of the largest and most prestigious
tournaments in junior world squash this season.
Firstly, Jason and Derek Field, Alex Moir and Neil
Pohlman all travelled to Ontario to play in the Canadian
junior open, an event attracting most of North and South
America’s top talent. After four days of tough competition,
the standout performance came from Jason who reached the
quarter finals of his event.
Over the Christmas period, Derek and Jason then flew to
Europe to join Erin Roberts, who had already been in
northern England for two months full time, training at the
world renowned Pontefract Club. All three played in the
Scottish and British Junior Open’s. Both events attract world
class players, in particular the British, which is the
equivalent of the World Junior Championships. All played
some outstanding squash and gained invaluable experience
that can only help them improve during the coming seasons.
Standout performance came from Erin who beat several
higher ranked players to finish fourth at the Scottish, a great
result, continuing very good from that had seen her finish
third in the Irish junior open weeks previously.
Blue Corn Crab Cakes
Ingredients
Ingredients:
6 tablespoons olive oil
1 medium red onion, diced
2 cloves garlic, finely chopped
2 jalapeno chiles, diced
¼ cup sour cream or crème fraiche
¼ cup prepared horseradish, drained
3 tablespoons Dijon mustard
2 pounds lump crabmeat
3 tablespoons flour
Kosher salt and freshly ground black pepper
2 cups blue cornmeal
Chopped fresh chives for garnish
Chef Peter sowa’s recipe
Method:
Heat 2 tablespoons of the oil in a medium sauté pan over medium high heat. Add the
onions and cook until soft, 3 to 4 minutes. Add the garlic and jalapenos and cook for 1
minute. Remove from the heat and set aside to cool slightly.
In a large mixing bowl, whisk together the sour cream, horseradish, mustard, and onion
mixture until combined. Pick over the crab meat to remove bits of shell. Add the crab and
the flour to the bowl and gently fold to combine; season with salt and pepper. Refrigerate,
covered, for 1 hour and up to 24 hours.
Divide the chilled crab mixture in 8 patties about ½ inch thick. Dredge each cake in the
cornmeal and tap off any excess.
Heat the remaining 4 tablespoons olive oil in a large nonstick sauté pan over high heat and
fry the cakes until crispy and lightly golden brown, about 3 minutes on each side.
Are you often tired after the simplest activities? Do the days drag on until you reach home, only to slump on the couch and
crash, unable to enjoy your daily activities?
If so, you are suffering from low energy. Energy normally fluctuates according to daily rhythms,
which vary from person to person. In general, we have more energy in the morning and wind down
toward the evening. However, many people suffer from chronic low energy and fatigue. They start
the day tired and end the day tired. The causes of low energy are numerous. But first and foremost,
low energy is often a result of stressful living in our modern world. Coping with stressful situations
requires a lot of energy, leaving the average person drained and at times depressed. Poor diet also
contributes to low energy. Instead of eating foods with a sustainable energy content, most people eat too many foods made of
simple sugars, which supply a rapid burst of energy, but burn out fast and furious, leaving us depleted. Lack of exercise is the
final nail in the coffin. Exercise helps us deal with daily stresses; without it, the body is rapidly depleted of vital energy.
Energy is qi. The level and quality of a person’s qi define how he or she feels. Chinese medicine recognized the concept of
vital energy thousands of years ago and has developed a full understanding of the essential functions and role of qi in health
and wellness. As a result, very effective means of addressing low energy have been developed.
Once we’ve figured out the underlying cause of the fatigue, I work with internists to create a treatment plan specific to each
patient’s needs. Treatment usually consists of acupuncture and herbal therapy for three months or more, depending on the
condition. I then counsel each patient on a dietary, lifestyle, and mind-body exercise regimen. In the more than twenty years
that I’ve been working with patients with low energy, I’ve helped the majority of my patients overcome their fatigue.
Quick Diet Tips
For sustained vitality and energy, the foods you consume must be wholesome, organic, and packed with essential vitamins,
minerals, and nutrients. The foods you eat must also be easily digested and absorbed.
• Avoid all forms of processed sugar, including sodas, sweetened juices, and pastries. Sugar is extremely damaging to
your energy levels, as the initial rush is followed by a spectacular crash, something we’ve all seen in children.
• Alcohol, coffee, deep-fried and fatty foods, and cold, raw food should also be avoided, as they can injure the spleen and
stomach and impair digestion.
For more information about your Qi and your health, speak with Melanie or Leslie at Body In Balance Acupuncture.
aVOIDING New year’s INjury syNDrOMe
By Lois Pohlod, Sport Physiotherapist
2009 is in full swing and hopefully so are those New Year’s Resolutions. Fitness should be a continuing part of a healthy lifestyle.
Slow, steady progression on a regular basis is the key to staying injury free. Doing an activity your enjoy makes fitness
seem easy. Here are a few rules to live by:
1. Consult a fitness instructor before beginning a new program. Learn how to use the equipment properly. Update and
review your program with your instructor on a regular basis as recommended by your trainer.
2. Consult your physiotherapist or health care professional if you have an unhealed injury. If you stopped activity due to
pain, the injury may still be there waiting to return!
3. Start slowly and work your way up. Set goals for each week and month. In running, the 10% rule is a safe bet – don’t
increase your running workout time by more than 10% a session and 10% a week. Sticking to this rule allows your body
to slowly build up distance with minimal to no injury risk. For other (non pounding) sports you can usually increase by
20% but gradual increase is the key.
4. Check that equipment. Are you putting on new shoes or dusting off ones that are months (or years old)? Shoes that have
sat around may have lost their absorptive qualities and may lead to injury. Are the strings in that racquet tight?
Regularly restringing your racquet is important to prevent upper extremity injury (not to mention improving your game!)
5. Listen to your body’s cues and signals. If during your exercise session one day your body hurts and you are struggling
to maintain your form, back off. Listen to your body and perhaps spend your session actively stretching or just take the
day off. Reflect on potential causes of this bad session – did you sleep poorly, are you overtraining, are you coming
down with the flu? Taking an easy or off day often is important in your long term fitness commitment.
6. Maintain flexibility, balance and strength. Every good fitness program includes time spent working on core stability,
posture, strength and flexibility. Primary muscle groups get stronger with exercise but often the stabilizers are ignored,
leading to injury. A good example is the shoulder rotator cuff. The anterior cuff works hard in racquet sports and
swimming. The posterior cuff is needed to stabilize the humerus in the joint while swinging or stroking. If they become
lengthened and weak, the imbalance may lead to impingement syndrome and a visit to the physiotherapist.
7. Pay attention to technique. Even if it is an easy day in the exercise regime, pay attention to your technique. Poor
technique leads to bad habits and potential injury. If you are not sure of technique, consult a professional.
8. Enjoy each session. Plan your workout into your day. Don’t rush it. Make sure you have fuelled properly and start in a
relaxed frame of mind. Life is often too hectic and exercise should be enjoyable every day.
The year is just weeks old and you will keep your resolution by staying committed to a regular, balanced, enjoyable exercise
regime. Keep these rules in mind as you progress your program and have fun!
Sweet & Savory Spiced Nuts
2 cups mixture of your favorite nuts: pecan halves, almonds, hazelnuts...
Spice Mix:
2 tablespoons sugar 3
/4 teaspoon kosher salt
1
/2 teaspoon cinnamon 1
/8 teaspoon allspice
1
/8 teaspoon cayenne pepper (or less to taste)
Glaze:
1 tablespoon water 2 teaspoons vanilla extract
1 teaspoon brown sugar 1 tablespoon canola or corn oil
Cooking instructions:
Heat the oven (or toaster oven) to 350 degrees. Spread the nut mixture on a baking sheet and toast them for 6 minutes or
until they are fragrant and their color deepens slightly. In a medium-size bowl, stir together the spice mix. In a saucepan,
combine the glaze ingredients and bring them to a boil over medium heat, whisking constantly. Stir in the toasted nut mixture
and continue to stir until the nuts are shiny and the liquid is gone (about 1-2 minutes). Move the glazed nuts to a mixing bowl,
sprinkle on the spice mix and toss them well to coat. Spread the coated nuts on a cookie sheet and return them to the oven
for another 4 minutes (check regularly to make sure they don’t burn). Remove and let cool.
FItNess MusCle OF the MONth - the huMaN heart
The heart is one of the most important organs in the entire human body. It is really nothing
more than a pump, composed of muscle which pumps blood throughout the body, beating
approximately 72 times per minute of our lives. The heart pumps the blood, which carries all
the vital materials which help our bodies function and removes the waste products that we do
not need. For example, the brain requires oxygen and glucose, which, if not received continuously,
will cause it to lose consciousness. Muscles need oxygen, glucose and amino acids, as
well as the proper ratio of sodium, calcium and potassium salts in order to contract normally.
The glands need sufficient supplies of raw materials from which to manufacture the specific
secretions. If the heart ever ceases to pump blood the body begins to shut down and after a
very short period of time will die.
The heart is essentially a muscle (a little larger than the fist). Like any other muscle in the human body, it contracts and
expands. Unlike skeletal muscles, however, the heart works on the “All -or-Nothing Law”. That is, each time the heart
contracts it does so with all its force. In skeletal muscles, the principle of “gradation” is present. The pumping of the heart is
called the Cardiac Cycle, which occurs about 72 times per minute. This means that each cycle lasts about eight-tenths of a
second. During this cycle the entire heart actually rests for about four-tenths of a second.
CarDIOVasCular aCtIVIty
Cardiovascular fitness is a measure of the combined efficiency of the lungs, heart, and bloodstream to bring oxygen to the
working muscles. With a larger aerobic capacity, daily activities are completed more efficiently and it allows you to do the fun
activities that you enjoy.
How to find your heart rate:
Radial Pulse
1. Follow the line of the thumb down to the shallow depression about an inch below your wrist.
2. Using the pads of the first 2 fingers press down to find your pulse.
3. Count the number of beats over 15 seconds, starting with zero.
4. Multiply by 4, to get the number of beats per minute.
18 calgarywinterclub.com | February 2009
Carotid Pulse
1. Follow the line of the jaw from the ear straight down and onto the neck until you find the shal
low depression just behind the wind pipe
2. Using the pads of the first 2 fingers press down to find your pulse.
3. Count the number of beats over 15 seconds, starting with zero.
4. Multiply by 4, to get the number of beats per minute
Your resting heart rate is beats per minute
You can also use Borg’s Perceived Exertion Scale. This scale is used to
describe the way you feel during exercise. At complete rest you are at 0 on
the scale and if you are working at your max you are at 10 on the scale.
To achieve cardiovascular benefits, you need to maintain intensity
between 65% and 85% of your maximum heart rate or between 6.5 and 8.5
on the Perceived Exertion Scale for a minimum of 20 minutes a day, 2-5
times per week.
For more information about the heart and how to exercise it please come
This event is normally held the week prior to the Juvenile
with 14 of Southern Alberta’s best juvenile (17 years of age
and under as of Dec 31) teams playing for $1680.00 in cash
prizes.
Six women’s teams signed up for this year’s event and ten
men’s teams. Teams competed in a round robin format spiel
and were paid for every win. In the men’s section teams were
split into two five team pools for the round robin. Instead of
having a bye they played off against the other pools’ bye
team in a skins game. All teams were able to play five games
and gained valuable experience which they can now apply in
playdowns.
CurlING tIP OF the MONth – stOP slOw Play
As in golf, slow play in curling can be frustrating. It is up to each and every player to do their part to speed up play
so we can all play eight ends. There are many ways to speed up the game. Here are some ideas that might help:
• Be on the ice 5 minutes before game time. This allows for the obligatory handshakes, warm-up
slides, coin toss and still allows you to start on time.
• Sweepers should get out their player’s next rock.
• Do not pull out the opposition’s stones. Teams often throw their rocks out of order and you may
not know what the order is. Also, pulling out rocks creates a tripping hazard.
• As soon as the opposing player has released their stone, the next player to throw should move
quickly to the hack so they can be ready to throw as soon as their skip takes control of the house.
• If you do not have hammer, your lead should not help to put the rocks away. The lead should find
their first rock, get in the hack, clean their rock and be prepared to throw as soon as the skip is at the other end.
• Curling is not a democracy. Front end players should not provide input on strategy unless asked. Be prepared to
contribute when asked but otherwise, keep it to yourself. Even the thirds need to exercise restraint when it comes to
giving advice. Not only does second guessing their every call undermine the skip, it also slows down the game.
• Other than at the end of the game, rocks do not need to be put away in order (this one is hard for many people to let go
of). Simply putting the rocks neatly in the corners and not worrying about number order saves a lot of time.
• If you are compulsive about putting rocks away in order and can’t let go of that one, skips can help by putting rocks that
are out of play in their appropriate place as the end progresses.
• Rocks don’t have to match up with the colour of the rock boxes until they’re put away at the end of the game. It will not
affect the game so there is no need to waste time switching corners.
• Skips must stay focused on the next shot and not be chatting with the opposing skip or adjacent sheets.
• Skips could call a simpler game. Simple strategy usually means simpler shots with a higher execution rate which is good
for our confidence as club level curlers. It also means there is less likelihood of having a million rocks in play which
lead to complex, multi-option situations where too much deliberation about the next shot occurs.
The overall key to a fast game is being ready to go at all times. Be aware of your team, be aware of
your opposition, and always be one step ahead. If you can get into a nice fast rhythm
you’ll find your game runs smoother and will be more enjoyable for all parties involved.
Childcare Services
Valentine’s evening is a time for couples to enjoy a nice quiet evening together. To ensure members can enjoy their dining
experience, let us help by offering free childcare. When booking your reservation, please define the number of children under 10.
Please note that if your children are using the childcare during this time, they will NOT be able to use it during the day as that
would put them over their daily limit. Register early as we can only take 5 babies in the childcare.
