“en Macul la uva madura muy bien y, a diferencia de otras zonas, la<br />
pepa se oscurece completamente. Alcanza una madurez óptima. sus<br />
vinos tienen un tanino súper suave, aterciopelado y jugoso. A la mezcla<br />
de Lota, aporta buena fruta y una gran estructura de soporte. sin duda<br />
representa el desarrollo característico de un terroir en toda su expresión”,<br />
explica Gabriel Mustakis, enólogo de Cousiño Macul.<br />
según Mustakis, la edad de las parras juega un papel preponderante.<br />
Las plantas jóvenes son más heterogéneas. Las de Quebrada de Macul,<br />
en cambio, poseen una mayor fortaleza y profundidad del sistema radicular<br />
y distribuyen mejor la carga frutal. es muchísimo más fácil el manejo<br />
del viñedo. no se requieren mayores ajustes de canopia ni raleos o<br />
podas en verde. Las plantas están en perfecto equilibrio y producen lo<br />
que tienen que entregar, en forma muy natural, sin excesos.<br />
“Los vinos son suaves, frutales y con un muy buen balance entre<br />
alcohol y acidez. en general los pH del Cabernet sauvignon de Macul<br />
no sobrepasan los 3,45. sus rendimientos son de alrededor de 5 mil<br />
kilos por hectárea. son concentrados y con una calidad de taninos que<br />
permite largas maceraciones postfermentativas. son vinos con acideces<br />
naturales. no son tan exuberantes como Pamela Anderson, sino más<br />
elegantes y estilizados… como elle McPherson”, se ríe.<br />
siempre en el Alto Maipo, pero más al sur de Quebrada de Macul,<br />
encontramos a Cecilia torres, enóloga de santa Rita y responsable del<br />
ícono Casa Real Reserva especial. el paisaje de esas parras de más de<br />
50 años de edad de Alto Jahuel, que profundizan en esos restrictivos<br />
suelos de granito, refleja con fidelidad y extrema elegancia el potencial<br />
del Cabernet sauvignon en Chile.<br />
De acuerdo a la enóloga, esas parras entregan un sinigual equilibrio<br />
entre frutosidad, acidez, alcohol y taninos. en un viñedo más joven es<br />
posible encontrar potencia y expresión frutal, pero no el mismo nivel<br />
de concentración. es por eso que se realiza un exhaustivo trabajo vitícola,<br />
marcando las plantas más jóvenes del cuartel y vinificando sus<br />
uvas por separado para no diluir el resultado final,<br />
aunque la fruta tenga el mismo origen genético.<br />
“Una parra al tercer o cuarto año te puede mostrar<br />
su potencial, su genética, su aptitud al suelo y<br />
clima, pero esta lejos de estar en balance o equi-<br />

seven meters underground, the old egg-white mortar cellar<br />
of cousiño Macul are home to wines loaded with history<br />
that summarize the successful saga of cabernet sauvignon<br />
in our country. at Quebrada de Macul, an area surrounded<br />
by the relentless realty expansion of greater santiago, we<br />
still find old vineyards that are the direct descendants of the<br />
first cuttings brought by the cousiño family from Médoc in<br />
1863. today, their genes brand the character of lota, the<br />
winery’s icon, which took over the quality leadership of the<br />
traditional antiguas Reservas.<br />
“in Macul, grapes ripen quite well and, unlike other<br />
vineyards, seeds become completely dark. they reach<br />
optimum maturity. the resulting wines feature incredibly<br />
smooth, silky and juicy tannins. they contribute to the lota<br />
blend with excellent fruit and firm structure. undoubtedly,<br />
this is terroir at its best,” explains gabriel Mustakis,<br />
winemaker of cousiño Macul.<br />
in his opinion, the vines’ age plays a crucial role. Young<br />
plants are less consistent. at Quebrada de Macul, however,<br />
they have developed stronger and deeper root systems and<br />
better fruit load distribution. Managing the vineyard is much<br />
easier. You do not need intensive canopy thinning or green<br />
pruning. the plants have reached perfect balance and deliver<br />
what they have to offer, very naturally and without excesses.<br />
“Wines are smooth, fruity and very balanced in their<br />
alcohol-to-acidity ratio. in general the ph of Macul cabernet<br />
sauvignon does not exceed 3.45. Yields are in the vicinity<br />
of 5,000 kg per hectare. they are concentrated and the<br />
quality of their tannins allows prolonged post-fermentation<br />
maceration. their acidity is also very natural. Not as<br />
exuberant as Pamela anderson, but leaner and<br />
classier… like Elle McPherson,” he jokes.<br />
still in alto Maipo but further south than<br />
Quebrada de Macul, we meet cecilia torres,<br />
winemaker of santa Rita and responsible for its<br />
icon casa Real Reserva Especial. seeing these 50+<br />
year old vines thriving in the restrictive granite soil<br />
of alto jahuel is witnessing the extremely elegant<br />
potential of chilean cabernet sauvignon.<br />
according to her, these grapevines deliver an<br />
unmatched balance of fruitiness, acidity, alcohol<br />
and tannins. in a younger vineyard one can find<br />
power and fruit expression, but not the same<br />
