Therefore additional foodsupply is requiredfrom outside to fulfill thenutrition needs of population during emergencyand natural disasters. For infants,there ismilk and food products available inthe market that can be given in such a situation.However, for children and adults,there is often no emergency food availablein the market. Some post-disaster surveysindicated thatfood aid distributedduringemergency situationwas onlyas energy sourcerather than providinga balancedintake.Furthermore,many of thesefoods still requireprocessingand preparationbefore consumption.This studydeveloped formulated ready-to-eat foodsfor children and adults, that has a completenutrient content and dense in calories thatcan be given in disaster-related emergencysituation. The foods are produced in solidand semi-solid (paste) form, and hadgoodacceptance by both panelist in laboratoryand people in the field. The method of productionare as follows. In the early stagesof research, six formulas in solid formweredeveloped, three weresavory andthree were sweet. In semi solid form, therewere two type formulas developed. In eachgroup, one formula that the most preferredby the panelist in the laboratory were chosen.The best formula then given to fieldpanelists in area of disaster to know theirpreference. The results showed that formulamade from soy and sesame with sweettaste hadthe highest value compared withother types of formulas, and significantlydifferent by Duncan’s test from all formulas.In flavor and aroma attributes, thisformula is not significantly different fromothers, however in crispiness, this formulahad the best acceptance. Two types of pasteformula, one made from red bean and theother made from nut and sweet potatoeswere not significantly different in anyattributes.At sufficient levels of 2000 kcal, thesolid formula contains protein of 137.3%RDA, fats of 132.8% RDA, while the semisolid formula contains proteins and fats of139.4% and 166.3% RDA respectively.<strong>Profil</strong> Balitbangkes27
