ABSTRACT<br />

In Brazil, the aviculture has been gaining more prominence, conquering new<br />

markets and making the consumption of poultry meat is increasing. Consumers are<br />

increasingly demanding with regard to product quality, which means that all sectors of<br />

the production chain poultry business worry in use techniques and methodologies to<br />

attend these new demands. The poultry slaughter is a very important step inside the<br />

production process, because at this moment any error in the management, since the<br />

capture of animals until the end of slaughter, can seriously compromise the produtct<br />

quality, which ends up generating economic impacts for both, producers and consumers<br />

to. This work, aims presents a flowchart with main rules and laws related with poultry<br />

slaughter, showing all stages of this process, since the time before slaughter (catch and<br />

transport of animals), until the end of slaughter. Much of the research in this area are<br />

carried out of Brazil, and its technologies are adapted to our conditions. Thus, it is<br />

necessary to carry out more studies in our country.<br />
