MALLORQUIN ‘TURRÓN’<br />
DER TURRÓN MALLORQUÍN<br />
Christmas is a time of traditions and<br />
family reunions throughout the<br />
world, not just in Mallorca. But there<br />
is one thing that makes the festivities<br />
in <strong>Palma</strong> something special: traditional<br />
Mallorquin ‘turrón’.<br />
If a countryman is asked what the<br />
star product of this island’s countrysi<strong>de</strong><br />
is he will almost certainly reply<br />
that it is the almond. This is why the<br />
image of almond trees in blossom has<br />
become one of the inevitable clichés<br />
of Mallorquin poetry. In <strong>Palma</strong>, the<br />
arrival of spring has always been heral<strong>de</strong>d<br />
by the trees’ white blossom,<br />
and the beginning of autumn would<br />
come after the harvest of the fruit.<br />
Naturally this is still the case.<br />
Although the origins of the almond<br />
might appear to lie in Asia, its cultivation<br />
is characteristic of the entire<br />
Mediterranean region.<br />
And autumn changes into winter.<br />
The cold starts to make its presence<br />
felt in <strong>Palma</strong> around about Christmas<br />
time. And it is then that the almond<br />
comes into its own – when the<br />
<strong>de</strong>sserts of each dinner are crowned<br />
by the two most typical types of turrón:<br />
the drum of almonds, and the flat<br />
turrón cake. In Mallorca these are<br />
produced by craftsmen and can be<br />
purchased in grocers’, bakers’, and<br />
even shopping centres, as for years<br />
now there have been brands which<br />
have good distribution.<br />
The drum of almonds is hard and<br />
thin, with a colour not dissimilar to<br />
that of honey. It is ma<strong>de</strong> by mixing<br />
raw almond with sugar over heat.<br />
When the sugar melts, the mixture<br />
forms a sheet that on cooling is cut<br />
into pieces. It is very sweet, very<br />
good, and always ensnares those with<br />
a sweet tooth. On the other hand, the<br />
so called turrón cake is soft, although<br />
it also mixes almond with sugar, to<br />
which is ad<strong>de</strong>d a little, a very little<br />
grated lemon peel. The resulting<br />
paste is covered by two fine layers of<br />

part of tradition in <strong>Palma</strong> and Mallorca,<br />
and for many people Christmas<br />
without turrón is not Christmas.<br />

Star <strong>de</strong>r landwirtschaftlichen Produkte,<br />
so wür<strong>de</strong> er wohl die Man<strong>de</strong>l nennen.<br />
Deshalb ist auch das Bild <strong>de</strong>s<br />
blühen<strong>de</strong>n Man<strong>de</strong>lbaums eines <strong>de</strong>r<br />
unausweichlichen Klischees <strong>de</strong>r mallorkinischen<br />
Poesie. In <strong>Palma</strong><br />
bestimmte die Man<strong>de</strong>lblüte <strong>de</strong>n<br />
Beginn <strong>de</strong>s Frühlings und <strong>de</strong>r Herbst<br />
begann offiziell nach <strong>de</strong>r Man<strong>de</strong>lernte.<br />
Dies trifft auch heute noch zu. Der<br />
Ursprung <strong>de</strong>r Man<strong>de</strong>l ist allem<br />
Anschein nach asiatisch, heute<br />
jedoch wird sie im gesamten Mittelmeerraum<br />
angebaut.<br />
Vom Herbst zum Winter. Je näher<br />
Weihnachten kommt, um so kälter<br />
wird es in <strong>Palma</strong>. Zu dieser Zeit ist<br />
die Krönung eines je<strong>de</strong>n Aben<strong>de</strong>ssens<br />
<strong>de</strong>r Nachtisch in <strong>de</strong>r Form<br />
zweier Arten von Turron: <strong>de</strong>r Tambor<br />
<strong>de</strong> Almendra und die Cocas <strong>de</strong> Turron.<br />
Auf Mallorka wer<strong>de</strong>n sie han<strong>de</strong>rklich<br />
hergestellt und man kann<br />
sie in kleinen Lebensmittellä<strong>de</strong>n,<br />
Bäckereien und sogar in großen<br />
Supermärkten kaufen, da einige<br />
Marken schon seit Jahren über eine<br />
gute Distribution verfügen.<br />
Der Tambor <strong>de</strong> Almendra ist hart<br />
und dünn, und hat die Farbe von<br />
Honig. Man bereitet ihn zu in<strong>de</strong>m<br />

man die rohen Man<strong>de</strong>ln über <strong>de</strong>m<br />
Feuer mit Zucker mischt. Wenn <strong>de</strong>r<br />
Zucker schmilzt, nimmt die<br />
Mischung die Form einer Scheibe<br />
an, die man danach in Stücke schnei<strong>de</strong>t.<br />
Er ist sehr süß, sehr lecker und<br />
niemand kann ihm wi<strong>de</strong>rstehen. Die<br />
Coca <strong>de</strong> Almendra wi<strong>de</strong>rum ist<br />
weich, ebenfalls eine Mischung aus<br />
Man<strong>de</strong>ln und Zucker, jedoch mit<br />
einer Spur geriebener Zitronenschale.<br />
Diese Masse wird auf bei<strong>de</strong>n Seiten<br />
mit feinen Oblaten abge<strong>de</strong>ckt.<br />
Das Ergebnis ist ein fester Bestandteil<br />
<strong>de</strong>r Tradition <strong>Palma</strong>s und Mallorkas,<br />
<strong>de</strong>nn eine Weihnacht ohne Turron<br />
ware für viele keine Weihnacht.<br />

Süßigkeit, jedoch immer in Maßen genossen.<br />
