Although the first cold brew appeared on the scene only a few years back, the city’s imaginative baristas are now surpassing each other in creativity. These are the hottest cold coffee drinks right now: Herby infusion 1. ALL DAY Ever tried putting rosemary in your coffee? Neither had anyone in Miami, until Camila, barista at All Day, created Our Sweetheart Nº4. This mix of rosemary limeade and cold brew shaken as a cocktail and served over ice was originally a seasonal special – now they couldn’t take it off the menu without a small riot. Ruby Coffee Roasters’ Creamery Blend, a seasonal blend currently made up of coffees from Colombia and Ethiopia, stands up well to mixing with the rosemary limeade. It’s refreshing, tart and sweet at the same time. And All Day’s sophisticated cold brew process preserves the notes of the coffee precisely. VICE CITY BEAN When Eva and Roland Baker moved from LA to Miami to open Vice City Bean a little over a year ago, they realised that to refresh their new customers’ wicked coffee thirst, they’d have to be very inventive. So they mixed a shot of espresso with tonic water from New Zealand, added a twist of orange and their own vanilla syrup, made from real vanilla beans, to create Spro & Tonic. Espresso is much more concentrated than cold brew, and because it’s thicker and smoother, it can be diluted by the tonic without losing flavour. BOX COFFEE Whereas most cafes offer a couple of cold coffee options at most, the newly opened Box Coffee is 100 per cent cold brew. The brainchild of Australian Bec Milgrom and her partner, Argentine-born Lucas Cravero, Box Coffee offers four different straight cold brew drinks and four Box Specialties. These include the Mojito Mint, made with the Box Cold Brew Blend produced specially for them by Miami’s own Per’La Specialty Roasters. They then add raw turbinado sugar, which tastes of molasses, and muddled lime and fresh mint for bold freshness. It’s adventurous. All that’s missing is the rum.
