Diana liebt Gnocchi und so muss sie natürlich testen,<br />
ob hier wirklich der Cuoco sein Handwerk versteht -<br />
die Gnocchi sind nämlich fresca - frisch hausgemacht.<br />
Ich habe mit der Auswahl schon größere Probleme -<br />
auf der Karte lachen mich so viele interessante Gerichte<br />
an und ich frage Besitzerin Alicia nach ihrer<br />
Lieblingspasta. Sie empfiehlt Nudeln mit Bolognese<br />
nach einem Rezept der Großmutter des Hauses. Oha<br />
- ich liebe Bolognese, aber leider hat das, was ich<br />
meistens in italienischen Touristenrestaurants als<br />
Bolognese serviert bekomme, so viel mit Bolognese<br />
zu tun, wie Nudeln mit Sahne-Schinken-Soße mit<br />
Spaghetti Carbonara - also nicht besonders viel. Von<br />
daher meide ich mittlerweile Bolognese und koche<br />
sie mir lieber zuhause selber. Aber Sie wissen ja,<br />
wie es mit Omis und ihren Frikadellen ist: sie sind<br />
immer die besten. Also bestelle ich Fettucine mit<br />
Bolognese Ragù. Während wir warten, erfreuen wir<br />
uns an der guten Laune der gar nicht mal so kleinen<br />
Al Circus Familie. Anscheinend arbeiten hier ausschließlich<br />
Italiener, die untereinander herumblödeln,<br />
sich Sprüche zuwerfen und natürlich nebenbei ihren<br />
Aufgaben nachgehen. Man hat wirklich den Eindruck,<br />
dass hier eine ganze Familie für einen kocht.<br />
Da kommt das Essen und wir brauchen gar nicht<br />
lange um den heißen Brei herumreden: bravissimo,<br />
bravissimo, bravissimo. Die Gnocchi sind sämig<br />
weich. Die Tomatensauce cremig und fruchtig, der<br />
Mozzarella leicht am Zerfließen. Und die Bolognese<br />
Pasta ist richtig, richtig gut. Beim Schreiben dieser<br />
Zeilen habe ich gerade wieder diese typische Kraft<br />
und Würzigkeit auf der Zunge, die sich einstellt, wenn<br />
eine Bolognese mit den richtigen Zutaten stundenlang<br />
eingekocht wurde. Auch dem dazu gereichten<br />
Parmesan schmeckt man sofort an, dass dieser nicht<br />
im Mercadonna gekauft wurde.<br />
Beide Gerichte für sehr, sehr faire 10€.<br />
Wir sind so pappsatt, dass wir leider auf das Dessert<br />
verzichten müssen. Noch ein Limoncello aufs Haus<br />
und inklusive Agua und Vino haben wir keine 40€ auf<br />
der Rechnung. Die müssen wir unbedingt in der <strong>MUY</strong><br />
<strong>BIEN</strong> vorstellen.<br />

I have more problems with my choice<br />
– there are so many interesting dishes on the menu.<br />
So I ask the owner Alicia for her preferred pasta<br />
suggestion.<br />
She recommends the pasta with bolognese, prepared<br />
according to the grandmas’ recipe. Oha - I<br />
love bolognese but sadly, here, I am never served<br />
anything remotely related to bolognese. Bologneses<br />
served here more often have as little to do with<br />
bolognese as a pasta-cream-ham sauce has to do<br />
with spaghetti carbonara - barely anything. Consequently,<br />
I have done my best to avoid any bolognese<br />
and if I want to have some, I will cook it at home.<br />
However, you know the deal with grandmas and<br />
their meatballs: theirs are always the best. So, I decide<br />
to order the fettuccine with bolognese ragú. As<br />
we are waiting, we enjoy the good mood and company<br />
of the not so small Al Circo family. Apparently,<br />
only Italians work here, goofing around while working.<br />
You easily get the impression that the whole<br />
family is cooking for you.<br />
Then, the food comes and to get directly to the point:<br />
bravissimo, bravissimo, bravissimo. The gnocchis are<br />
soft but al dente. The tomato sauce is creamy and<br />
fruity, the mozzarella is oozing richness. And the<br />
bolognese pasta is really, really good. As I am typing<br />
these words my tongue is overwhelmed once<br />
again, with the characteristic potency and spiciness<br />
that only develops when the right ingredients are<br />
slow cooked over hours. Even the parmesan cheese<br />
is definitely not from Mercadona.<br />
Both dishes cost a very, very fair 10€.<br />
We are so stuffed, that we have to forgo the desert.<br />
A limoncello on the house, a water and a wine and<br />
we do not reach the 40 € on the bill. We absolutely<br />
have to feature them in <strong>MUY</strong> <strong>BIEN</strong>.<br />
