Cream Corn<br />

Harvest ‘Bedwell’s Supreme’ ears when<br />

they are at the milk stage. Working<br />

with one ear at a time, just nip the<br />

tops off the kernels with a corn cutter<br />

or very sharp knife. Continue cutting<br />

around each ear, shaving more deeply<br />

with each pass until all that remains<br />

on the ear is the fibrous bases of the<br />

kernels, collecting the juice and pulp<br />

into a bowl. When you have two cups<br />

of cut corn, pour into a skillet, add a<br />

little water, salt to taste, and a stick of<br />

margarine. Simmer on very low heat<br />

until thickened, about 20-30 minutes.<br />

Serve with fried okra, a mess of purple<br />

hull peas, and cornbread.<br />
