• Operators voluntarily destroyed a total of 7.5 tonnes of food after food safety risks were identified.<br />

• In <strong>the</strong> Athletes Village 950 samples of prepared, ready to eat foods were taken <strong>and</strong> tested for<br />

microbiological quality.<br />

Environmental Health Program<br />

The Department of Health <strong>and</strong> metropolitan Health Units, implemented a broad strategic environmental<br />

health program in collaboration with local councils <strong>and</strong> a range of NSW Government agencies, including<br />

OCA, SOCOG, <strong>the</strong> Environmental Protection Authority <strong>and</strong> Sydney Water Corporation. The aim of this<br />

initiative was to ensure that <strong>the</strong> highest environmental health st<strong>and</strong>ards were maintained during<br />

<strong>the</strong> Games.<br />

An audit program of regulated water-cooled systems <strong>and</strong> swimming pools was carried out by local councils<br />

<strong>and</strong> Public Health Units.<br />

All cooling towers within Olympic precincts were routinely inspected <strong>and</strong> additional inspections were<br />

conducted for towers near Olympic venues, transport hubs <strong>and</strong> community event sites.<br />

Information was provided to <strong>the</strong> operators of swimming pools throughout NSW on best pool management<br />

to reduce Cryptosporidium contamination. This included information leaflets to educate <strong>the</strong> community.<br />

An environmental health presence was provided within Olympic <strong>and</strong> Paralympic competition <strong>and</strong> noncompetition<br />

venues. Each site was inspected prior to competition to ensure good public health practices<br />

had been adopted.<br />

Games-time Results<br />

No outbreaks of disease from environmental causes were detected during <strong>the</strong> Games period.<br />

Environmental Health Program results include:<br />

• 26 environmental health officers carried out 33 Olympic <strong>and</strong> 24 Paralympic venue pre-event<br />

inspections.<br />

• A total of 169 follow up inspections <strong>and</strong> 57 pool <strong>and</strong> spa inspections were carried out at regular<br />

intervals during <strong>the</strong> Games.<br />

• 60 reports were filed on sanitation, including bacteriological sampling.<br />

Vessel Inspection Program<br />

The Vessel Inspection Program was established to ensure that strict health st<strong>and</strong>ards were maintained on<br />

cruise ships moored in Sydney Harbour during <strong>the</strong> Olympic period. The program was adapted from <strong>the</strong><br />

United States Centre for Disease Control (CDC) program of vessel inspection.<br />

Games-time Results<br />

No outbreaks of disease were associated with vessels during Games-time. Vessel Inspection Program<br />

results included:<br />

• All cruise ships used as accommodation centres during <strong>the</strong> Games underwent a full vessel inspection.<br />

• Follow up inspections were carried out every 3 to 4 days, concentrating on food buffet services, food<br />

temperatures, water supply <strong>and</strong> swimming <strong>and</strong> spa pool maintenance.<br />

• Bacteriological samples were collected during inspections.<br />
