Ancient Greeks and Romans used amphoras to transport wine, andtoday’s technologies changed a lot of things in that area, but barrels remainedthe basis of the process of keeping and holding the wine. Barrelsalso provide the wine with that special necessary flavour that is recognizablefor the entire process, from holding to processing the wine96Each of our bottles capturesthe spirit of theisland”, says Andro Tomić,famous winemakerfrom Hvar. And when wethink about the sunniest Croatian island,it is perfectly logical to connect a gift ofnature like wine grape with all elements ofthe Hvar life.Connecting new and old elements is everywinemaker’s dream, and Tomić has surelymade that dream a reality. Born in Hvar, hehas a natural understanding of the islandthat was fi lled with wine grape by ancientGreeks four centuries before Christ. However,Tomić has taken it one step further byadding a new dimension to the methodsof his predecessors and introducing glamourinto the winemaking business.Long alive traditionWine grape and wine itself have alwaysserved as food and medicine to the peopleof Hvar, says Tomić, but they primarilybrought a sense of security. Mediterraneanrichness fi lled the table with delicaciesthat provided safety for those who workedvery hard to produce them. That is whathappened with all Tomić generations, andAndro Tomić was no exception. He spenttwenty years outside of the island, but heused that period of time to learn all thenewest methods in the winemaking business. A combination of thesenew technologies and natural blessings are the only recipe for success, and Tomić started a company called Bastijan in 1997, which has thejob of promoting the culture of wine, but also producing the best wineyou could ever fi nd.Tomić was well-aware of the enormous amount of competition intoday’s winemaking business, and he knew the only way to succeedwas to produce the best possible product, which would be recognizedby the whole world. Local wine types, which were produced by thepeople of Hvar for centuries, served as a good enough foundation. However, he still had to face the challenge of combining all elementsto create the product that will be competitive on today’s wine market. It didn’t take long for Tomić to fi nd the necessary formula, andhis company Bastijan soon earned its reputation with wine lovers andbecame synonymous for quality. “Our house’s philosophy is to producethe best possible wine, as well as retaining centuries of tradition byadding several new products”, says Andro Tomić in a presentation ofhis company. The imposing newly-built wine cellar is located in Mina Beach in Jelsa, and Tomić now produces around 150.000 bottles per year. The entirefamily is involved in the business, and numerous locals also help out, permanently or occasionally. Trying to emulate old Roman dining-room
