14 The Health Bulletin December, 1951College Food and Nutrition DepartmentThe North Carolina Association forHome EconomistsRepresentatives of several other groupsare to be invited to assist this Committee.It was planned that each associationor agency represented on the AdvisoryCommittee be a member of the CivilDefense Committee in his respectivestate organization, thereby becomingthe liaison agent between the AdvisoryCommittee and the State Association.The primary fvmction of the StateAdvisory Committee is to serve (1) asa clearing hovise for the various matterspertaining to nutrition and foodservice, (2) to coordinate the plans ofthe various associations, to preventduplication of effort and to provide amore efificient and effective service forthe State and (3) to provide guidancein nutrition and food matters as requestedby the State Civil DefenseDirector.The Committee can report the followingplans in progress:1. A guide on planning for food andnutrition service has been preparedfor the use of local civil defensechairmen. This is availableto civil defense chairmen throughthe oflace of the State Civil DefenseDirector.2. A register of trained dietitians isbeing secured by the Dietetic Association.(a) This group will also prepare asuggested menu guide for visein hospitals and emergencyfield centers for the injured.3. A register of Home Economistswith knowledge of quantity foodservice is being prepared by theHome Economics Association.4. The State Board of Public Welfareis preparing a register of trainedfood service managers known ineach county.5. The Restaurant Association hasappointed a committee which willgather information about suitablefood centers and personnel.6. The School Food Service Associationwill secure similar informationas it relates to school lunchrooms.(These registers will be checked forduplication and given to the StateCivil Defense Chairman. They maybe used as a beginning register bylocal directors or to supplementregisters of local directors.)7. The Red Cross has offered cooperationthrough its canteen committees.8. The State Board of Health,through a committee will help setup nutrition standards.(a) It will also provide menuguides for state hospitals andinstitutions for feeding personsimder restricted conditions,as for example if waterand fuel are not available.The Committee plans to make availablematerials which will be useful tolocal Civil Defense Directors.
