Preparation<br />

Scale and fillet the whitefish.<br />

For the dress<strong>in</strong>g, boil a broth us<strong>in</strong>g the head<br />

and bones of the whitefish. Add dill stems,<br />

an onion and herbs to your personal lik<strong>in</strong>g<br />

and season.<br />

Dice a small onion <strong>in</strong>to cubes and simmer<br />

with butter at low heat for ten m<strong>in</strong>utes until<br />

glassy. Add 150 ml of w<strong>in</strong>e (the same w<strong>in</strong>e<br />

you later serve). Br<strong>in</strong>g the mixture to boil lett<strong>in</strong>g<br />

the alcohol evaporate. Add half a litre of<br />

fish broth and boil until it is half of orig<strong>in</strong>al.<br />

Add 200 ml of cream and boil until the dress<strong>in</strong>g<br />

thickens. Add lemon juice and a couple of<br />

strips of lemon peel. Season with salt and sugar<br />

so that the mixture has a sweet and sour taste.<br />

Peel and slice the beets. Season with salt and<br />

sunflower oil. Bake <strong>in</strong> oven at 180 ° for 25 to<br />

30 m<strong>in</strong>utes.<br />

Cut the cucumber <strong>in</strong> half and slice <strong>in</strong>to th<strong>in</strong><br />

strips. Slice the radishes and put <strong>in</strong>to a bowl<br />

together with the cucumber, watercress and<br />

sprigs of dill. Spr<strong>in</strong>kle with lemon juice and<br />

season with salt and cum<strong>in</strong>. Add one tablespoonful<br />

of olive oil and mix. Let the salad<br />

stand for a few m<strong>in</strong>utes to season.<br />

Heat the olive oil on a fry<strong>in</strong>g pan and fry the<br />

whitefish for two m<strong>in</strong>utes on both sides. Take<br />

the pan off the heat and have the fish to bake<br />

<strong>in</strong> the pan for another 3 or 4 m<strong>in</strong>utes. Season<br />

with sea salt.<br />

Place the beet slices, fish and salad on a plate.<br />

Add dress<strong>in</strong>g to your lik<strong>in</strong>g. Spr<strong>in</strong>kle with<br />

olive oil.<br />

2 onions<br />

herbs of your personal taste<br />

200 ml of 35% cream<br />

juice and peel of one lemon<br />

150 ml of German Riesl<strong>in</strong>g<br />

p<strong>in</strong>ch of sea salt<br />

some sugar<br />

For salad:<br />

two medium-sized beets<br />

sun flower oil<br />

one medium-sized cucumber<br />

four red radishes<br />

some lemon juice<br />

watercress<br />

cum<strong>in</strong><br />

good quality olive oil<br />

some dill<br />

Whitewish<br />

Whitefish live <strong>in</strong> Estonian coastal waters as well<br />

as <strong>in</strong> the rivers of Pärnu and Narva. Whitefish can<br />

be bought at Tall<strong>in</strong>n Fish Market and at different<br />

fish farms.<br />
