What would you say about<br />
Turkey’s position in candied<br />
chestnut production? <br />
As I have already said at the beginning<br />
Turkey has Europe’s largest chestnut<br />
reserves. However, the market<br />
for chestnut candies is controlled by<br />
French companies worldwide. Italian<br />
companies and some French companies<br />
produce candied chestnut. Of<br />
course, the chestnut processing technology<br />
and raw chestnut and peeled/<br />
frozen chestnut market is still in the<br />
hands of Italians. Turkey, unlike the<br />
world markets, has an active market<br />
for 12 months. Classic Turkish chestnut<br />
candy is sold fresh in the refrigerator<br />
if it is not canned. French products<br />
are relatively durable due to the<br />
higher sugar level but they have not a<br />
genuine chestnut flavor. By considering<br />
the scale of our differences, we can<br />
say that the chestnut market in Turkey<br />
is comparable to Europeans but unfortunately<br />
we have to improve our<br />
technology and marketing skills and<br />
abilities.<br />
Could you mention about<br />
your product range,<br />
production capacity and your<br />
facilities?<br />
Our company is the first company in<br />
Turkey having the food safety certificate<br />
among chestnut producers. We<br />
received our ISO22000: HACCP certificate<br />
in 2008. This is normal for our<br />
success, when the hygiene and the<br />
quality of our production. We have<br />
been fully complying with the requirements<br />
of this document since 2008<br />
and we have been well known among<br />
our peer businesses in terms of hygiene<br />
conditions of our production<br />
facility even and even landscape gardens<br />
we have at the factory. The fact<br />
that every product coming out of this<br />
facility is produced with right is the basic<br />
and absolute priority for us. So this<br />
is reflected in our rich product range;<br />
we currently have chestnut candy,<br />
chocolate chestnut candies, chestnuts,<br />
porridge and boiled chestnut products<br />
for homes. We have a wide range<br />
of packaging suitable for every purse,<br />
serving various purposes. Our consumers<br />
and the public can easily check<br />
our products and prices from our virtual<br />
store can order at costs including<br />
the shipping fee. Finally, let’s talk about<br />
our capacity; capacity issue is not a<br />
situation that can be fully explained<br />
because the machines from different<br />
fields are able to produce only limited<br />
amount of chestnut products.<br />
What are your main<br />
strategies in production and<br />
management? What kind of a<br />
policy have you applied during<br />
your production period?<br />
There are two main topics in terms<br />
of production; the first is to work<br />
whole year around with restricted<br />
raw material. The chestnuts that we<br />
buy in November-December season<br />
are peeled and put in the freeze, that<br />
are processed all year round. First of<br />
all, we should be aware of this because<br />
we can replace every chestnut<br />
we waste only the following year. The<br />
second main subject is very simple;<br />
Price is forgettable but quality always<br />
remembered! I think we can base our<br />
growth in Turkey on these two major<br />
topics. Although production of chestnut<br />
candies is a labor-intensive activity<br />
we have brought all the technology<br />
