Could you give us information<br />

about candied chestnut<br />

production processes? Which<br />

processes do they go through?<br />

The priority of this process is to start<br />

with the right raw material to suit this<br />

job. The physical properties of raw<br />

chestnut as well as its natural chemical<br />

content; that is, the altitude of the tree,<br />

shell thickness and ease of peeling, are<br />

important. We sort them according to<br />

their size and keep them in our refrigerated<br />

facilities. The first chestnut is<br />

robbed and frozen in our own structure<br />

and frozen and then the cycle of<br />

process is spread to the days up to<br />

the end of the confectionery process.<br />
