Savory Celery Stew in September -- It's Brain Healthy! By: Jan Fair / A No-Brainer Minute W ith apologies to Ogden Nash (below-left), "A celery refrain. It's good for your brain." This recipe has the option of adding jackfruit. I only recently learned about this tropical fruit. It's used as a replacement for meat and has a mild taste so it takes on the flavor of whatever it touches. It has lots of fiber, vitamins, minerals and antioxidants. *Good-4-U Savory Celery Stew w/Jackfruit Option Celery raw Develops the jaw. But celery stewed Is more quietly chewed. by Ogden Nash Combine: • 1 head celery chopped • 1 onion chopped • 1-2 carrots sliced • 1 quart vegetable broth (Optional: 2 -3 minced garlic cloves) Add spices to taste, such as minced garlic, parsley, mint, turmeric, salt & pepper. Cook on mediumlow until tender. (about 1 hour) Optional: Drain 20 oz. can of Green Jackfruit. Cut into chunks & add the last 15 minutes. Mental Minutes “Celery” 1. In one minute, name things to do and/or make with celery. 2. Create an alphabetical list.
