THE YEAR AHEAD<br />
Like many Australians, I enjoyed a bit of time off over summer. I headed to some of Queensland’s best beaches and<br />
enjoyed meals with friends at member restaurants, pubs and hotels throughout the state.<br />
Unlike many Australians, I tore myself away from Netflix to do a lot of research on economics and forecasts for the<br />
year ahead. Despite the typical amount of uncertainty in the future and the usual doomsayers that are trying to sell<br />
newspapers and ‘clicks’ online, I am remarkably upbeat for 2023.<br />
Australia is in an extraordinarily fortunate position. This has little to do with the politicians inhabiting our news feeds<br />
and a lot to do with the ingenuity of Australian business owners to change their offerings quickly. Yes, there will be<br />
some Australian families that will be experiencing a squeeze on their household budgets for the first time. This is<br />
unsurprising as we have had economic growth for over two decades in Australia.<br />
Yes there is war in Europe, but Australians don’t rely on Russian gas for heat or air-conditioning. If anything,<br />
economic downturn in Australia will be of our own making, not the market conditions, but only if we discontinue to<br />
innovate nor seek to improve our businesses.<br />
International tourists and working holiday-makers are returning in droves, alleviating the labour shortages. China is<br />
slowly opening up again to Australian exports and increasing the earning of Australian families. There’s also been<br />
good rain across the agricultural sector injecting life into these communities.<br />
In short, there are a lot of positives to be taken into 2023 and we can’t let the doomsday prophets talk down our<br />
future. <strong>QHA</strong> will be out with more training, events and opportunities for our members than ever before. Keep an eye<br />
out for energy deals for members, Pubs, Pots and Profits and of course improvements to our patron safety that will<br />
roll out this year.<br />
Also, I could not finish without mentioning the largest change for us here at the <strong>QHA</strong>. As has been reported already,<br />
Tom McGuire AM has decided to retire from the office as President of <strong>QHA</strong>. Tom has been an integral part of<br />
why <strong>QHA</strong> has been so successful over the decades that he has been involved. Since 2006, Tom has guided our<br />
association through many testing times and always sought to improve our members, particularly those in our regional<br />
areas.<br />
On a personal note (and I feel I can speak for my predecessors), working with Tom as President has been one of the<br />
great privileges of being the Chief Executive of the <strong>QHA</strong>. Thank you Tom.<br />

Lyre’s Spirit Co, the world’s most awarded non-alcoholic<br />
spirits company, has created a unique experience for<br />
customers by incorporating augmented reality (AR) into the<br />
labels of their large collection of spirits.<br />
When scanned, one of the brand’s iconic and charismatic<br />
‘Social Animals’ featured on each type of non-alcoholic spirit<br />
will come to life and take customers through a virtual gallery of<br />
the world’s most famous cocktail recipes.<br />
The experience is aimed at educating and inspiring customers<br />
on the wide variety of opportunities when it comes to nonalcoholic<br />
drinking. Some of the AR experiences, depending<br />
on which bottle you scan, include a lesson on how to make a<br />
non-alcoholic espresso martini by a jaguar pilot, and a negroni<br />
by a sharply-dressed pigeon.<br />
The innovation comes from Lyre’s recent partnership with<br />
Amazon, and their new ‘Anywhere, Anytime’ technologybased<br />
campaign. In addition to the ‘Impossible Bar’, the<br />
campaign also allows customers to ask all Alexa voice<br />
devices how to ‘make it a Lyre’s’. This will prompt a friendly<br />
step-by-step guide on how to make your favourite cocktail

with little or no alcohol - complete with background<br />
music to set the mood.<br />
CEO at Lyre’s, Mark Livings, said despite being<br />
non-alcoholic, their portfolio of premium, award-winning<br />
spirits allows customers to create 90% of the world’s<br />
best-loved cocktails, allowing drinkers to switch<br />
frictionlessly in and out of alcohol whenever they<br />
choose.<br />
“Our latest Amazon and AR technologies have been<br />
developed as part of our commitment to changing<br />
the way the world drinks, empowering consumers to<br />
explore those possibilities and to educate them about<br />
the range of choices available when you make it a<br />
Lyre’s,” Mark said.<br />
Inspired by the mimicry of the brands mascot, the<br />
Australian lyrebird, Lyre’s was founded in 2019 to<br />
perfectly replicate the world’s most popular spirits in<br />
a non-alcoholic format. The company, founded out<br />
of Sydney by Carl Hartmann and Mark Livings, is<br />
the fastest growing drinks brand to ever come from<br />
Australia.<br />
Lyre’s spirits maintain the distinct tastes of rum, gin,<br />
whiskey, amaretto and many more without being<br />
alcoholic. Each liquor stars its own classily dressed<br />

Chief Marketing Officer at Lyre’s, Paul Gloster, says<br />
the company is seeing reports globally that Australia is<br />
starting to lead the world in the adoption of<br />
non-alcoholic drink alternatives.<br />

market, both trade and consumers, has embraced<br />
Lyre’s and the whole concept of non-alcoholic spirits.<br />
We really feel like it’s broken through from being a<br />
trend on the horizon to being something people are<br />
actually really embracing,” he said.<br />
Across the global liquor industry, low or non-alcoholic<br />
drinks are becoming increasingly popular due to<br />
consumers wanting to keep the culture of social<br />
drinking without the burdens of drinking high sugar,<br />
calorie and alcoholic content. While non-alcoholic<br />
drinks are currently 3% of the global market, the trend<br />
is predicted to grow to 31% in 2024. Companies like<br />
Lyre’s are only going to become more prosperous, and<br />
are important in allowing sober, pregnant, or<br />
health-conscious customers to choose how they drink<br />
freely and without any compromises.<br />
In a message to retailers, Paul urges that liquor stores,<br />
restaurants, and hotels should get behind the growing<br />
trend and support the increasing number of customers<br />
that are switching to low or non-alcoholic options.<br />
“There’s always consumers that are looking for a high<br />

Inspired by the foam of the sea and the rich surfing<br />
culture of the Northern Beaches in New South Wales,<br />
SurfCraft Brewing Co have released their first beers,<br />
the Pintail Lager and the Vee Bottom Session Ale from<br />
Dad & Daves Brewery in Brookvale.<br />
Going hand-in-hand with the brewery’s motto,<br />
‘shaping brews and crafting boards’, the beers pay<br />
homage to the founders of the Australian surfing<br />
industry - the Brookvale Six.<br />
In the 1950’s, Barry Bennett, Gordan Woods, Bill<br />
Wallace, Scott Dillon, Greg McDonagh and Kenny<br />
Keogh, also known as the Brookvale Six, supplied<br />
the entirety of Australia with balsa wood and foam<br />
surfboards from their home in Brookvale, where they<br />
took turns in turning on a keg of beer every Friday.<br />
Founder of SurfCraft Brewing Co, Nathan Gazzard,<br />
said craft beer, surfing and the history of the Brookvale<br />
Six inspired him to launch the brand on August 21,<br />
2022, along with cans of his Pintail Lager and Vee<br />
Bottom Session Ale.<br />
“These men pioneered the surfboard manufacturing<br />
industry in Australia and helped transform how surfing<br />
was shaped and I am thrilled to share their story so<br />
we can revere, have a beer, admire, respect and never<br />
forget them or our craft,” he said.<br />
The brews are a result of a collaboration with one of<br />
the Brookvale Six and one of the largest surfboard<br />
manufacturers in Australia, Bennet Surfboards. The<br />
design of the Pintail Lager is inspired by old-school<br />
surf branding and culture, and is an easy, crisp and<br />
sessionable beer with a slightly unique twist.<br />
Kirrily Waldhorn, known as Beer Diva, has also<br />
collaborated with the brewery on the marketing<br />
and design of the Pintail Lager, and said it’s been a<br />
fascinating and exciting process working with the<br />
SurfCraft team.<br />
“I have enjoyed helping them bring together their<br />
combined passion for surfing and brewing while<br />
celebrating and embracing the amazing local talent<br />
we have in both brewing and surfing in Australia,” she<br />
said.<br />
SurfCraft is planning on launching a core range of six<br />
beers, which will continue to be shaped and crafted<br />
from the factories where Australian surfing was born.<br />

GRANDER VIEWS<br />
One of Queensland’s oldest licenced venues, The Grand View<br />
Hotel, has a multiple million-dollar renovation on the horizon after<br />
being sold to the flourishing pub chain Kickon Group.<br />
Named after its gorgeous view overlooking Moreton Bay, The Grand<br />
View Hotel in Cleveland is a cherished icon of Redland Bay that has<br />
earnt many titles since it was built in 1851, such as ‘The Brighton<br />
Hotel’, ‘Cleveland House’ and ‘The Grand Dame’ to name a few.<br />
Now the heritage registered venue may be referred to as a different<br />
name after being sold by JLL Hotels and Hospitality Group in<br />
November last year. The company’s Senior Vice President, Tom<br />
Gleeson, said the underlying fundamentals were clear with the<br />
Grand View Hotel being a large format hotel within the tightly held<br />
southeast area.<br />
“The intangibles this Queensland hospitality icon possess is rare<br />
and I am excited to see what Kickon Group do to complement its<br />
vast and rich history, it’s been a privilege to be involved,” he said.<br />
Based in Victoria, Kickon Group’s growing portfolio of venues<br />
is nothing short of impressive. The leading hospitality group<br />
is responsible for The Continental in Victoria’s Sorrento, The<br />
Collective in Queensland’s Palm Beach, and the iconic Plough Inn in<br />
Brisbane’s Southbank.<br />
With The Grand View Hotel now added to their luxurious list of<br />
venues, Kickon Group is planning a multiple million-dollar renovation<br />
for the hotel in the near future in hopes to reinvigorate the venue<br />

multiple function rooms, a public bar, 35 gaming machines and a<br />

Behind some of the most delicious muffins, smoothies,<br />
pies, crumbles and mueslis is a bag of refreshing<br />
frozen fruit, and in last year’s Healthy Food Guide<br />
Awards, the best of them all has been revealed to be<br />
Aussie Frozen Fruit’s Mixed Berries.<br />

Dedicated to financing Queensland’s increasingly<br />
bustling hotel industry, Waratah Debt Capital is<br />
a specialist non-bank lender that is dedicated to<br />
exclusively lending to the hotel industry.<br />
Managing director of Waratah Dept Capital, Mark<br />
Anyon, said the company recently financed North<br />
Queensland publicans Nick Gregorski and Grant<br />
Morgan into purchasing the Royal Hotel in Townsville<br />
from Hotel Property Investments (HPI) and Australian<br />
Venue Co (AVC).<br />
“We were very happy to support Nick and Grant due<br />
to the experience they bring to the table.<br />
“Nick and Grant grew up in Bowen, so it’s great to see<br />
them both back in a North Queensland hotel and we<br />

While the transaction had several complexities,<br />
involved various counterparties and had a number of<br />
moving parts, Waratah took the time to understand<br />
the transaction thoroughly and could appreciate the<br />
opportunity it presented for Nick and Grant.<br />
“In short, Mark at Waratah Debt Capital just gets it. He<br />
could see the deal, the potential of the business and<br />
the growth areas,” Grant said.<br />
“It’s great when you have someone like Mark on the<br />
other side of the table that understands the hospitality<br />
industry and made it a reality for myself and Nick. I<br />
could not be happier with the process with Waratah.”<br />
Located on 3,312m 2 of land in the inner suburb of<br />
West End near the foot of Castle Hill, the hotel was<br />
bursting with opportunity for the pair.<br />
The sale included the operating business and the<br />
freehold two-storey brick building comprising of<br />
a public bar, TAB, gaming room with 40 gaming<br />
machines, function and dining room, kitchen, dual lane<br />
drive-through bottle shop, beer garden and 15 guest<br />
rooms.<br />
“Traditional finance wasn’t the greatest option for us,<br />
so working with Mark made it very easy and was just<br />
what we needed.<br />
“I definitely would use Mark again at the drop of a hat!”<br />
Nick said.<br />
Nick and Grant have immediately commenced<br />
renovations to capitalise the venue’s glowing potential,<br />
including improvements to the bottle shop front bar,<br />
beer garden and gaming room.

It’s a creative piece of technology that<br />
is seeing the cherub of Little Creatures<br />
flapping its wings and the waves<br />
of Single Fin rolling below a gliding<br />
seagull. It’s called the Looped Animated<br />
Branding Decal, aka LAB, and its giving<br />
breweries a dynamic and unique way to<br />
showcase their brand on beer taps all<br />
over the country.<br />
These innovative devices, best<br />
described as HD digital tap displays,<br />
are taking off in the Australian hospitality<br />
industry and are rapidly replacing<br />
standard plastic decals in bars. The<br />
product’s success comes from its ability<br />
to fill a niche in the advertising market<br />
for breweries by providing a way for<br />
companies to market their craft beer in<br />
venues where advertisement is difficult<br />
and outside of their direct control.<br />
The husband and wife behind the idea,<br />
Ryan and Shinae Vergone, started to<br />
conceptualise the displays after they<br />
founded Vertek Innovations in 2017.<br />
The couple’s innovation was the result<br />
of a simple conversation they shared<br />
one night on a date when they noticed<br />
that many bars in the industry are quite<br />
static and unexciting in nature.<br />

The couple initially thought the idea of digital decals<br />
was probably not an original one, but after they did<br />
some research and even paid people to investigate the<br />
product further, they realised they were the pioneers of<br />
the invention, and so they patented and developed it.<br />
In 2020, Vertek started selling their LAB decals to<br />
venues across Australia, with Ryan using his tenyear<br />
background in graphic art to work closely with<br />
breweries to create unique looping animations.<br />
The animations allow breweries to have a different<br />
point of educating a customer rather than just a static<br />
picture of their logo. The product’s success and<br />
potential for brand exposure comes from the attraction<br />
of customers to a digital, colourful and moving<br />
medium. Each digital decal comes pre-loaded with a<br />
breweries personalised animation which can creatively<br />
display tasting notes and other quirky and informative<br />
branding.<br />
Because the craft beer world is becoming so popular,<br />
now more than ever customers are wanting to know<br />
what flavours are in unfamiliar brands of beer. The<br />
product’s ability to display bits of infomation allows<br />
customers to avoid the risk of trying something they<br />
don’t like and perhaps as a result not trying anything<br />
else in the brand’s range.<br />
The innovation of the LABs goes beyond just the eyecatching<br />
animations, with Vertek having the hindsight<br />
to incorporate a range of features to make every<br />
bartenders life easier.<br />
Because the bar is not a dry place, the devices were<br />
made to be waterproof and can rotate completely<br />
around to display a classic epoxy decal in the event<br />
that power is lost to the display. The company have<br />
also ensured that no cables can be seen from the<br />
back or the front of the LABs and offer guidance to<br />
customers who need help installing the decals into<br />
their tap banks.<br />
In 2021 the company was rewarded for their creative<br />
contribution to the industry and earned gold in the<br />
Australian Good Design Award. The jury of the awards<br />
praised the LAB decals for their original, smart,<br />
practical and aesthetically pleasing design that has<br />
improved the brewing and hospitality industry.<br />
While the LABs were originally expected to be bought<br />
by brewers for venues, the decals have also been<br />
purchased by venues themselves.<br />
This came as a pleasant surprise for Ryan and Shinae,<br />
and is possibly due to the digital displays eliminating<br />
the need to waste time and money on switching over<br />
plastic decals.<br />
The couple’s game-changing product is certainly a<br />
point of difference for many venues and a creative and<br />
fun addition to the Australian hospitality industry.<br />

The iconic Jubilee Hotel on St Pauls Terrace in<br />
the bustling Fortitude Valley has undergone what<br />
can only be described as one of the greatest pub<br />
transformations Brisbane has seen.<br />
The iconic heritage pub is once again the go-to<br />
watering hole for locals and now boasts its very own<br />
microbrewery and the hottest beer garden in town, with<br />
a live music stage and stadium-sized screen.<br />
Public response to the major refurbishment has been<br />
overwhelmingly positive, with punters flocking to the<br />
popular pub after its reopening on 11 November last<br />
year - just in time for the festive season.<br />
The 134-year-old ‘Jube’, as it’s known by among<br />
locals, underwent the extensive renovation after<br />
venue owner TB Hotels decided to restore the hotel’s<br />
distinctive heritage façade while taking its internal<br />
design into the future.<br />
“The courtyard extension along with the Two Dogs<br />
Brewery has been designed to complement these<br />
features. Brisbane has not seen a venue like the<br />
Jubilee!” Jubilee Hotel Sales & Events Manager,<br />
Karishma Sundarjit said.<br />

Jubilee. We’ve kept the sports bar and gaming for<br />
those afternoon visits, revamped the Journo Private<br />
Dining room and added six event spaces. Whether<br />

party, a celebration or an afternoon with friends and<br />
family – The Jubilee offers it all.”<br />
Well-known Brisbane architects, Blight Rayner,<br />
designed the new Jubilee Hotel, achieving a superb<br />
balance of heritage and contemporary design while<br />
offering pubgoers a luxurious, modern experience.<br />
“The revitalised Jubilee Hotel offers two very<br />
contrasting experiences – firstly of the meticulously<br />
restored historic corner pub and its intimate spaces,<br />
and secondly of the open volume of the new beer<br />
garden behind,” Blight Rayner Architecture Director,<br />
Michael Rayner said.<br />
“Externally the old and new are of identical height, but<br />
internally the soaring volume of the beer garden, with<br />
its sawtooth skylights and window wall to the street,<br />
creates a different world of light and spaciousness.”<br />
The Jubilee’s gorgeous heritage brickwork was<br />
painstakingly restored by hospitality specialists Rohrig<br />
Constructions, returning the brick to its natural state as<br />
it would have looked in the 1880s.<br />
However, the star of the show for the reborn Jubilee<br />
Hotel is its beer garden and courtyard, featuring<br />
translucent roofing that allows natural light to flood the<br />
area and a unique diagrid diamond-shaped layout with<br />
elegant façade glazing separating the structures.<br />
“The diagrid window wall is designed to defer to the<br />
scale and rhythm of the historic pub while also to the<br />
skeletal structure of the adjoining office tower which is<br />
integral to the precinct,” Mr Rayner said.<br />

“Inside, the beer garden actually consists of multiple<br />
spaces – a beer hall and microbrewery at ground level,<br />
a series of booths and terraces at raised levels and a<br />
function terrace overlooking from above.”<br />
The footprint of the venue was also extended, which<br />
allowed for a larger beer garden, second kitchen,<br />
bistro dining area, additional function spaces, three<br />
bars, offices and a microbrewery. These elements had<br />
to be designed to blend seamlessly with the existing<br />
heritage components.<br />
“The main challenge was to resolve how to design the<br />
new beer garden in a way that is both respectful to<br />
the historic hotel building and dynamic as a place for<br />
people to love coming to,” Mr Rayner explained.<br />
“We realised that a mere contemporary interpretation<br />
of the historic architecture would not do this. The<br />
new architecture pays homage to the old in terms<br />
of scale and rhythm, but what we like is that you get<br />
dramatically different experiences from the old to the<br />
new, the new acting like a covered plaza in the city.”<br />
For Rohrig, the construction side of the refurbishment<br />
required extensive heritage restoration works to the<br />
original pub as well as the construction of the new<br />
state-of-the-art beer garden, restaurant, bar and<br />
kitchen. This proved to be a complex build and one<br />
that required a construction partner with proven<br />
hospitality experience.<br />
“Limited site access and a complex structure and<br />
fit out set the scene for a challenging delivery, but,<br />
together as a project team I think we have delivered<br />
an incredible outcome and something very unique for<br />
the owners,” Rohrig Construction Manager, Matthew<br />
Tucker said.<br />
It isn’t just the Two Dogs Brewing microbrewery that<br />
has kept patrons coming back since the Jubilee<br />
reopened its doors. The hotel offers an exciting new<br />
menu and no less than 50 beer taps - not to mention<br />
that stadium-sized TV screen.<br />
Pub classics like parmies, fish and chips, steaks and<br />
pizzas are all on the menu, as well as gourmet shared<br />
snacks like grilled saganaki, charcuterie and peking<br />
duck spring rolls.<br />

“The Jubilee has stepped up to another level, but<br />
we still offer the pub classics, and we do them well,”<br />
Jubilee Hotel General Manager, Chris McNeill said.<br />
“Our pizza oven was imported from Italy and is a big<br />
part of the offering. In the last month of opening, our<br />
pizzas and Kobe’s Crumbed Steak have been our<br />
most popular choices in both dining and events.<br />
“With over 50 beer taps in the venue, we have<br />
aimed to offer a balance of craft beer and household<br />
favourites as we try to have something for everyone<br />
and all occasions, not to mention our brewery-fresh<br />
beer straight to the taps.<br />
“Aside from the popular cocktails and summer<br />
spritzes, we also have an extensive wine list offering<br />
some classic vintages from Penfolds Grange and<br />
Henschke ‘Hill of Grace’,” he said.<br />
The revamped Jubilee Hotel has to be seen to be<br />

ACHIEVEMENTS FOR HOSTPLUS<br />
2022 was another incredible year for Hostplus.<br />
Our merger with Statewide Super saw an additional<br />
140,000 members, 24,000 employers and $11 billion<br />
transferred into Hostplus. The merger has confirmed<br />
our position as a truly national, multi-sector industry<br />
fund.<br />
We also made a formal commitment to transition<br />
our investment portfolio to net zero emissions by<br />
2050. This move puts Hostplus in line with Australia’s<br />
commitment to the Paris Agreement. We’re aiming to<br />
help protect members’ retirement savings as the world<br />
adapts to a lower-carbon future.<br />
Across the year, we also introduced three new<br />

PREPARING FOR COMPLIANCE INSPECTIONS<br />

Given that running a pub is an activity that is highly<br />
regulated, there are many documents, policies and<br />
other compulsory obligations that commercial hotel<br />
licensees need to have in place.<br />
In this article, I will set out some of those (not an<br />
exhaustive list), to be aware of. It is also recommended<br />
to keep these documents and policies in one place,<br />
which can be done and retained digitally or in paper<br />
format.<br />
Personally, and it may be a reflection of my generation,<br />
I think that retaining these documents both physically<br />
and digitally is a good way to go for safekeeping and<br />
to ensure that they are immediately accessible upon<br />
inspection.<br />
There are many instances where you might be asked<br />
to produce these documents, the most likely of those<br />
being by a compliance officer from the OLGR. Others<br />
include the police, the Council, the Health Department<br />
or any other municipal or Government authority who<br />
may also inspect validly and request information with<br />
full authority.<br />
My other message is that it is prudent that there be<br />
at least one and probably two individuals within your<br />
business who know where these documents are. They<br />
should also understand the purpose and importance<br />
of the documents and be able to readily access them if<br />
so requested by authorised personnel.<br />
It is advised to designate an employee within your<br />
organisation who can be the single point of contact<br />
for a compliance officer at the premises (either on an<br />
arranged basis or otherwise), to answer questions and<br />
provide documents quickly.<br />
A few of the more important documents which should<br />
be centrally and quickly locatable include:<br />
1. Liquor Licence<br />
2. Gaming Machine Licence<br />
3. AML/CTF Compliance Policy<br />
4. Training Schedules<br />
5. Incident Registers<br />
6. Copies of RSA and RSG Certifications<br />
7. Copies of approved plans for the premises<br />
themselves<br />
8. Copies of all plans for the premises and a site plan<br />
- if possible<br />
9. Copy of the lease - if the premises is leased<br />
10. Copy of the RAMP<br />
11. Food Hygiene Licence<br />
12. Copy of QFES Policy and Evacuation Plans<br />
I would also suggest being cooperative with the<br />
Regulator and appearing professional; both in terms of<br />
your personnel who may deal with the Regulator, and<br />
in the sense that documents are readily available and<br />
complete, as this will enhance your reputation with the<br />
Regulator and their confidence that your venue is fully<br />
compliant.<br />

Head down to Caxton Street in one of Brisbane’s<br />
oldest party and entertainment areas in Petrie Terrace<br />
and you will find the spirit of old timey America reborn<br />
in Lefty’s Music Hall. Characterised by American food,<br />
vibrant scarlet neon lights and beautiful old-timey<br />
décor, Lefty’s transports you to an era defined by the<br />
rhythm of a fiddle and the nostalgia of chandeliers,<br />
deer antlers and old-school country bars.<br />
It’s the venue’s rootsy American vibe mixed with<br />
modern day flare that makes it so important to the<br />
Queensland live music scene, which is clearly thriving<br />
in all sorts of creative and quirky ways after being<br />
dormant throughout the difficult times of the pandemic.<br />
Lefty’s Music Hall Venue Manager, Daniel Coleman,<br />
said the renowned live music venue is celebrated and<br />
defined by its idiosyncratic and rustic aesthetic.

“Inside are decadent scarlet crimson walls, vintage<br />
chandeliers, giant gilt mirrors, black leather booths<br />
lit with candlelight and an opulent curved bar<br />
overlooked by giant moose heads and a wallmounted<br />
bear and peacock. We also have relics<br />
dotted around the venue such as a vintage Cuban<br />
cigar cabinet and classic saloon doors.”<br />
With gorgeously adorned spaces on the ground<br />
floor, lower mezzanine and upper mezzanine, the<br />
venue was designed for lively nights out where<br />
visitors can enjoy the music and atmosphere.<br />
Daniel said from full venue hire to small and<br />
intimate events, everyone at Lefty’s knows how to<br />
throw a good party.<br />
“We have four function rooms guests can hire<br />
out, including the Mermaid and Cactus bar. The<br />
lower mezzanine is for the band lovers - you can<br />
enjoy how close you are to all the action while<br />
overlooking the entire venue. If you love being in<br />
the centre of it and if you love dancing, then the<br />
booths are a match made in heaven.”<br />
The venue’s theatrically themed bars are truly<br />
experiences created for the imagination. The<br />
tucked away Mermaid bar takes you into the fancy<br />
cabin of a historic vessel and celebrates all things<br />
nautical and oceanic with fishing nets draped<br />
across the ceiling, a massive and intricate model<br />
of a ship overlooking the bar and the slightly<br />
unnerving addition of a suspended great white<br />
shark. The theme even carries across to the bar’s<br />
drink menu, which primarily offers rum – the most<br />
cherished drink of pirates and sailors.<br />
The Cactus bar is on the ground floor of Lefty’s<br />
and features old-school saloon doors, a mounted<br />
bull head and a cabinet full of all things tequila and<br />
wild west. It truly makes you feel like a modernday<br />
cowboy who just walked into a saloon.<br />
Daniel said naturally their American inspired menus<br />
had to include hotdogs, chicken wings, fried<br />
chicken burgers, cheeseburgers and the charming<br />
and unique edition of cheeseburger spring rolls.<br />
“True to its honky tonk wild west theme, our venue<br />
also serves plenty of boutique beers and our<br />
signature Whiskey Apple cocktail.”<br />

But what is the point of a vibrant, quirky and theatrical<br />
venue without live music and entertainment to fill its<br />
halls? From live bands to comedy and even slam<br />
poetry, there is always something to sing along, laugh<br />
at and vibe to at Lefty’s. The atmosphere of the stage<br />
is something to be marvelled at, with vibrant purple<br />
and red lighting that makes musicians and instruments<br />
glow amid the smoke onstage.<br />
Daniel said over the next few months, the venue will be<br />
hosting events starring Jade Holland and Tori Drake,<br />
Henry Wagons and The Only Children, The Audreys<br />
Queensland Tour and Kav Temperly of Eskimo Joe.<br />
“Although the old west may be dead, buried under<br />
the monolith of industrialisation that replaced it, in<br />
Lefty’s it lives on. When the sweet twangs of country,<br />
rockabilly, blues and roots or jazz music aren’t being<br />
piped through the hall, they come from our live bands,”<br />
he said.<br />
Founded by Jamie Web in 2014, Lefty’s finds its<br />
home in one of the most historic buildings in Brisbane.

The sacred, centuries-old Baroona Labor Hall has<br />
been home to many night-life businesses in its time.<br />
Throughout the 1970s and ‘80s, the building was<br />
utilised as a live music hotspot and then a series of<br />
nightclubs in the ‘90s.<br />
The venue has changed ownership many times but<br />
was taken over by Hallmark Group Australia in 2019.<br />
To the delight of many in Brisbane, Lefty’s maintained<br />
its classic eccentric charm - and its beloved Whiskey<br />
Apple cocktail - when it was opened again to the<br />
public in <strong>Feb</strong>ruary 2020 as the venue we currently<br />
know and love.<br />
It’s no doubt the historical and unapologetically<br />
quirky Lefty’s Music Hall will continue to introduce<br />
Queenslanders to head-bopping live music and the<br />
beautiful, vibrant atmosphere of old-timey America.<br />
“It’s been great to have everyone back on Caxton<br />
Street and to see the iconic destination come alive<br />
once again post-pandemic. Whether it’s before or<br />
after Suncorp Stadium Games, the classic after work<br />

With the Brisbane 2032 Olympic and Paralympic<br />
Games fast approaching, the Queensland Government<br />
has declared 2023 as The Year of Accessible Tourism.<br />
Making your services more accessible to visitors can<br />
open valuable markets for your business. With the<br />
Paralympics in mind, there’s been no better time to get<br />
the ball rolling than now.<br />
The 2021 National Visitor Survey conducted by<br />
Tourism Research Australia (TRA) revealed that only<br />
5% of operators are accessible tourism ready. This is<br />
incredible to think when around 18% of Australians<br />
are living with a disability, and an additional 22% have<br />
a long-term health condition requiring assistance.<br />
Further to this, in 2021, travel groups including<br />
people with disability or long-term health conditions<br />
in Australia accounted for 17% ($13.5 billion) of total<br />
domestic day and overnight trip spend.<br />
The accessible travel community includes people with<br />
a disability, a long-term health condition or mobility<br />
needs. It also includes their travel party. Other visitors<br />
also benefit from improved access, such as:<br />
• the elderly<br />
• those with temporary needs, mobility issues or<br />
medical conditions<br />
• parents with prams<br />
• multi-generational family groups<br />
The need for accessible tourism in Queensland is an<br />
issue that can clearly no longer be ignored, but most<br />
businesses don’t know where to begin addressing<br />
this necessity. Inclusive travel advocate Martin Heng<br />
has worked with the Australian Tourism Export<br />
Council (ATEC) and Tourism Australia to develop and<br />
deliver the new Accessible and Inclusive Host training<br />
program. The three modules in the program focus on<br />
being culture, product and service ready to upskill and<br />
prepare your business to successfully welcome guests<br />
from all life stages, backgrounds and abilities. Martin’s<br />
key takeaway for program participants is ‘the most<br />
important step to becoming an accessible tourism<br />
business is having an attitudinal change and inclusive<br />
mindset to overcome barriers’.<br />
In addition to this, steps you can implement into your<br />
business to become accessible tourism ready include:<br />
• Encouraging inclusive language (person-firstlanguage<br />
‘person with disability’)<br />
• Encouraging staff to get educated on the core<br />
elements of accessible tourism (be flexible, offer<br />
help and speak to the person with disability directly)<br />
• Creating mobility maps (highlight accessible<br />
carparks, lifts and bathrooms)<br />
• Ensuring you have an accessible website (including<br />
alt-text, venue details for different accessibility<br />
needs, mobility maps and FAQ’s)<br />
• Incorporating the universal design principals into<br />
your business (equitable, flexible, simple and<br />
intuitive, perceptible information, tolerance for error,<br />
low physical effort and space for approach and use)<br />
• Installing additional railings, braille, tactile signs and<br />
tactile tile indicators<br />
• Utilising BindiMaps or Blindsquare in your venue<br />

Embracing inclusive travel is a must, and the travel<br />
industry can no longer ignore it. That’s why in 2023,<br />
the AHA and <strong>QHA</strong> are including The Disability Inclusion<br />
and Access Award in the Awards for Excellence<br />
Program. This award recognises those businesses that<br />

When Paul Gleeson took on the Railway Hotel in<br />
Mount Morgan, little did he know he would be sitting<br />
on his own gold mine.<br />
Located just 30 minutes south-west of Rockhampton,<br />
the town of Mount Morgan was once home to one of<br />
the richest gold mines in Australia - and for a period<br />
of time, the world. Rich in copper, gold and silver,<br />
the wealth of Mount Morgan Mine funded Persian<br />
oil exploration, establishing the Anglo-Persian Oil<br />
Company which became BP in 1954. Publican at<br />
Railway Hotel Mount Morgan, Paul Gleeson, said<br />
Mount Morgan is a proud mining town.<br />
“It's got the richest goldmine in the southern<br />
hemisphere which ran for about 150 years and dates<br />
back to the early 1800s. The mine closed about 35<br />
years ago, but it’s about to reopen which is really big<br />
news for anyone who owns a pub up here.<br />
“The technology back in the 1800s was really poor, but<br />
the technology these days to extract copper and gold<br />
is a lot more advanced. The Mount Morgan Mine left<br />
behind tailings, which is like the leftover dirt, and it's<br />
been determined that there is gold left in those tailings.<br />
“With new processes and technology, they can pull or<br />
extract a lot more gold out of those tailings, which is<br />
why they’ll be reopening for 30 years.”

When Paul Gleeson took on the Railway Hotel in Mount Morgan,<br />
little did he know he would be sitting on his own gold mine.<br />
Paul said he has only been a publican at the Railway<br />
Hotel for 14 months, but in that time he has learned of<br />
the town’s proud history.<br />
“The town is very proud of their mining history and the<br />
economic value to the country that it's given, including<br />
its founding of the Walter and Eliza Hall Institute of<br />
Medical Research - a cancer research centre.<br />
“So there's a lot of history in Mount Morgan, and a lot<br />
of historic buildings dating back to the 1800s which<br />
have been restored.”<br />
Paul said the current Railway Hotel is about 60 years<br />
old, with the original hotel, like many 19th century<br />
buildings, having been burnt down.<br />
“About 40 years ago when the mine was operating,<br />
there were about 16,000 people in town and there<br />
were 27 hotels. These days, there are about 3,000<br />
people in town and three hotels.”<br />
As it is competing with two other hotels in town, The<br />
Railway Hotel has had to make a point of difference. In<br />
just 14 months into the job, Paul said he has achieved<br />
a major turnaround.<br />
“We’ve managed to quadruple the turnover and we've<br />
seen 400% growth. We're going really well for being,<br />
what I consider, the poor cousin in the sense that we<br />
don't have pokie machines. We do have Keno, in fact<br />
we're the largest Keno operator in town, and we also<br />
have TAB as well.”<br />
The Railway Hotel has a main bar, lounge area, pool<br />
area and a TAB section. To the rear of the hotel is a<br />
40sqm deck and a half-acre of land which overlooks<br />
the Mount Morgan Railway Museum.<br />
“Right behind the hotel is the spectacularly restored<br />
museum which you can see from our back deck. They<br />
have a couple of locomotives and carriages there and<br />
it's also the information centre for the town,” Paul said.<br />
Although rail services from Rockhampton to Mount<br />
Morgan ceased in 1987 and the line was removed,<br />
the town is still popular thanks to its rich mining and<br />
locomotive history.

“He's recently taken over the kitchen and we’re<br />
offering this style of meals on Friday night, Saturday<br />
and Sunday. That style is proving really popular with<br />
patrons and although it’s just the three days at the<br />
moment, we’re hoping that will be available sevendays-a-week<br />
in the coming months,” Paul said.<br />
The Railway Hotel Mount Morgan offers<br />
accommodation as its name suggests with three<br />
motel rooms which are fully supplied with ensuites,<br />
air conditioning and a queen-size and single-size bed<br />
in each room. There are also five hotel rooms which<br />
have shared lavatories with separate male and female<br />
bathrooms.<br />
“There are some really big construction projects<br />
commencing here, with the reopening of the mine as<br />
well as a $750 million wind farm, so accommodation<br />
is going to be a real problem. But for the locals, and<br />
particularly those in the hospitality industry, businesses<br />
are sitting on their own gold mine,” Paul said.<br />
“The Railway Hotel was a real struggling little pub, but<br />
we’re taking on our competition and we're doing that<br />
without a seven-day-a-week restaurant or pokies, so<br />
we are doing really well.<br />
“We're getting big crowds with our bigger events and<br />
we're trying to create a point of difference to the other<br />
two hotels in town by offering a more family-oriented<br />
venue for people in town,” Paul said.<br />
Since taking on the hotel, Paul has renovated the<br />
bottle shop and joined the Thirsty Camel branding<br />
which has seen a 600% growth in bottle shop<br />
takeaway.<br />
He has also tackled the issue of food service with the<br />
help of a ‘Low and Slow’ chef specialising in slowcooked<br />
meals such as pork spare ribs, beef short ribs,<br />
pulled pork, pork briskets, nachos and loaded fries<br />
topped with slow-cooked meats.

CAN I DISMISS AN EMPLOYEE FOR<br />
SERIOUS MISCONDUCT?<br />

Serious misconduct involves an employee engaging<br />
in extremely bad behaviour that is inconsistent with<br />
the continuation of their employment, and therefore<br />
justifies the termination of the employee’s employment<br />
with immediate effect. In the case of full-time or parttime<br />
employment, the employee would not be entitled<br />
to notice.<br />
Fair Work Regulations 2009<br />
Section 12 of the Fair Work Act 2009 (the Act) defines<br />
the words and phrases contained within the Act.<br />
Under this section, “serious misconduct” has the<br />
meaning prescribed by the Fair Work Regulations<br />
2009 (the Regulations). Regulation 1.07 provides that<br />
serious misconduct has its ordinary meaning and<br />
includes conduct that can be summarised as follows:<br />
• Wilful or deliberate behaviour by an employee that is<br />
inconsistent with the continuation of the contract of<br />
employment;<br />
• Conduct that causes serious and imminent risk to:<br />
» The health and safety of a person; or<br />
» The reputation, viability or profitability of the<br />
employer’s business.<br />
Regulation 1.07(3) makes it explicitly clear that the<br />
following conduct falls within the scope of serious<br />
misconduct:<br />
• The employee, in the course of the employee’s<br />
employment, engages in:<br />
» Theft;<br />
» Fraud;<br />
» Assault; or<br />
» Sexual Harassment<br />
• The employee is intoxicated at work; and<br />
• The employee refuses to carry out a lawful and<br />
reasonable instruction.<br />
If an employee engages in an act of misconduct<br />
deemed serious enough, even for a first offence,<br />
and the act is substantiated, the employee may be<br />
dismissed without notice.<br />
What is the standard of proof required?<br />
The evidentiary principle established in Briginshaw<br />
v Briginshaw (1938) 60 CLR 336 is relevant when<br />
determining whether allegations of serious misconduct<br />
can be substantiated. The Briginshaw principle<br />
requires that the findings of decision makers must<br />
be made upon logically probative evidence; the more<br />
serious the allegation, the more serious should be the<br />
consideration given by the decision maker.<br />
Therefore, in order to justify dismissal for serious<br />
misconduct, the allegations against the employee<br />
would require stronger evidence than a dismissal not<br />
based on serious misconduct. Contemporaneous<br />
evidence, such as file notes and CCTV footage,<br />
are useful in substantiating allegations of serious<br />
misconduct.<br />
Dismissal can’t be harsh, unjust or unreasonable<br />
Despite the fact that an employer has made a<br />
finding that an employee’s behaviour falls within<br />
the definition of serious misconduct, the employer<br />
still needs to ensure that the dismissal is not harsh,<br />
unjust or unreasonable. Should an employee make<br />
an application for an unfair dismissal remedy, the Fair<br />
Work Commission must consider the criteria set out<br />
in section 387 of the Act to determine whether the<br />
dismissal was harsh, unjust or unreasonable. The<br />
criteria is as follows.<br />
Valid Reason<br />
There needs to be a valid reason for dismissal related<br />
to the employee’s conduct or capacity. Although<br />
serious misconduct would very likely constitute a valid<br />
reason of dismissal, the test that remains is whether<br />
the dismissal was “sound, defensible or well founded”.<br />
The Fair Work Commission has consistently found<br />
that reasons that are “capricious, fanciful, spiteful or<br />
prejudiced” can never be a valid reason.<br />
Dismissal for serious misconduct must be based on<br />
a well-reasoned decision with regard to the evidence<br />
and not based on an emotional reaction to the<br />
circumstances.

Notification of reason<br />
The reason for termination should be notified to the<br />
employee before termination occurs. Commentary<br />
on this criteria suggest that practically speaking,<br />
employees should be notified before the decision<br />
is implemented to terminate employment, since an<br />
employer cannot inform an employee of a reason for<br />
termination prior to deciding to terminate.<br />
Opportunity to respond<br />
Even in cases of serious misconduct, an employee<br />
must be given an opportunity to respond to the<br />
employer’s reason for the proposed dismissal.<br />
Consideration of the employee’s response by the<br />
employer must be had prior to the decision to<br />
dismiss and certainly before the termination itself.<br />
Importantly, the employee does not need to take up<br />
the opportunity to respond, as long as the employer<br />
can demonstrate that the opportunity was afforded to<br />
the employee.<br />
Presence of support person<br />
If an employee requests to have a support person<br />
present to assist at any discussion relating to the<br />
dismissal, the employer must not unreasonably refuse<br />
this request.<br />
Any other relevant matters<br />
In cases of serious misconduct, it has been argued<br />
that the dismissal was not appropriate because<br />
the penalty was a disproportionate response to<br />
the employee’s conduct. As such, employers<br />
should consider whether other disciplinary action is<br />
appropriate, for example; dismissal with notice or a<br />
final warning.<br />
For an example of a procedurally fair process involving<br />
allegations of serious misconduct, an employer has<br />
CCTV footage of an employee stealing money from<br />
a register and drinking whilst on shift. These types<br />
of behaviours would fall into the definition of serious<br />
misconduct, and having CCTV footage as evidence<br />
means that this would be a well-reasoned decision,<br />
based on the evidence, to terminate employment. The<br />
employee is invited to a meeting at 9am and given the<br />
option to have a support person present, for these<br />
allegations to be put to them for their response. The<br />
employee provides a response to the allegations. The<br />
employer calls that meeting to an end, whilst they go<br />
away and consider the response provided, as well as<br />
the other evidence gathered (the CCTV footage). After<br />
considering all the available material, the employer is<br />
able to make a finding, on the balance of probabilities,<br />
that their allegations of serious misconduct is able to<br />
be substantiated. As such, they decide to terminate<br />
the employee’s employment. A meeting is reconvened<br />
with the employee later that same day and the<br />
employer advises the employee of the decision to<br />
terminate their employment, on the basis of serious<br />
misconduct.<br />
Lessons for Employers<br />
Caution should be exercised by employers when<br />
contemplating dismissal of an employee for serious<br />
misconduct. Evidence that substantiates the allegation<br />
of serious misconduct and documentation of the<br />
process undertaken by the employer is vital when<br />
defending a claim of unfair dismissal.<br />
In addition, employers must be mindful that failure<br />
to take any action against allegations of serious<br />
misconduct may constitute as the employer condoning<br />
such behaviour. In turn, this creates hurdles in the<br />
future should the employer seek to terminate the<br />
employee for engaging in similar behaviour.<br />

The recent pandemic saw unprecedented changes<br />
in the labour market with closures and lockdowns<br />
impacting jobs - especially in already disadvantaged<br />
communities. Industries such as hospitality were<br />
heavily impacted but are now on the road to recovery<br />
and in need of skilled workers.<br />
The National Skills Commission survey on future<br />
staffing expectations highlights some challenges faced<br />
by employers and job seekers, with data collected<br />
from <strong>Feb</strong>ruary 2020 to mid-August 2020 stating<br />
employers are having difficulty accessing skilled<br />
workers.<br />
In July 2021, the Back to Work program was<br />
established to provide both financial and non-financial<br />
support to Queensland employers and disadvantaged<br />
jobseekers. 2022 saw the revitalised Back to Work<br />
program, which now focuses on intensive support for<br />
jobseekers, employers and their employees.<br />
The industry offering of the Back to Work program is<br />
the Growing Workforce Participation Fund. It is a new<br />
approach for the Back to Work program, recognising<br />
the importance of industry engagement in creating<br />
long-term sustainable employment outcomes for<br />
people who experience greater disadvantage in the<br />
labour market.<br />
The aim of the fund is to develop partnerships with<br />
industry to build longevity and sustainability in the<br />
workforce by empowering industry and employers<br />
to support jobseekers from identified groups who<br />
experience greater disadvantage in the labour market.<br />
In October 2022, <strong>QHA</strong> was successful in an<br />
application for funding for our Hospitality First<br />
Steps program. Hospitality First Steps will provide a<br />

career, now is a great time to think about taking on<br />
new staff and supporting them into a job pathway in<br />
the hotel industry.<br />
Hiring an apprentice or trainee can be a cost-effective<br />
and rewarding way to increase and modernise your<br />
workforce.<br />
Having an apprentice or trainee join your team and<br />
take on the more routine tasks can free up time<br />
for your more experienced staff to carry out more<br />
specialised and complex tasks.<br />
It can also be a great way to bring fresh ideas and new<br />
techniques into your workplace and help your business<br />
find easier, faster and cheaper ways of doing things.<br />
When you employ an apprentice or trainee in<br />
Queensland, you may be eligible for financial support<br />
to reduce the cost of training and supervision<br />
throughout the apprenticeship or traineeship.<br />
Financial support can be in the form of a one-off<br />
support payment through the Back to Work program,<br />
training subsidies through the Free Apprenticeships,<br />
Free TAFE programs for under 25s and payroll tax<br />

MITIGATING MONEY LAUNDERING<br />
The Australian gambling industry has come under<br />
renewed scrutiny in relation to its anti-money<br />
laundering and counter-terrorism financing compliance<br />
in recent years.<br />
In late-2022 the Australian Federal Police (AFP)<br />
charged three people after they allegedly laundered<br />
millions of dollars in illicit cash through a Melbourne<br />
licensed gaming venue.<br />
The syndicate allegedly targeted patrons with high<br />
value gaming machine credits and offered to pay them<br />
cash to hand over their winnings.<br />
The syndicate members would then have the venue<br />
issue them a cheque in their name for those winnings.<br />
That cheque would be deposited later into a bank and<br />
attributed as legitimate gambling winnings.<br />
Subsequent monitoring and intelligence revealed that<br />
between November 2021 and June 2022:<br />
• the gaming venue allegedly issued an abnormally<br />
high number of cheques compared to other gaming<br />
venues; and<br />
• approximately 73 per cent of those cheques (valued<br />
at more than $4.7 million dollars) had been issued<br />
to a select group of patrons – all suspected to be<br />
involved in or associated with those laundering illicit<br />
funds.<br />
The charges were laid following a 12-month AFPled<br />
investigation which included significant support<br />
from the Victorian Gambling and Casino Control<br />
Commission, AUSTRAC and National Australia Bank.<br />
The Office of Liquor and Gaming Regulation (OLGR)<br />
has been considering the potential for similar scenarios<br />
occurring in Queensland and will review a sample of<br />
venues focusing on the risk factors identified in the<br />
investigation into the Melbourne venue.<br />
I would like to take this opportunity to remind licensees<br />
of their anti-money laundering and counter-terrorism<br />
financing obligations. Pubs should already be aware<br />
of the significant risks of potential money laundering<br />
activities particularly if there is insufficient oversight and<br />
rigour into how payments are issued.<br />
You should be regularly reviewing your transaction<br />
records (such as cheque and large win payout<br />
registers) to identify any unusual activity or patterns.<br />
For example, an abnormally high number of cheques<br />
being issued to the same individuals is what triggered<br />
the investigation in Victoria.<br />
It is important that you maintain your registers in<br />
the required format as this allows transactions<br />
to be adequately recorded and reviewed by your<br />
organisation and regulators.<br />
You should also ensure your frontline staff are trained<br />
to recognise indicators of criminal activity and check<br />
they understand your organisations’ procedures for<br />
escalating any unusual matters to their manager or<br />
compliance officer.<br />
Possible indicators include a customer approaching<br />
other patrons to purchase their winning tickets or<br />
appearing nervous when cashing out or requesting a<br />
cheque.<br />
I encourage licensees to read AUSTRAC’s regulatory<br />
guide for pubs and clubs with gaming machines for<br />
more practical guidance on how to meet your antimoney<br />
laundering and counter-terrorism financing<br />
compliance obligations.<br />
OLGR will continue to investigate strategies to mitigate<br />
potential money laundering in Queensland pubs in<br />
conjunction with our regulatory partners AUSTRAC<br />
and the Queensland Police Service.<br />
Finally, I would like to take this opportunity to remind<br />
licensees of a 12-month trial OLGR has underway<br />
which aims to assist licensees reduce the likelihood of<br />
damage to and theft from their gaming machines by<br />
showing that no money has been left in the equipment.<br />
Under this trial, from 1 December 2022, pubs can<br />
leave their gaming machine doors open and remove<br />
banknote acceptors and/or coin receptacles for<br />
storage in a secure location on the premises outside<br />
trading hours.<br />
The trial is voluntary and will run to 30 November<br />

Being Brisbane’s original brewpub, Brisbane<br />
Brewing Co takes delight in capturing the essence<br />
of Queensland’s sunniest city with its hand-crafted,<br />
summery brews and its two primely located venues<br />
in West End and Woolloongabba. Their brewpubs are<br />
beautiful, easy-going places to unwind and include an<br />
industrial chic set-up adorned with copper pipes and<br />
woven through vines and greenery.<br />
Founded by Michelle and Grant Clark, the brewery’s<br />
hand-crafted beer is lovingly created with recipes<br />
that have been developed over years using traditional<br />
brewing processes and personal touches. Their tap<br />
beers have a loyal following and have been a favourite<br />
at their venues for over a decade, which is why Grant<br />
and Michelle recently made the decision to enter the<br />
packaged beer market for the first time.<br />
Like many venues refreshing their businesses after<br />
the struggles of recent years, 2022 was the year of<br />
reinvention for Brisbane Brewing Co. Bright, summery<br />
and bold designs make up the brewery’s new identity<br />
in addition to a new canned core range of their three<br />
iconic beers.<br />
Co-founder of Brisbane Brewing Co, Michelle Clark,<br />
said the rebranding heralds a new era for the brewery<br />
and was designed to reflect the relaxed, sunny vibe of<br />
the city its named after.<br />
“When we opened our first business, we called it<br />
Brewhouse. At that time, the name was unique and<br />
meaningful, however these days it’s the breweryequivalent<br />
of having the surname Smith.<br />
“After a lot of advice from some branding experts,<br />
we re-named it to Brisbane Brewing Co. Now our<br />
two venues share the same overarching brand name.<br />
The venues may be dissimilar, but they share the one<br />
common ingredient which is our fabulous beer range,”<br />
she said.<br />
The brewery’s newly canned core range of beers<br />
makes for a perfect summer collection easily enjoyed<br />
by the pool with mates and includes the Brissy Lager,

Walker IPA and BPA Brisbane Pale Ale. Each can<br />
dons bright and funky art with its contents proudly<br />
representing a city that has 300 sunlit days per year.<br />
Just last year the brewery’s Brissy Lager and<br />
Walker IPA won gold at the Australian International<br />
Beer Awards and the Independent Beer Awards<br />
respectively. Michelle said they only have three cans on<br />
the shelf so far, but in time they plan to roll out a few<br />
more to bring the total up to six.<br />
“Our canned beer range has been a long time in the<br />
making and we’re proud of the can line up thus far,”<br />
she said<br />
Brisbane Brewing Co is one of the longest running<br />
independent breweries in Queensland, operating in<br />
Brisbane’s CBD since 2005 - back when craft beer<br />
in Brisbane was considered ‘boutique’. Grant<br />
and Michelle wanted to draw from their experiences<br />
of visiting European brewpubs, where the beer<br />
was produced onsite, and introduce it to the people<br />
of Brisbane.<br />
In doing so, they paved the way for breweries and craft<br />
beer in Queensland and have even championed many<br />
local breweries, big and small, through events and<br />
collaborations. Michelle said they purchased their first<br />
business, Auroras, on Albert Street in Brisbane’s CBD<br />
having just moved from the UK.<br />
“During the four years that we had that business,<br />
we decided to move the brewery offsite to a nearby<br />
suburb. That triggered the formation of the new name,<br />
Brisbane Brewing Co. When we were brewing out of<br />
an industrial shed, it reminded us of how fond we were<br />
of the brewpub model, and so we set our sights on a<br />
new place for the brewery.<br />
“In 2008 we sold our business in the city, and in 2010<br />
we purchased a freehold pub in Woolloongabba called<br />
the Clarence Corner Hotel and decided to rename it<br />
Brewhouse Brisbane. It was in desperate need of a<br />
makeover, and we spent considerable time and money<br />
bringing it up to what it is today.<br />

“It wasn’t until 2014 that we found a suitable venue<br />
for our brewery. It was a lucky find - the site was<br />
a disused warehouse located right on West End’s<br />
busy Boundary Street, and we fell in love with it. A<br />
12-month build on that site saw us create Brisbane<br />
Brewing Co West End. It’s the native home of our<br />
actual brewery and is a superb little venue where<br />
customers can meld into the very fabric of the brand.<br />
“Although what I am saying sounds like just a list of<br />
addresses and dates, it highlights just how long we’ve<br />
been working on our brand, refining the recipes for our<br />
beers, establishing the team and creating a successful<br />
long-standing business.<br />
It’s no doubt that having one of Australia’s most<br />
cherished cities in your name is both a blessing and a<br />
curse. Michelle said the name of their business is one<br />
of their strongest selling points, but also acknowledges<br />
that adopting a big name like Brisbane comes with<br />
responsibilities.<br />
“We are to honour the beautiful city in which we live<br />
through our stories, our branding and our marketing.<br />
We have the responsibility to brew beers that the<br />
locals love and are as proud of as we are and to keep<br />
the beers and the business on the front foot.<br />
“We are very fortunate to be within walking distance of<br />
some significant nearby landmarks such as the Gabba<br />
Cricket Ground, Princess Theatre and Southbank -<br />
each of which generates solid footfall for our business.<br />
“Some things on the horizon include our renovation<br />
plans for our Woolloongabba property. The top floor<br />
has always just been offices, but we are going to add<br />
a deck and a couple more function rooms which we’re<br />
very excited about.<br />
“We are heading into the future with understated<br />
confidence and flair. The Olympic Games will be great<br />
for Brisbane and we’re looking forward to being in the<br />
epicentre of the action for that.<br />
“We’ve been working hard at it for well over 17 years<br />
now, and fortunately we’re feeling no signs of fatigue.<br />
We love what we do, and our to-do list just keeps on<br />
growing,” Michelle said.<br />

I know it seems like a distant memory now, but as this<br />
is the first Pub Talk for 2023, I hope you had a happy<br />
and relaxing Christmas and New Year with family<br />
and friends. I also hope that the strong trade which<br />
most of you experienced in the lead up to Christmas<br />
continued throughout the festive season, and long may<br />
it continue in 2023.<br />
2023 <strong>QHA</strong> Licensee Events<br />
The 2023 <strong>QHA</strong> Events calendar is now available on<br />
the <strong>QHA</strong> website. The events schedule is already<br />
underway with the first Pubs, Pots & Profits Forum<br />
of the year held in Bowen in January. The calendar<br />
also details the state-wide Licensee Meeting locations<br />
and dates for the entire year. In 2023 we will again be<br />
meeting in most major regional centres. Of course we<br />
understand it is difficult from many hoteliers in remote<br />
areas to leave their venues to attend these meetings,<br />
however OLGR have allowed an extended time for an<br />
approved manager to be away from the premises for<br />
you to attend professional developments events such<br />
as our meetings.<br />
Final reminder for <strong>QHA</strong> Awards For Excellence<br />
Submissions<br />
A reminder that you have until Sunday 12 <strong>Feb</strong>ruary to<br />
submit your nomination for the annual <strong>QHA</strong> Awards<br />
For Excellence. I genuinely encourage all hotels to<br />
enter and showcase to the state the features which<br />
make your business stand out against others. Details<br />
on nominations and award categories can be found on<br />
the <strong>QHA</strong> website.<br />
Ensuring positive compliance<br />
The <strong>QHA</strong> has resources available to assist members<br />
ensure positive compliance – everything from liquor<br />
and gaming self-assessment checklists to harm<br />
minimisation strategy templates for on-premise liquor<br />
promotions. These documents provided by the <strong>QHA</strong><br />
remove much of the administrative burden on you and<br />
your staff. The new year is the perfect opportunity to<br />
revisit and refresh your compliance programs.<br />

WINE<br />
A NEW LEAF TURNS OVER<br />
IN THE GARDEN OF EDEN<br />
<strong>QHA</strong> REVIEW | 60<br />
Under the watchful eye of Trevor Harch, a new<br />
production and bottling facility has just been<br />
completed on their Kyneton Estate property in the<br />
gorgeous Eden Valley.<br />
Brockenchack wines will now be wholly produced and<br />
bottled on site as of this 2023 vintage.<br />
Back in 2007 Trevor enthusiastically took control of this<br />
property which was a working vineyard for well over<br />
a century - back when it was producing only Riesling<br />
and Shiraz wine.<br />
Now the facility is boasting over seven varietals that<br />
regularly feature in the national and international<br />
awards line-up.<br />
Some of the oldest Riesling vines in Australia are<br />
planted on this heavenly property (planted in 1896),<br />
alongside Shiraz vines planted in the 1930s and ‘50s.<br />
Following Trev’s first 2008 vintage of a tiny 37-dozen<br />
Jack Harrison Shiraz (just to see what he had), his<br />
excitement only grew when the exceptional quality of<br />
the wine spoke for itself.<br />
In 2017 one of the property’s original 1880s vineyard<br />
homesteads was completely restored, delivering luxury<br />
bed and breakfast vineyard accommodation for the<br />
Eden Valley region.<br />
Situated next door to this old homestead is also<br />
another old stone building (circa 1880s), which was<br />
once the local butcher shop for this region’s farming<br />
community, complete with an underground meat<br />
hanging cellar. Years later, with the introduction of new<br />
residents to this land, this old shopfront was converted<br />
into a two-room brothel with red lights that you can still<br />
see to this day. When you visit the vineyard, Marilyn<br />
can tell you a story or two about all this history, having<br />
had these stories passed down from generation to<br />
generation over the years and told to her first-hand by<br />
the lovely Mr Doddridge who in fact grew up on her<br />
property (but has sadly since passed on).<br />
In 2018 this old butcher’s shop-turned-brothel was<br />
restored into the cellar door. The old working rooms<br />
are now private tasting rooms, and the underground<br />
meat cellar is now an underground trophy room.<br />
Winemaker Joanne Irvine has created the three<br />
exceptional drops we have reviewed. The trophy room<br />
will be quickly filling up with the likes of a 98-point<br />
Wine of the Year (Winestate Magazine) for the current<br />
release 2022 Mackenzie William Riesling – outstanding<br />
quality for exceptional value. The valley of Eden is<br />
certainly providing for its followers!
