THE YEAR AHEAD
Like many Australians, I enjoyed a bit of time off over summer. I headed to some of Queensland’s best beaches and
enjoyed meals with friends at member restaurants, pubs and hotels throughout the state.
Unlike many Australians, I tore myself away from Netflix to do a lot of research on economics and forecasts for the
year ahead. Despite the typical amount of uncertainty in the future and the usual doomsayers that are trying to sell
newspapers and ‘clicks’ online, I am remarkably upbeat for 2023.
Australia is in an extraordinarily fortunate position. This has little to do with the politicians inhabiting our news feeds
and a lot to do with the ingenuity of Australian business owners to change their offerings quickly. Yes, there will be
some Australian families that will be experiencing a squeeze on their household budgets for the first time. This is
unsurprising as we have had economic growth for over two decades in Australia.
Yes there is war in Europe, but Australians don’t rely on Russian gas for heat or air-conditioning. If anything,
economic downturn in Australia will be of our own making, not the market conditions, but only if we discontinue to
innovate nor seek to improve our businesses.
International tourists and working holiday-makers are returning in droves, alleviating the labour shortages. China is
slowly opening up again to Australian exports and increasing the earning of Australian families. There’s also been
good rain across the agricultural sector injecting life into these communities.
In short, there are a lot of positives to be taken into 2023 and we can’t let the doomsday prophets talk down our
future. QHA will be out with more training, events and opportunities for our members than ever before. Keep an eye
out for energy deals for members, Pubs, Pots and Profits and of course improvements to our patron safety that will
roll out this year.
Also, I could not finish without mentioning the largest change for us here at the QHA. As has been reported already,
Tom McGuire AM has decided to retire from the office as President of QHA. Tom has been an integral part of
why QHA has been so successful over the decades that he has been involved. Since 2006, Tom has guided our
association through many testing times and always sought to improve our members, particularly those in our regional
areas.
On a personal note (and I feel I can speak for my predecessors), working with Tom as President has been one of the
great privileges of being the Chief Executive of the QHA. Thank you Tom.
LYRE’S LESSONS
STOP IN AT THE ‘IMPOSSIBLE BAR’ FEATURED ON LYRE’S
NEW LABELS WHERE CHARMING ANIMAL BARTENDERS TAKE
YOU THROUGH THE WORLD’S MOST ICONIC NON-ALCOHOLIC
COCKTAIL RECIPES.
QHA REVIEW | 6
Lyre’s Spirit Co, the world’s most awarded non-alcoholic
spirits company, has created a unique experience for
customers by incorporating augmented reality (AR) into the
labels of their large collection of spirits.
When scanned, one of the brand’s iconic and charismatic
‘Social Animals’ featured on each type of non-alcoholic spirit
will come to life and take customers through a virtual gallery of
the world’s most famous cocktail recipes.
The experience is aimed at educating and inspiring customers
on the wide variety of opportunities when it comes to nonalcoholic
drinking. Some of the AR experiences, depending
on which bottle you scan, include a lesson on how to make a
non-alcoholic espresso martini by a jaguar pilot, and a negroni
by a sharply-dressed pigeon.
The innovation comes from Lyre’s recent partnership with
Amazon, and their new ‘Anywhere, Anytime’ technologybased
campaign. In addition to the ‘Impossible Bar’, the
campaign also allows customers to ask all Alexa voice
devices how to ‘make it a Lyre’s’. This will prompt a friendly
step-by-step guide on how to make your favourite cocktail

NEWS
with little or no alcohol - complete with background
music to set the mood.
CEO at Lyre’s, Mark Livings, said despite being
non-alcoholic, their portfolio of premium, award-winning
spirits allows customers to create 90% of the world’s
best-loved cocktails, allowing drinkers to switch
frictionlessly in and out of alcohol whenever they
choose.
“Our latest Amazon and AR technologies have been
developed as part of our commitment to changing
the way the world drinks, empowering consumers to
explore those possibilities and to educate them about
the range of choices available when you make it a
Lyre’s,” Mark said.
Inspired by the mimicry of the brands mascot, the
Australian lyrebird, Lyre’s was founded in 2019 to
perfectly replicate the world’s most popular spirits in
a non-alcoholic format. The company, founded out
of Sydney by Carl Hartmann and Mark Livings, is
the fastest growing drinks brand to ever come from
Australia.
Lyre’s spirits maintain the distinct tastes of rum, gin,
whiskey, amaretto and many more without being
alcoholic. Each liquor stars its own classily dressed
animal mascot, making Lyre’s bottles some of the most
charming looking on the market.
Chief Marketing Officer at Lyre’s, Paul Gloster, says
the company is seeing reports globally that Australia is
starting to lead the world in the adoption of
non-alcoholic drink alternatives.
“Our biggest success has been the way the Australian
market, both trade and consumers, has embraced
Lyre’s and the whole concept of non-alcoholic spirits.
We really feel like it’s broken through from being a
trend on the horizon to being something people are
actually really embracing,” he said.
Across the global liquor industry, low or non-alcoholic
drinks are becoming increasingly popular due to
consumers wanting to keep the culture of social
drinking without the burdens of drinking high sugar,
calorie and alcoholic content. While non-alcoholic
drinks are currently 3% of the global market, the trend
is predicted to grow to 31% in 2024. Companies like
Lyre’s are only going to become more prosperous, and
are important in allowing sober, pregnant, or
health-conscious customers to choose how they drink
freely and without any compromises.
In a message to retailers, Paul urges that liquor stores,
restaurants, and hotels should get behind the growing
trend and support the increasing number of customers
that are switching to low or non-alcoholic options.
“There’s always consumers that are looking for a high
quality non-alcoholic substitute, and having that range
in your store is really important going forward. This
trend is definitely not going away,” he said.
SHAPING BREWS AND
CRAFTING BOARDS
QHA REVIEW | 8
Inspired by the foam of the sea and the rich surfing
culture of the Northern Beaches in New South Wales,
SurfCraft Brewing Co have released their first beers,
the Pintail Lager and the Vee Bottom Session Ale from
Dad & Daves Brewery in Brookvale.
Going hand-in-hand with the brewery’s motto,
‘shaping brews and crafting boards’, the beers pay
homage to the founders of the Australian surfing
industry - the Brookvale Six.
In the 1950’s, Barry Bennett, Gordan Woods, Bill
Wallace, Scott Dillon, Greg McDonagh and Kenny
Keogh, also known as the Brookvale Six, supplied
the entirety of Australia with balsa wood and foam
surfboards from their home in Brookvale, where they
took turns in turning on a keg of beer every Friday.
Founder of SurfCraft Brewing Co, Nathan Gazzard,
said craft beer, surfing and the history of the Brookvale
Six inspired him to launch the brand on August 21,
2022, along with cans of his Pintail Lager and Vee
Bottom Session Ale.
“These men pioneered the surfboard manufacturing
industry in Australia and helped transform how surfing
was shaped and I am thrilled to share their story so
we can revere, have a beer, admire, respect and never
forget them or our craft,” he said.
The brews are a result of a collaboration with one of
the Brookvale Six and one of the largest surfboard
manufacturers in Australia, Bennet Surfboards. The
design of the Pintail Lager is inspired by old-school
surf branding and culture, and is an easy, crisp and
sessionable beer with a slightly unique twist.
Kirrily Waldhorn, known as Beer Diva, has also
collaborated with the brewery on the marketing
and design of the Pintail Lager, and said it’s been a
fascinating and exciting process working with the
SurfCraft team.
“I have enjoyed helping them bring together their
combined passion for surfing and brewing while
celebrating and embracing the amazing local talent
we have in both brewing and surfing in Australia,” she
said.
SurfCraft is planning on launching a core range of six
beers, which will continue to be shaped and crafted
from the factories where Australian surfing was born.
GRANDER VIEWS
One of Queensland’s oldest licenced venues, The Grand View
Hotel, has a multiple million-dollar renovation on the horizon after
being sold to the flourishing pub chain Kickon Group.
Named after its gorgeous view overlooking Moreton Bay, The Grand
View Hotel in Cleveland is a cherished icon of Redland Bay that has
earnt many titles since it was built in 1851, such as ‘The Brighton
Hotel’, ‘Cleveland House’ and ‘The Grand Dame’ to name a few.
Now the heritage registered venue may be referred to as a different
name after being sold by JLL Hotels and Hospitality Group in
November last year. The company’s Senior Vice President, Tom
Gleeson, said the underlying fundamentals were clear with the
Grand View Hotel being a large format hotel within the tightly held
southeast area.
“The intangibles this Queensland hospitality icon possess is rare
and I am excited to see what Kickon Group do to complement its
vast and rich history, it’s been a privilege to be involved,” he said.
Based in Victoria, Kickon Group’s growing portfolio of venues
is nothing short of impressive. The leading hospitality group
is responsible for The Continental in Victoria’s Sorrento, The
Collective in Queensland’s Palm Beach, and the iconic Plough Inn in
Brisbane’s Southbank.
With The Grand View Hotel now added to their luxurious list of
venues, Kickon Group is planning a multiple million-dollar renovation
for the hotel in the near future in hopes to reinvigorate the venue
and add to its rich and vast history.
Currently, The Grand View Hotel features a thriving beer garden,
multiple function rooms, a public bar, 35 gaming machines and a
bistro. With a classic pub atmosphere and unrivalled water views,
the hotel is a favourite visiting place for locals.
Founder and Director of Kickon Group, Craig Shearer, said the
company is looking forward to celebrating the importance of the
history of the venue while taking advantage of the magical outdoor
space and ocean view.
“It’s going to be really special. We have partnered with awardwinning
architects BSPN to create plans that will breathe life back
into this amazing landmark,” he said.
BERRY BRILLIANT
QHA REVIEW | 10
Behind some of the most delicious muffins, smoothies,
pies, crumbles and mueslis is a bag of refreshing
frozen fruit, and in last year’s Healthy Food Guide
Awards, the best of them all has been revealed to be
Aussie Frozen Fruit’s Mixed Berries.
Praised for their taste, nutrition, health and affordability,
Aussie Frozen Fruit’s Mixed Berries was awarded ‘Best
Frozen Fruit’ in the Frozen Product category of the
2022 awards, which was run by the Australian Healthy
Food Guide Magazine.
Each year the Food Guide Awards are judged by a
panel of leading dietitians and nutritionists to decide
on the most nourishing packaged food products on
Australian supermarket shelves. Healthy Food Guide
managing editor, Jenny de Montalk, said the awards
recognise brands that have worked hard to boost the
nutritional content and accessibility of their products.
“They also acknowledge products that are affordable
as well as healthy. With people feeling the pinch right
now, it’s good to know there are healthy options out
there that don’t cost the earth,” she said.
Perfect for dropping into a bubbly cocktail, frozen fruit
has always been a popular choice in Australia due to
the freezing process locking in the flavour and nutrients
of the produce right after it is picked. Keeping fruit
frozen also lengthens its shelf life, allowing Australians
to reduce food waste and have access to seasonal
produce all-year round.
Aussie Frozen Fruit was launched in 2020 and
currently has a large range of 400-gram frozen fruit
packs including blueberries, mixed berries, mangos,
strawberries and pineapples that are available
exclusively in all Woolworths stores nationally. Aussie
Frozen Fruit General Manager, Phil Rybinski, said
the company’s frozen mixed berries, which are a
combination of snap frozen strawberries, blueberries,
raspberries and blackberries, have always been a
favourite with customers.
“Our popular range provides nutrition, quality,
convenience and versatility for recipes including
smoothies, desserts, breakfasts and baking; and will
always contain the amazing Australian taste in every
pack.
“We are exceptionally proud of our 100% Australian
grown frozen fruit range and are thrilled to be
recognised at the 2022 Healthy Food Guide Awards.
We remain committed to supporting our local growers
and to providing healthy and true-blue products to our
customers,” he said.

TOWNSVILLE
TURNOVER
WARATAH DEBT CAPITAL RECENTLY ASSISTED
PUBLICANS NICK GREGORSKI AND GRANT MORGAN
TO PURCHASE THE ROYAL HOTEL IN TOWNSVILLE.
QHA REVIEW | 12
Dedicated to financing Queensland’s increasingly
bustling hotel industry, Waratah Debt Capital is
a specialist non-bank lender that is dedicated to
exclusively lending to the hotel industry.
Managing director of Waratah Dept Capital, Mark
Anyon, said the company recently financed North
Queensland publicans Nick Gregorski and Grant
Morgan into purchasing the Royal Hotel in Townsville
from Hotel Property Investments (HPI) and Australian
Venue Co (AVC).
“We were very happy to support Nick and Grant due
to the experience they bring to the table.
“Nick and Grant grew up in Bowen, so it’s great to see
them both back in a North Queensland hotel and we
look forward to providing our continuing support,” he
said.
While the transaction had several complexities,
involved various counterparties and had a number of
moving parts, Waratah took the time to understand
the transaction thoroughly and could appreciate the
opportunity it presented for Nick and Grant.
“In short, Mark at Waratah Debt Capital just gets it. He
could see the deal, the potential of the business and
the growth areas,” Grant said.
“It’s great when you have someone like Mark on the
other side of the table that understands the hospitality
industry and made it a reality for myself and Nick. I
could not be happier with the process with Waratah.”
Located on 3,312m 2 of land in the inner suburb of
West End near the foot of Castle Hill, the hotel was
bursting with opportunity for the pair.
The sale included the operating business and the
freehold two-storey brick building comprising of
a public bar, TAB, gaming room with 40 gaming
machines, function and dining room, kitchen, dual lane
drive-through bottle shop, beer garden and 15 guest
rooms.
“Traditional finance wasn’t the greatest option for us,
so working with Mark made it very easy and was just
what we needed.
“I definitely would use Mark again at the drop of a hat!”
Nick said.
Nick and Grant have immediately commenced
renovations to capitalise the venue’s glowing potential,
including improvements to the bottle shop front bar,
beer garden and gaming room.

LATEST & GREATEST
It’s a creative piece of technology that
is seeing the cherub of Little Creatures
flapping its wings and the waves
of Single Fin rolling below a gliding
seagull. It’s called the Looped Animated
Branding Decal, aka LAB, and its giving
breweries a dynamic and unique way to
showcase their brand on beer taps all
over the country.
These innovative devices, best
described as HD digital tap displays,
are taking off in the Australian hospitality
industry and are rapidly replacing
standard plastic decals in bars. The
product’s success comes from its ability
to fill a niche in the advertising market
for breweries by providing a way for
companies to market their craft beer in
venues where advertisement is difficult
and outside of their direct control.
The husband and wife behind the idea,
Ryan and Shinae Vergone, started to
conceptualise the displays after they
founded Vertek Innovations in 2017.
The couple’s innovation was the result
of a simple conversation they shared
one night on a date when they noticed
that many bars in the industry are quite
static and unexciting in nature.
A COUPLE IN PERTH HAS GIVEN
BREWERIES THE ABILITY TO BRING
THEIR ICONS TO LIFE IN BARS
ACROSS AUSTRALIA.

LATEST & GREATEST
The couple initially thought the idea of digital decals
was probably not an original one, but after they did
some research and even paid people to investigate the
product further, they realised they were the pioneers of
the invention, and so they patented and developed it.
In 2020, Vertek started selling their LAB decals to
venues across Australia, with Ryan using his tenyear
background in graphic art to work closely with
breweries to create unique looping animations.
The animations allow breweries to have a different
point of educating a customer rather than just a static
picture of their logo. The product’s success and
potential for brand exposure comes from the attraction
of customers to a digital, colourful and moving
medium. Each digital decal comes pre-loaded with a
breweries personalised animation which can creatively
display tasting notes and other quirky and informative
branding.
Because the craft beer world is becoming so popular,
now more than ever customers are wanting to know
what flavours are in unfamiliar brands of beer. The
product’s ability to display bits of infomation allows
customers to avoid the risk of trying something they
don’t like and perhaps as a result not trying anything
else in the brand’s range.
The innovation of the LABs goes beyond just the eyecatching
animations, with Vertek having the hindsight
to incorporate a range of features to make every
bartenders life easier.
Because the bar is not a dry place, the devices were
made to be waterproof and can rotate completely
around to display a classic epoxy decal in the event
that power is lost to the display. The company have
also ensured that no cables can be seen from the
back or the front of the LABs and offer guidance to
customers who need help installing the decals into
their tap banks.
In 2021 the company was rewarded for their creative
contribution to the industry and earned gold in the
Australian Good Design Award. The jury of the awards
praised the LAB decals for their original, smart,
practical and aesthetically pleasing design that has
improved the brewing and hospitality industry.
While the LABs were originally expected to be bought
by brewers for venues, the decals have also been
purchased by venues themselves.
This came as a pleasant surprise for Ryan and Shinae,
and is possibly due to the digital displays eliminating
the need to waste time and money on switching over
plastic decals.
The couple’s game-changing product is certainly a
point of difference for many venues and a creative and
fun addition to the Australian hospitality industry.
The iconic Jubilee Hotel on St Pauls Terrace in
the bustling Fortitude Valley has undergone what
can only be described as one of the greatest pub
transformations Brisbane has seen.
The iconic heritage pub is once again the go-to
watering hole for locals and now boasts its very own
microbrewery and the hottest beer garden in town, with
a live music stage and stadium-sized screen.
Public response to the major refurbishment has been
overwhelmingly positive, with punters flocking to the
popular pub after its reopening on 11 November last
year - just in time for the festive season.
The 134-year-old ‘Jube’, as it’s known by among
locals, underwent the extensive renovation after
venue owner TB Hotels decided to restore the hotel’s
distinctive heritage façade while taking its internal
design into the future.
“The courtyard extension along with the Two Dogs
Brewery has been designed to complement these
features. Brisbane has not seen a venue like the
Jubilee!” Jubilee Hotel Sales & Events Manager,
Karishma Sundarjit said.
FEATURE
“Our goal is to have a place for everyone at The
Jubilee. We’ve kept the sports bar and gaming for
those afternoon visits, revamped the Journo Private
Dining room and added six event spaces. Whether
you’re here for a sit-down dinner, an engagement
party, a celebration or an afternoon with friends and
family – The Jubilee offers it all.”
Well-known Brisbane architects, Blight Rayner,
designed the new Jubilee Hotel, achieving a superb
balance of heritage and contemporary design while
offering pubgoers a luxurious, modern experience.
“The revitalised Jubilee Hotel offers two very
contrasting experiences – firstly of the meticulously
restored historic corner pub and its intimate spaces,
and secondly of the open volume of the new beer
garden behind,” Blight Rayner Architecture Director,
Michael Rayner said.
“Externally the old and new are of identical height, but
internally the soaring volume of the beer garden, with
its sawtooth skylights and window wall to the street,
creates a different world of light and spaciousness.”
The Jubilee’s gorgeous heritage brickwork was
painstakingly restored by hospitality specialists Rohrig
Constructions, returning the brick to its natural state as
it would have looked in the 1880s.
However, the star of the show for the reborn Jubilee
Hotel is its beer garden and courtyard, featuring
translucent roofing that allows natural light to flood the
area and a unique diagrid diamond-shaped layout with
elegant façade glazing separating the structures.
“The diagrid window wall is designed to defer to the
scale and rhythm of the historic pub while also to the
skeletal structure of the adjoining office tower which is
integral to the precinct,” Mr Rayner said.
THE ICONIC JUBILEE HOTEL ON ST PAULS TERRACE IN THE BUSTLING FORTITUDE VALLEY HAS UNDERGONE
WHAT CAN ONLY BE DESCRIBED AS ONE OF THE GREATEST PUB TRANSFORMATIONS BRISBANE HAS SEEN.
“Inside, the beer garden actually consists of multiple
spaces – a beer hall and microbrewery at ground level,
a series of booths and terraces at raised levels and a
function terrace overlooking from above.”
The footprint of the venue was also extended, which
allowed for a larger beer garden, second kitchen,
bistro dining area, additional function spaces, three
bars, offices and a microbrewery. These elements had
to be designed to blend seamlessly with the existing
heritage components.
“The main challenge was to resolve how to design the
new beer garden in a way that is both respectful to
the historic hotel building and dynamic as a place for
people to love coming to,” Mr Rayner explained.
“We realised that a mere contemporary interpretation
of the historic architecture would not do this. The
new architecture pays homage to the old in terms
of scale and rhythm, but what we like is that you get
dramatically different experiences from the old to the
new, the new acting like a covered plaza in the city.”
For Rohrig, the construction side of the refurbishment
required extensive heritage restoration works to the
original pub as well as the construction of the new
state-of-the-art beer garden, restaurant, bar and
kitchen. This proved to be a complex build and one
that required a construction partner with proven
hospitality experience.
“Limited site access and a complex structure and
fit out set the scene for a challenging delivery, but,
together as a project team I think we have delivered
an incredible outcome and something very unique for
the owners,” Rohrig Construction Manager, Matthew
Tucker said.
It isn’t just the Two Dogs Brewing microbrewery that
has kept patrons coming back since the Jubilee
reopened its doors. The hotel offers an exciting new
menu and no less than 50 beer taps - not to mention
that stadium-sized TV screen.
Pub classics like parmies, fish and chips, steaks and
pizzas are all on the menu, as well as gourmet shared
snacks like grilled saganaki, charcuterie and peking
duck spring rolls.
“The Jubilee has stepped up to another level, but
we still offer the pub classics, and we do them well,”
Jubilee Hotel General Manager, Chris McNeill said.
“Our pizza oven was imported from Italy and is a big
part of the offering. In the last month of opening, our
pizzas and Kobe’s Crumbed Steak have been our
most popular choices in both dining and events.
“With over 50 beer taps in the venue, we have
aimed to offer a balance of craft beer and household
favourites as we try to have something for everyone
and all occasions, not to mention our brewery-fresh
beer straight to the taps.
“Aside from the popular cocktails and summer
spritzes, we also have an extensive wine list offering
some classic vintages from Penfolds Grange and
Henschke ‘Hill of Grace’,” he said.
The revamped Jubilee Hotel has to be seen to be
believed, with a design and fit-out that puts it on the
map as one of Australia’s premier pubs.

LEGAL MATTERS with Curt Schatz
PREPARING FOR COMPLIANCE INSPECTIONS
QHA REVIEW | 26
Given that running a pub is an activity that is highly
regulated, there are many documents, policies and
other compulsory obligations that commercial hotel
licensees need to have in place.
In this article, I will set out some of those (not an
exhaustive list), to be aware of. It is also recommended
to keep these documents and policies in one place,
which can be done and retained digitally or in paper
format.
Personally, and it may be a reflection of my generation,
I think that retaining these documents both physically
and digitally is a good way to go for safekeeping and
to ensure that they are immediately accessible upon
inspection.
There are many instances where you might be asked
to produce these documents, the most likely of those
being by a compliance officer from the OLGR. Others
include the police, the Council, the Health Department
or any other municipal or Government authority who
may also inspect validly and request information with
full authority.
My other message is that it is prudent that there be
at least one and probably two individuals within your
business who know where these documents are. They
should also understand the purpose and importance
of the documents and be able to readily access them if
so requested by authorised personnel.
It is advised to designate an employee within your
organisation who can be the single point of contact
for a compliance officer at the premises (either on an
arranged basis or otherwise), to answer questions and
provide documents quickly.
A few of the more important documents which should
be centrally and quickly locatable include:
1. Liquor Licence
2. Gaming Machine Licence
3. AML/CTF Compliance Policy
4. Training Schedules
5. Incident Registers
6. Copies of RSA and RSG Certifications
7. Copies of approved plans for the premises
themselves
8. Copies of all plans for the premises and a site plan
- if possible
9. Copy of the lease - if the premises is leased
10. Copy of the RAMP
11. Food Hygiene Licence
12. Copy of QFES Policy and Evacuation Plans
I would also suggest being cooperative with the
Regulator and appearing professional; both in terms of
your personnel who may deal with the Regulator, and
in the sense that documents are readily available and
complete, as this will enhance your reputation with the
Regulator and their confidence that your venue is fully
compliant.
I hope these few tips on compliance help you and your
organisation.

INHABITING BRISBANE’S BELOVED HERITAGE LISTED BAROONA LABOR HALL, LEFTY’S IS
WORLDS AWAY FROM MOST BARS IN THE CITY AND PROVES THAT THE MORE ECCENTRIC THE
VENUE, THE BETTER.
QHA REVIEW | 28
Head down to Caxton Street in one of Brisbane’s
oldest party and entertainment areas in Petrie Terrace
and you will find the spirit of old timey America reborn
in Lefty’s Music Hall. Characterised by American food,
vibrant scarlet neon lights and beautiful old-timey
décor, Lefty’s transports you to an era defined by the
rhythm of a fiddle and the nostalgia of chandeliers,
deer antlers and old-school country bars.
It’s the venue’s rootsy American vibe mixed with
modern day flare that makes it so important to the
Queensland live music scene, which is clearly thriving
in all sorts of creative and quirky ways after being
dormant throughout the difficult times of the pandemic.
Lefty’s Music Hall Venue Manager, Daniel Coleman,
said the renowned live music venue is celebrated and
defined by its idiosyncratic and rustic aesthetic.

INSIGHTS
“Inside are decadent scarlet crimson walls, vintage
chandeliers, giant gilt mirrors, black leather booths
lit with candlelight and an opulent curved bar
overlooked by giant moose heads and a wallmounted
bear and peacock. We also have relics
dotted around the venue such as a vintage Cuban
cigar cabinet and classic saloon doors.”
With gorgeously adorned spaces on the ground
floor, lower mezzanine and upper mezzanine, the
venue was designed for lively nights out where
visitors can enjoy the music and atmosphere.
Daniel said from full venue hire to small and
intimate events, everyone at Lefty’s knows how to
throw a good party.
“We have four function rooms guests can hire
out, including the Mermaid and Cactus bar. The
lower mezzanine is for the band lovers - you can
enjoy how close you are to all the action while
overlooking the entire venue. If you love being in
the centre of it and if you love dancing, then the
booths are a match made in heaven.”
The venue’s theatrically themed bars are truly
experiences created for the imagination. The
tucked away Mermaid bar takes you into the fancy
cabin of a historic vessel and celebrates all things
nautical and oceanic with fishing nets draped
across the ceiling, a massive and intricate model
of a ship overlooking the bar and the slightly
unnerving addition of a suspended great white
shark. The theme even carries across to the bar’s
drink menu, which primarily offers rum – the most
cherished drink of pirates and sailors.
The Cactus bar is on the ground floor of Lefty’s
and features old-school saloon doors, a mounted
bull head and a cabinet full of all things tequila and
wild west. It truly makes you feel like a modernday
cowboy who just walked into a saloon.
Daniel said naturally their American inspired menus
had to include hotdogs, chicken wings, fried
chicken burgers, cheeseburgers and the charming
and unique edition of cheeseburger spring rolls.
“True to its honky tonk wild west theme, our venue
also serves plenty of boutique beers and our
signature Whiskey Apple cocktail.”
But what is the point of a vibrant, quirky and theatrical
venue without live music and entertainment to fill its
halls? From live bands to comedy and even slam
poetry, there is always something to sing along, laugh
at and vibe to at Lefty’s. The atmosphere of the stage
is something to be marvelled at, with vibrant purple
and red lighting that makes musicians and instruments
glow amid the smoke onstage.
Daniel said over the next few months, the venue will be
hosting events starring Jade Holland and Tori Drake,
Henry Wagons and The Only Children, The Audreys
Queensland Tour and Kav Temperly of Eskimo Joe.
“Although the old west may be dead, buried under
the monolith of industrialisation that replaced it, in
Lefty’s it lives on. When the sweet twangs of country,
rockabilly, blues and roots or jazz music aren’t being
IS ALWAYS SOMETHING TO SING ALONG, LAUGH AT
The sacred, centuries-old Baroona Labor Hall has
been home to many night-life businesses in its time.
Throughout the 1970s and ‘80s, the building was
utilised as a live music hotspot and then a series of
nightclubs in the ‘90s.
The venue has changed ownership many times but
was taken over by Hallmark Group Australia in 2019.
To the delight of many in Brisbane, Lefty’s maintained
its classic eccentric charm - and its beloved Whiskey
Apple cocktail - when it was opened again to the
public in February 2020 as the venue we currently
know and love.
It’s no doubt the historical and unapologetically
quirky Lefty’s Music Hall will continue to introduce
Queenslanders to head-bopping live music and the
beautiful, vibrant atmosphere of old-timey America.
“It’s been great to have everyone back on Caxton
Street and to see the iconic destination come alive
once again post-pandemic. Whether it’s before or
after Suncorp Stadium Games, the classic after work
ACCOMMODATION UPDATE
with Maeve McKenzie
2023: THE YEAR OF ACCESSIBLE TOURISM
QHA REVIEW | 36
With the Brisbane 2032 Olympic and Paralympic
Games fast approaching, the Queensland Government
has declared 2023 as The Year of Accessible Tourism.
Making your services more accessible to visitors can
open valuable markets for your business. With the
Paralympics in mind, there’s been no better time to get
the ball rolling than now.
The 2021 National Visitor Survey conducted by
Tourism Research Australia (TRA) revealed that only
5% of operators are accessible tourism ready. This is
incredible to think when around 18% of Australians
are living with a disability, and an additional 22% have
a long-term health condition requiring assistance.
Further to this, in 2021, travel groups including
people with disability or long-term health conditions
in Australia accounted for 17% ($13.5 billion) of total
domestic day and overnight trip spend.
The accessible travel community includes people with
a disability, a long-term health condition or mobility
needs. It also includes their travel party. Other visitors
also benefit from improved access, such as:
• the elderly
• those with temporary needs, mobility issues or
medical conditions
• parents with prams
• multi-generational family groups
The need for accessible tourism in Queensland is an
issue that can clearly no longer be ignored, but most
businesses don’t know where to begin addressing
this necessity. Inclusive travel advocate Martin Heng
has worked with the Australian Tourism Export
Council (ATEC) and Tourism Australia to develop and
deliver the new Accessible and Inclusive Host training
program. The three modules in the program focus on
being culture, product and service ready to upskill and
prepare your business to successfully welcome guests
from all life stages, backgrounds and abilities. Martin’s
key takeaway for program participants is ‘the most
important step to becoming an accessible tourism
business is having an attitudinal change and inclusive
mindset to overcome barriers’.
In addition to this, steps you can implement into your
business to become accessible tourism ready include:
• Encouraging inclusive language (person-firstlanguage
‘person with disability’)
• Encouraging staff to get educated on the core
elements of accessible tourism (be flexible, offer
help and speak to the person with disability directly)
• Creating mobility maps (highlight accessible
carparks, lifts and bathrooms)
• Ensuring you have an accessible website (including
alt-text, venue details for different accessibility
needs, mobility maps and FAQ’s)
• Incorporating the universal design principals into
your business (equitable, flexible, simple and
intuitive, perceptible information, tolerance for error,
low physical effort and space for approach and use)
• Installing additional railings, braille, tactile signs and
tactile tile indicators
• Utilising BindiMaps or Blindsquare in your venue
If your business is interested in further information or
assistance with becoming an accessible tourism ready,
you can utilise the tools below.
• The Australian Tourism Export Council’s (ATEC)
Accessible and Inclusive Host Program
• Tourism and Events Queensland’s Accessible
Tourism Workshops
• Accessibility Audits through groups such as Get
Skilled Access
• Case studies from other businesses who have
implemented accessible tourism (these include
Tourism Tropical North Queensland, Australia Zoo,
Eat Street, Sandstone Point Hotel and RACV Royal
Pine Gold Coast)
• Apply for the National Quality Tourism Framework’s
Accessibility self-assessment module
Embracing inclusive travel is a must, and the travel
industry can no longer ignore it. That’s why in 2023,
the AHA and QHA are including The Disability Inclusion
and Access Award in the Awards for Excellence
Program. This award recognises those businesses that
ensure everyone’s experience is exceptional. 2023 is
an exciting year for inclusive travel, and our industry
should be ready to embrace it as it’s really no more
than good customer service.

years ago, but it’s about to reopen which is really big
news for anyone who owns a pub up here.
“The technology back in the 1800s was really poor, but
the technology these days to extract copper and gold
is a lot more advanced. The Mount Morgan Mine left
behind tailings, which is like the leftover dirt, and it's
been determined that there is gold left in those tailings.
“With new processes and technology, they can pull or
extract a lot more gold out of those tailings, which is
why they’ll be reopening for 30 years.”

Focus
When Paul Gleeson took on the Railway Hotel in Mount Morgan,
little did he know he would be sitting on his own gold mine.
Paul said he has only been a publican at the Railway
Hotel for 14 months, but in that time he has learned of
the town’s proud history.
“The town is very proud of their mining history and the
economic value to the country that it's given, including
its founding of the Walter and Eliza Hall Institute of
Medical Research - a cancer research centre.
“So there's a lot of history in Mount Morgan, and a lot
of historic buildings dating back to the 1800s which
have been restored.”
Paul said the current Railway Hotel is about 60 years
old, with the original hotel, like many 19th century
buildings, having been burnt down.
“About 40 years ago when the mine was operating,
there were about 16,000 people in town and there
were 27 hotels. These days, there are about 3,000
people in town and three hotels.”
As it is competing with two other hotels in town, The
Railway Hotel has had to make a point of difference. In
just 14 months into the job, Paul said he has achieved
a major turnaround.
“We’ve managed to quadruple the turnover and we've
seen 400% growth. We're going really well for being,
what I consider, the poor cousin in the sense that we
don't have pokie machines. We do have Keno, in fact
we're the largest Keno operator in town, and we also
have TAB as well.”
The Railway Hotel has a main bar, lounge area, pool
area and a TAB section. To the rear of the hotel is a
40sqm deck and a half-acre of land which overlooks
the Mount Morgan Railway Museum.
“Right behind the hotel is the spectacularly restored
museum which you can see from our back deck. They
have a couple of locomotives and carriages there and
it's also the information centre for the town,” Paul said.
Although rail services from Rockhampton to Mount
Morgan ceased in 1987 and the line was removed,
the town is still popular thanks to its rich mining and
locomotive history.

Focus
“He's recently taken over the kitchen and we’re
offering this style of meals on Friday night, Saturday
and Sunday. That style is proving really popular with
patrons and although it’s just the three days at the
moment, we’re hoping that will be available sevendays-a-week
in the coming months,” Paul said.
The Railway Hotel Mount Morgan offers
accommodation as its name suggests with three
motel rooms which are fully supplied with ensuites,
air conditioning and a queen-size and single-size bed
in each room. There are also five hotel rooms which
have shared lavatories with separate male and female
bathrooms.
“There are some really big construction projects
commencing here, with the reopening of the mine as
well as a $750 million wind farm, so accommodation
is going to be a real problem. But for the locals, and
particularly those in the hospitality industry, businesses
are sitting on their own gold mine,” Paul said.
“The Railway Hotel was a real struggling little pub, but
we’re taking on our competition and we're doing that
without a seven-day-a-week restaurant or pokies, so
we are doing really well.
“We're getting big crowds with our bigger events and
we're trying to create a point of difference to the other
two hotels in town by offering a more family-oriented
venue for people in town,” Paul said.
Since taking on the hotel, Paul has renovated the
bottle shop and joined the Thirsty Camel branding
which has seen a 600% growth in bottle shop
takeaway.
He has also tackled the issue of food service with the
help of a ‘Low and Slow’ chef specialising in slowcooked
meals such as pork spare ribs, beef short ribs,
pulled pork, pork briskets, nachos and loaded fries
topped with slow-cooked meats.

EMPLOYMENT RELATIONS with Sarah Swan
CAN I DISMISS AN EMPLOYEE FOR
SERIOUS MISCONDUCT?
QHA REVIEW | 44
Serious misconduct involves an employee engaging
in extremely bad behaviour that is inconsistent with
the continuation of their employment, and therefore
justifies the termination of the employee’s employment
with immediate effect. In the case of full-time or parttime
employment, the employee would not be entitled
to notice.
Fair Work Regulations 2009
Section 12 of the Fair Work Act 2009 (the Act) defines
the words and phrases contained within the Act.
Under this section, “serious misconduct” has the
meaning prescribed by the Fair Work Regulations
2009 (the Regulations). Regulation 1.07 provides that
serious misconduct has its ordinary meaning and
includes conduct that can be summarised as follows:
• Wilful or deliberate behaviour by an employee that is
inconsistent with the continuation of the contract of
employment;
• Conduct that causes serious and imminent risk to:
» The health and safety of a person; or
» The reputation, viability or profitability of the
employer’s business.
Regulation 1.07(3) makes it explicitly clear that the
following conduct falls within the scope of serious
misconduct:
• The employee, in the course of the employee’s
employment, engages in:
» Theft;
» Fraud;
» Assault; or
» Sexual Harassment
• The employee is intoxicated at work; and
• The employee refuses to carry out a lawful and
reasonable instruction.
If an employee engages in an act of misconduct
deemed serious enough, even for a first offence,
and the act is substantiated, the employee may be
dismissed without notice.
What is the standard of proof required?
The evidentiary principle established in Briginshaw
v Briginshaw (1938) 60 CLR 336 is relevant when
determining whether allegations of serious misconduct
can be substantiated. The Briginshaw principle
requires that the findings of decision makers must
be made upon logically probative evidence; the more
serious the allegation, the more serious should be the
consideration given by the decision maker.
Therefore, in order to justify dismissal for serious
misconduct, the allegations against the employee
would require stronger evidence than a dismissal not
based on serious misconduct. Contemporaneous
evidence, such as file notes and CCTV footage,
are useful in substantiating allegations of serious
misconduct.
Dismissal can’t be harsh, unjust or unreasonable
Despite the fact that an employer has made a
finding that an employee’s behaviour falls within
the definition of serious misconduct, the employer
still needs to ensure that the dismissal is not harsh,
unjust or unreasonable. Should an employee make
an application for an unfair dismissal remedy, the Fair
Work Commission must consider the criteria set out
in section 387 of the Act to determine whether the
dismissal was harsh, unjust or unreasonable. The
criteria is as follows.
Valid Reason
There needs to be a valid reason for dismissal related
to the employee’s conduct or capacity. Although
serious misconduct would very likely constitute a valid
reason of dismissal, the test that remains is whether
the dismissal was “sound, defensible or well founded”.
The Fair Work Commission has consistently found
that reasons that are “capricious, fanciful, spiteful or
prejudiced” can never be a valid reason.
Dismissal for serious misconduct must be based on
a well-reasoned decision with regard to the evidence
and not based on an emotional reaction to the
circumstances.

Sarah Swan EMPLOYMENT RELATIONS
Notification of reason
The reason for termination should be notified to the
employee before termination occurs. Commentary
on this criteria suggest that practically speaking,
employees should be notified before the decision
is implemented to terminate employment, since an
employer cannot inform an employee of a reason for
termination prior to deciding to terminate.
Opportunity to respond
Even in cases of serious misconduct, an employee
must be given an opportunity to respond to the
employer’s reason for the proposed dismissal.
Consideration of the employee’s response by the
employer must be had prior to the decision to
dismiss and certainly before the termination itself.
Importantly, the employee does not need to take up
the opportunity to respond, as long as the employer
can demonstrate that the opportunity was afforded to
the employee.
Presence of support person
If an employee requests to have a support person
present to assist at any discussion relating to the
dismissal, the employer must not unreasonably refuse
this request.
Any other relevant matters
In cases of serious misconduct, it has been argued
that the dismissal was not appropriate because
the penalty was a disproportionate response to
the employee’s conduct. As such, employers
should consider whether other disciplinary action is
appropriate, for example; dismissal with notice or a
final warning.
For an example of a procedurally fair process involving
allegations of serious misconduct, an employer has
CCTV footage of an employee stealing money from
a register and drinking whilst on shift. These types
of behaviours would fall into the definition of serious
misconduct, and having CCTV footage as evidence
means that this would be a well-reasoned decision,
based on the evidence, to terminate employment. The
employee is invited to a meeting at 9am and given the
option to have a support person present, for these
allegations to be put to them for their response. The
employee provides a response to the allegations. The
employer calls that meeting to an end, whilst they go
away and consider the response provided, as well as
the other evidence gathered (the CCTV footage). After
considering all the available material, the employer is
able to make a finding, on the balance of probabilities,
that their allegations of serious misconduct is able to
be substantiated. As such, they decide to terminate
the employee’s employment. A meeting is reconvened
with the employee later that same day and the
employer advises the employee of the decision to
terminate their employment, on the basis of serious
misconduct.
Lessons for Employers
Caution should be exercised by employers when
contemplating dismissal of an employee for serious
misconduct. Evidence that substantiates the allegation
of serious misconduct and documentation of the
process undertaken by the employer is vital when
defending a claim of unfair dismissal.
In addition, employers must be mindful that failure
to take any action against allegations of serious
misconduct may constitute as the employer condoning
such behaviour. In turn, this creates hurdles in the
future should the employer seek to terminate the
employee for engaging in similar behaviour.
If you are required to make a decision about whether
or not to terminate an employee’s employment for
serous misconduct, contact the QHA’s Employment
Relations Department for advice.
GROWING OUR HOSPITALITY WORKFORCE -
HOSPITALITY FIRST STEPS
QHA REVIEW | 46
The recent pandemic saw unprecedented changes
in the labour market with closures and lockdowns
impacting jobs - especially in already disadvantaged
communities. Industries such as hospitality were
heavily impacted but are now on the road to recovery
and in need of skilled workers.
The National Skills Commission survey on future
staffing expectations highlights some challenges faced
by employers and job seekers, with data collected
from February 2020 to mid-August 2020 stating
employers are having difficulty accessing skilled
workers.
In July 2021, the Back to Work program was
established to provide both financial and non-financial
support to Queensland employers and disadvantaged
jobseekers. 2022 saw the revitalised Back to Work
program, which now focuses on intensive support for
jobseekers, employers and their employees.
The industry offering of the Back to Work program is
the Growing Workforce Participation Fund. It is a new
approach for the Back to Work program, recognising
the importance of industry engagement in creating
long-term sustainable employment outcomes for
people who experience greater disadvantage in the
labour market.
The aim of the fund is to develop partnerships with
industry to build longevity and sustainability in the
workforce by empowering industry and employers
to support jobseekers from identified groups who
experience greater disadvantage in the labour market.
In October 2022, QHA was successful in an
application for funding for our Hospitality First
Steps program. Hospitality First Steps will provide a
recruitment pathway for industry, by providing entry
level training to Jobseekers
QHA Hospitality First Steps is five days of training
which delivers real learning outcomes for job seekers
pursuing entry into the hotel or hospitality sector. The
essential specialist skills delivered focus on service,
bar, restaurant, gaming and customer service.
The course will also provide Industry Awareness
Experiences. Participants will visit a hotel to study front
and back of house duties to gain insight into the type
of occupations that may be of interest to them
Two accredited units of competency are included in
this course;
• SITHFAB002 Provide Responsible Service of
Alcohol (RSA), and
• SITHGAM001 Provide Responsible Gambling
Services (RSG).
Participants receive a statement of attainment
for accredited competencies and a certificate of
attendance.
We have funding to deliver training to 140+ people
who will all be trained, ready and keen for employment.
On completion of this program, the successful
participants resumes will be available through QHA,
So if you are looking for new staff, or if you would like
to have our participants to come to see your venue
please let us know - we would love to hear from you.

ATTORNEY-GENERAL
The Honourable Shannon Fentiman MP
EMPLOYING AN APPRENTICE OR TRAINEE
QHA REVIEW | 48
With a new cohort of young people exiting school
and entering the job market searching for a rewarding
career, now is a great time to think about taking on
new staff and supporting them into a job pathway in
the hotel industry.
Hiring an apprentice or trainee can be a cost-effective
and rewarding way to increase and modernise your
workforce.
Having an apprentice or trainee join your team and
take on the more routine tasks can free up time
for your more experienced staff to carry out more
specialised and complex tasks.
It can also be a great way to bring fresh ideas and new
techniques into your workplace and help your business
find easier, faster and cheaper ways of doing things.
When you employ an apprentice or trainee in
Queensland, you may be eligible for financial support
to reduce the cost of training and supervision
throughout the apprenticeship or traineeship.
Financial support can be in the form of a one-off
support payment through the Back to Work program,
training subsidies through the Free Apprenticeships,
Free TAFE programs for under 25s and payroll tax
exemptions.
Learn more about how apprenticeships and
traineeships work and get support to set one up on
the Business Queensland website.
I also encourage you to keep in mind that new staff,
particularly those coming into the workforce for the
first time, may lack experience in workplace safety. It is
important you give them the right tools and knowledge
they need to succeed safely.
The safety of all staff and patrons at Queensland
venues is a priority for the Government.

Victoria Thomson OLGR
MITIGATING MONEY LAUNDERING
The Australian gambling industry has come under
renewed scrutiny in relation to its anti-money
laundering and counter-terrorism financing compliance
in recent years.
In late-2022 the Australian Federal Police (AFP)
charged three people after they allegedly laundered
millions of dollars in illicit cash through a Melbourne
licensed gaming venue.
The syndicate allegedly targeted patrons with high
value gaming machine credits and offered to pay them
cash to hand over their winnings.
The syndicate members would then have the venue
issue them a cheque in their name for those winnings.
That cheque would be deposited later into a bank and
attributed as legitimate gambling winnings.
Subsequent monitoring and intelligence revealed that
between November 2021 and June 2022:
• the gaming venue allegedly issued an abnormally
high number of cheques compared to other gaming
venues; and
• approximately 73 per cent of those cheques (valued
at more than $4.7 million dollars) had been issued
to a select group of patrons – all suspected to be
involved in or associated with those laundering illicit
funds.
The charges were laid following a 12-month AFPled
investigation which included significant support
from the Victorian Gambling and Casino Control
Commission, AUSTRAC and National Australia Bank.
The Office of Liquor and Gaming Regulation (OLGR)
has been considering the potential for similar scenarios
occurring in Queensland and will review a sample of
venues focusing on the risk factors identified in the
investigation into the Melbourne venue.
I would like to take this opportunity to remind licensees
of their anti-money laundering and counter-terrorism
financing obligations. Pubs should already be aware
of the significant risks of potential money laundering
activities particularly if there is insufficient oversight and
rigour into how payments are issued.
You should be regularly reviewing your transaction
records (such as cheque and large win payout
registers) to identify any unusual activity or patterns.
For example, an abnormally high number of cheques
being issued to the same individuals is what triggered
the investigation in Victoria.
It is important that you maintain your registers in
the required format as this allows transactions
to be adequately recorded and reviewed by your
organisation and regulators.
You should also ensure your frontline staff are trained
to recognise indicators of criminal activity and check
they understand your organisations’ procedures for
escalating any unusual matters to their manager or
compliance officer.
Possible indicators include a customer approaching
other patrons to purchase their winning tickets or
appearing nervous when cashing out or requesting a
cheque.
I encourage licensees to read AUSTRAC’s regulatory
guide for pubs and clubs with gaming machines for
more practical guidance on how to meet your antimoney
laundering and counter-terrorism financing
compliance obligations.
OLGR will continue to investigate strategies to mitigate
potential money laundering in Queensland pubs in
conjunction with our regulatory partners AUSTRAC
and the Queensland Police Service.
Finally, I would like to take this opportunity to remind
licensees of a 12-month trial OLGR has underway
which aims to assist licensees reduce the likelihood of
damage to and theft from their gaming machines by
showing that no money has been left in the equipment.
Under this trial, from 1 December 2022, pubs can
leave their gaming machine doors open and remove
banknote acceptors and/or coin receptacles for
storage in a secure location on the premises outside
trading hours.
The trial is voluntary and will run to 30 November
2023. To learn more, read:
• statement of regulatory intent for the security of
doors on electronic gaming
• gaming guideline for section 27 of the Gaming
Refreshing, crisp, easy
A great dry, bitter, West
Coast India Pale Ale with
a resinous mouthfeel.
There’s a hefty punch of
grapefruit followed by
citrus and pine notes.
Thanks to the dry hopping
of classic American hops,
it is the goods. Gold
Medal in the 2022 IBA
Indies.
It’s a beauty and quite the
opposite of their deep,
dank and funky Old School
West Coast IPA, which I
also happen to love. This
one is light and delicate
with delectable notes
of peach, orange and
mandarin with a soft zesty
bitterness.

MODERN SOLUTIONS
RED IPA
Banks Brewing
Always interesting beers
and equally interesting
artwork on the cans. This
one didn’t disappoint
either. Loads of tropical
fruit flavours with mango,
pineapple and passionfruit
coming to the fore. Well
carbonated with a subtle
bitterness, it is also silky
smooth thanks to the
addition of oats.
“NZ IPA ...like a jetboat
ride for your mouth!” You
have to love whoever
writes the copy for the
Balter beers. This All
Coast IPA made from
all-Kiwi hops is best
described by Head
Brewer Scott Hargrave,
“Kiwi-grown Motueka and
Nectaron hops give this
IPA a grassy, grounded
character to it, bringing
to mind the dewy green
paddocks that connect
both NZ coasts. We’ve
also been able to deliver
notes on the palate that
we haven’t put in a beer
before, like a kind of epic
mash of orchard fruits.”
A punchy tropical fruit
salad of mango, melon,
passionfruit, citrus and
bubblegum is balanced
with an awesome
bitterness with bite – that
must be the Wolf. The
addition of rolled oats
and wheat then helps to
smooth things over with a
creamy mouthfeel.
The endless variety of
IPAs these days only
serve to remind us we
should endeavour to try
as many of these most
magical beers as possible.
Modern Solutions boasts
a strong aroma of stone
fruit which carries through
to the palate with the
addition of a wicked resin
bitterness on a delicious
caramel base.
A CRAFTY BUNCH
BRISSY’S
BREWERY
BRISBANE BREWING CO CEMENTS ITSELF AS THE MOST ‘BRISBANEST’ BREWERY AROUND WITH
THEIR NEWLY CANNED CORE RANGE OF BEERS AND A HANDFUL OF DELIGHTFUL THINGS THAT
SIMPLY SUM UP BRISBANE.
QHA REVIEW | 52
Being Brisbane’s original brewpub, Brisbane
Brewing Co takes delight in capturing the essence
of Queensland’s sunniest city with its hand-crafted,
summery brews and its two primely located venues
in West End and Woolloongabba. Their brewpubs are
beautiful, easy-going places to unwind and include an
industrial chic set-up adorned with copper pipes and
woven through vines and greenery.
Founded by Michelle and Grant Clark, the brewery’s
hand-crafted beer is lovingly created with recipes
that have been developed over years using traditional
brewing processes and personal touches. Their tap
beers have a loyal following and have been a favourite
at their venues for over a decade, which is why Grant
and Michelle recently made the decision to enter the
packaged beer market for the first time.
Like many venues refreshing their businesses after
the struggles of recent years, 2022 was the year of
reinvention for Brisbane Brewing Co. Bright, summery
and bold designs make up the brewery’s new identity
in addition to a new canned core range of their three
iconic beers.
Co-founder of Brisbane Brewing Co, Michelle Clark,
said the rebranding heralds a new era for the brewery
and was designed to reflect the relaxed, sunny vibe of
the city its named after.
“When we opened our first business, we called it
Brewhouse. At that time, the name was unique and
meaningful, however these days it’s the breweryequivalent
of having the surname Smith.
“After a lot of advice from some branding experts,
we re-named it to Brisbane Brewing Co. Now our
two venues share the same overarching brand name.
The venues may be dissimilar, but they share the one
common ingredient which is our fabulous beer range,”
she said.
The brewery’s newly canned core range of beers
makes for a perfect summer collection easily enjoyed
by the pool with mates and includes the Brissy Lager,

A CRAFTY BUNCH
Walker IPA and BPA Brisbane Pale Ale. Each can
dons bright and funky art with its contents proudly
representing a city that has 300 sunlit days per year.
Just last year the brewery’s Brissy Lager and
Walker IPA won gold at the Australian International
Beer Awards and the Independent Beer Awards
respectively. Michelle said they only have three cans on
the shelf so far, but in time they plan to roll out a few
more to bring the total up to six.
“Our canned beer range has been a long time in the
making and we’re proud of the can line up thus far,”
she said
Brisbane Brewing Co is one of the longest running
independent breweries in Queensland, operating in
Brisbane’s CBD since 2005 - back when craft beer
in Brisbane was considered ‘boutique’. Grant
and Michelle wanted to draw from their experiences
of visiting European brewpubs, where the beer
was produced onsite, and introduce it to the people
of Brisbane.
In doing so, they paved the way for breweries and craft
beer in Queensland and have even championed many
local breweries, big and small, through events and
collaborations. Michelle said they purchased their first
business, Auroras, on Albert Street in Brisbane’s CBD
having just moved from the UK.
“During the four years that we had that business,
we decided to move the brewery offsite to a nearby
suburb. That triggered the formation of the new name,
Brisbane Brewing Co. When we were brewing out of
an industrial shed, it reminded us of how fond we were
of the brewpub model, and so we set our sights on a
new place for the brewery.
“In 2008 we sold our business in the city, and in 2010
we purchased a freehold pub in Woolloongabba called
the Clarence Corner Hotel and decided to rename it
Brewhouse Brisbane. It was in desperate need of a
makeover, and we spent considerable time and money
bringing it up to what it is today.
QHA REVIEW | 54
A CRAFTY BUNCH

A CRAFTY BUNCH
“It wasn’t until 2014 that we found a suitable venue
for our brewery. It was a lucky find - the site was
a disused warehouse located right on West End’s
busy Boundary Street, and we fell in love with it. A
12-month build on that site saw us create Brisbane
Brewing Co West End. It’s the native home of our
actual brewery and is a superb little venue where
customers can meld into the very fabric of the brand.
“Although what I am saying sounds like just a list of
addresses and dates, it highlights just how long we’ve
been working on our brand, refining the recipes for our
beers, establishing the team and creating a successful
long-standing business.
It’s no doubt that having one of Australia’s most
cherished cities in your name is both a blessing and a
curse. Michelle said the name of their business is one
of their strongest selling points, but also acknowledges
that adopting a big name like Brisbane comes with
responsibilities.
“We are to honour the beautiful city in which we live
through our stories, our branding and our marketing.
We have the responsibility to brew beers that the
locals love and are as proud of as we are and to keep
the beers and the business on the front foot.
“We are very fortunate to be within walking distance of
some significant nearby landmarks such as the Gabba
Cricket Ground, Princess Theatre and Southbank -
each of which generates solid footfall for our business.
“Some things on the horizon include our renovation
plans for our Woolloongabba property. The top floor
has always just been offices, but we are going to add
a deck and a couple more function rooms which we’re
very excited about.
“We are heading into the future with understated
confidence and flair. The Olympic Games will be great
for Brisbane and we’re looking forward to being in the
epicentre of the action for that.
“We’ve been working hard at it for well over 17 years
now, and fortunately we’re feeling no signs of fatigue.
We love what we do, and our to-do list just keeps on
growing,” Michelle said.
With refreshing brews and easy-going venues
surrounded in sunshine and good vibes, Brisbane
Brewing Co is truly easy to love, just like the city its
named after.
WINE
A NEW LEAF TURNS OVER
IN THE GARDEN OF EDEN
QHA REVIEW | 60
Under the watchful eye of Trevor Harch, a new
production and bottling facility has just been
completed on their Kyneton Estate property in the
gorgeous Eden Valley.
Brockenchack wines will now be wholly produced and
bottled on site as of this 2023 vintage.
Back in 2007 Trevor enthusiastically took control of this
property which was a working vineyard for well over
a century - back when it was producing only Riesling
and Shiraz wine.
Now the facility is boasting over seven varietals that
regularly feature in the national and international
awards line-up.
Some of the oldest Riesling vines in Australia are
planted on this heavenly property (planted in 1896),
alongside Shiraz vines planted in the 1930s and ‘50s.
Following Trev’s first 2008 vintage of a tiny 37-dozen
Jack Harrison Shiraz (just to see what he had), his
excitement only grew when the exceptional quality of
the wine spoke for itself.
In 2017 one of the property’s original 1880s vineyard
homesteads was completely restored, delivering luxury
bed and breakfast vineyard accommodation for the
Eden Valley region.
Situated next door to this old homestead is also
another old stone building (circa 1880s), which was
once the local butcher shop for this region’s farming
community, complete with an underground meat
hanging cellar. Years later, with the introduction of new
residents to this land, this old shopfront was converted
into a two-room brothel with red lights that you can still
see to this day. When you visit the vineyard, Marilyn
can tell you a story or two about all this history, having
had these stories passed down from generation to
generation over the years and told to her first-hand by
the lovely Mr Doddridge who in fact grew up on her
property (but has sadly since passed on).
In 2018 this old butcher’s shop-turned-brothel was
restored into the cellar door. The old working rooms
are now private tasting rooms, and the underground
meat cellar is now an underground trophy room.
Winemaker Joanne Irvine has created the three
exceptional drops we have reviewed. The trophy room
will be quickly filling up with the likes of a 98-point
Wine of the Year (Winestate Magazine) for the current
release 2022 Mackenzie William Riesling – outstanding
quality for exceptional value. The valley of Eden is
certainly providing for its followers!
