Last week I had the pleasure of hosting the 2023 Hotel Symposium with over 100<br />

members to discuss the year ahead and tackle the issues that will no doubt be shared by<br />

many of the members across Queensland.<br />

The key messages I received from members was that, while most had enjoyed solid<br />

trading through the summer period, they were beginning to fear that the constant<br />

negativity surrounding economic forecasts were slowly impacting the confidence of<br />

patrons. In most cases, year on year figures were still good, and even improving in some<br />

cases. This led me to suggest that now was the time for us as an industry to step forward<br />

and showcase all the very best we have to offer.<br />

The innovative solutions that many members have implemented to reduce food costs,<br />

find adequate workforces and source new guests is always impressive. These are the<br />

headlines that we need to be promoting.<br />

While we are sure 2023 will not be a ‘bed of roses’, it certainly has a sense of returning to<br />

normal and be the year where the innovative members of the industry will reap the benefit<br />

of creating their own headlines. We at the <strong>QHA</strong> will continue to connect members with<br />

each other and new suppliers or partners to keep growing your businesses. Stay tuned<br />

this year, as <strong>QHA</strong> rolls out some solutions on energy and other costs that can hopefully<br />

alleviate the pressures on member businesses.<br />

Finally, I have seen the enormous number of member nominations for this year’s <strong>QHA</strong><br />

Awards for Excellence and they look fantastic. Keep an eye out for tickets going on sale in<br />

May and mark your calendar for the Gala Awards night on June 19, 2023. I look forward to<br />

seeing you there!<br />

series experienced two panels in Newstead and<br />

Palm Beach where those passionate about the<br />

future of hospitality connected with industry peers for<br />

inspiration, education and innovation while enjoying<br />

delicious food and drink.<br />

Hosted and moderated by Dan Stock, senior<br />

communications manager at Mr Yum, each Table<br />

Talk event brings together three industry visionaries<br />

to share insights, stories and discuss how to best<br />

navigate the uncertainties of 2023.<br />

It was a huge day on 23 January at Maggie May<br />

supper club in Newstead, with the sold-out Brisbane<br />

Table Talk event starring Billykart Kitchen’s Ben<br />

O’Donoghue, Agnes’ head sommelier Lilly Heenan and<br />

<strong>QHA</strong>’s very own CEO Bernie Hogan.<br />

The day was full of honest, insightful and practical<br />

panel discussion, including the management of supply<br />

shortages, increasing staff education, menu pricing,<br />

reducing energy bills, grants for upgrading kitchen<br />

equipment and key trends in 2023.<br />

When asked about the uncertainty about the year<br />

ahead and the recent negativity of daily hospitality<br />

headlines, Bernie said the industry actually has a really<br />

optimistic view of 2023.<br />

“We’ve got to look forward, and that’s why 2023<br />

I think is actually a really positive year. Inflation will<br />

come off, it already is. They all talk about interest rates<br />

being terrible, but let’s be fair, they haven’t even got to<br />

historical averages – which was about 7%.<br />

“We’re okay. I think 2023 is a positive thing. I get<br />

that it’s all coming off – but its February and that’s<br />

what happens in the hospitality sector. It has always<br />

happened, so it’s not bashing up sales too much,” he<br />

said.<br />

In terms of the rising cost of produce, Ben said, as<br />

a small business owner, the best way to address the<br />

supply shortages is to have a concise, strong menu<br />

that’s focused on local and seasonal produce.<br />

“We buy stuff through French suppliers… and they’ve<br />

gone through sort of Covid supply shortages in<br />

Europe. So there’s no produce being made, there’s no<br />

workers to do it and that’s going through and driving<br />

cost up.<br />

“You just have to be flexible. So what you try to focus<br />

on is really kind of restricting or downsizing the menu,<br />

making it more concise and really focusing on local<br />

Australian produce… you’ll save costs in that way,” he<br />

said.<br />

When discussing managing a wine list during uncertain<br />

times and customer spending habits over Christmas,<br />

Lilly said there is a need in the hospitality industry to<br />

adapt to the constant flux and shift in business.<br />

“Christmas is a great time of year. It’s the time of year<br />

where everyone comes together and puts the money<br />

towards small and medium sized businesses. We take<br />

care of each other. It’s a really fantastic time because<br />

people do spend – there is money there.<br />

“But then we start in January and February, and we<br />

know that it goes into a soft period. So then it’s a<br />

reconsideration of where the money goes, how we<br />

think about the wine list, what does it look like and<br />

how the money goes towards the wine,” she said.<br />

Joining in on the Gold Coast Table Talk event was<br />

Burleigh Brewing’s CEO Peta Fielding, KickOn Group’s<br />

strategic project manager Gerard Coakley and Costa<br />

Taco co-founder Nick Stanley.<br />

The Collective in Palm Beach saw discussions on the<br />

Gold Coast food and beverage scene, staff retention<br />

strategies, cooperation with the craft beer community,<br />

sustainability, embracing new technology and keeping<br />

wastage down in the kitchen.<br />

The event series crossed over to New Zealand and<br />

had two panels in Auckland and Wellington shortly<br />

after the Brisbane and Gold Coast events on 7 and 9<br />

February. Further Table Talk events are planned to take<br />

place across the country, with no shortage of insights<br />

and passion from the many faces of Australia’s bustling<br />

and enthusiastic hospitality industry.

Two years in the planning, the new Power’s Ultra<br />

Smooth Lager is a modern take on a true classic.<br />

Power’s Ultra Smooth Lager is a new smooth and<br />

crisp beer specifically brewed for warm weather,<br />

modern tastes and with a packaging that pays tribute<br />

to the pivotal time in Queensland’s history when<br />

Bernard Power built the Yatala Brewery in 1988 -<br />

and when Power’s sponsored the Broncos in their<br />

inaugural season and beyond – and together, writing<br />

themselves into Queensland folklore.<br />

Carlton & United Breweries’ (CUB) Queensland State<br />

Manager, Ian Giles, said the relaunch of the Power’s<br />

brand marks the return of a Queensland icon that<br />

celebrated our underdog spirit and showed the rest of<br />

Australia there was nothing we couldn’t do.<br />

“Power’s was so popular that it sold out on day<br />

one and never returned to full stock, smashing all<br />

expectations to eventually capture about 20% of the<br />

Queensland beer market.<br />

“People are yearning for simpler times; the pandemic<br />

is almost over, and Queensland is well and truly open<br />

for business. Now is the right time to relaunch the<br />

Power’s brand so a new generation of beer lovers can<br />

enjoy this uniquely Queensland beer,” he said.<br />

Founder Bernard Power said it was great to see the<br />

Power’s brand returning to prominence across the<br />

state and has given the new brew the thumbs up.<br />

“Making a beer that resonates with people is a<br />

challenging thing, and I know everyone involved in this<br />

has been very careful with what has ended up inside<br />

and outside the bottle.<br />

“I am absolutely chuffed to see the Power’s<br />

brand returning. When I sold the brewery<br />

to CUB in 1993, we were more focused<br />

on the future of our staff than we were on<br />

the future of the brand. So, to see it return,<br />

and hear what it means to people, has<br />

been a wonderful thing,” he said.<br />

While some Power’s has been brewed<br />

over the past 20 years, it was available in<br />

limited quantities, with the original Power’s<br />

Bitter not brewed in over a decade and not<br />

available on tap since the early 2000s.<br />

Power’s Ultra Smooth is being brewed at<br />

the original Yatala Brewery.<br />

Along with its classic flavour profile, the<br />

new Power’s Ultra Smooth has slight<br />

bitterness, balanced by a light rounded<br />

body, slight malt sweetness, a crisp,<br />

smooth, clean finish and 4% ABV.<br />

The annual Hotel Symposium was held at The Colmslie<br />

Hotel with more than 130 attendees. The event kicked<br />

off with an industry address by the Attorney-General,<br />

The Honourable Shannon Fentiman MP, followed<br />

by an engaging Q&A session. Joining the Attorney-<br />

General was Commissioner Victoria Thomson from the<br />

Office of Liquor, Gaming and Fair Trading, as well as<br />

Anthony Crack from the Office of Liquor and Gaming<br />

Regulation.<br />

Featuring informative presentations on topics such as<br />

gaming industry trends, hospitality litigation support<br />

and a 2023 economic outlook, the event also included<br />

a panel-discussion with leading hospitality identities<br />

Chris Cornforth and Dan Brady.<br />

At the conclusion of the event, all attendees engaged<br />

in networking drinks, with thanks to Lion.<br />

The Hotel Symposium is made possible with the<br />

support of event partners IGT, Mullins Lawyers,<br />

Westpac and HLB Mann-Judd.<br />

The sound of empty spirit bottles being tossed<br />

in the bin is unpleasant enough, even without<br />

the thought of all the glass and packaging<br />

wastage happening behind the bar every day.<br />

Technology company ecoSPIRITS is set to fix<br />

that however, with their new totes and refillable<br />

bottles allowing the hospitality industry to pour<br />

quality spirits while minimizing their operational<br />

costs, carbon footprint and packaging waste.<br />

The world-first idea consists of an innovative<br />

closed-loop distribution system that eliminates<br />

single-use bottles. According to ecoSPIRITS,<br />

the world produces around 40 billion glass<br />

bottles annually, which generates 22 million<br />

tons of carbon emissions. With each bottle<br />

eliminated, the company saves at least 550<br />

grams of emissions.<br />

KENO’S LATEST SURVEY HAS SHOWN HOW SUCCESSFULLY IT REENGAGED WITH ITS HOTEL PARTNERS DURING<br />

2022, FOSTERING RELATIONSHIPS TO EMERGE STRONGER THAN EVER.<br />

Keno’s 2022 customer survey has revealed<br />

Queensland hotels continue to view Keno as an<br />

important part of their business. However, there is also<br />

opportunity to build stronger strategic relationships by<br />

increasing hotels’ understanding of and engagement<br />

with Keno.<br />

The results underlined just how well Keno reestablished<br />

strong relationships and advocacy with<br />

its hotel partners during a year of rebuilding following<br />

Covid.<br />

Its Net Promoter Score (NPS) increased nine points<br />

from +36 in November/December 2021 to +45 in<br />

October/November 2022, returning to pre-Covid levels<br />

and 44% of all venues see Keno as a business or<br />

strategic partner.<br />

Keno energetically brought back the ‘Play’ in 2022. In<br />

particular, Keno’s dedication to building on initiatives its<br />

partners say add value, including In-Venue Promotions<br />

for Local Area Marketing (LAM) and the Keno Training<br />

Platform, during the recovery period helped fortify<br />

relationships and advocacy.<br />

Keno also achieved high ratings of satisfaction<br />

from Queensland venues, with 4.2 out of 5 stars.<br />

Importantly, 89% of venues who participated stated<br />

they trust Keno, 83% love working with Keno and 82%<br />

believe Keno’s products and services enhance their<br />

customers’ experiences.<br />

The majority of Queensland venues agree Keno makes<br />

it easy for them to operate Keno, with 85% rating it at<br />

a benchmark effort level.<br />

Notably, there was a big shift from passives into<br />

promoters, evidencing how effectively Keno has<br />

reengaged with its venue partners over the previous<br />

year.<br />

A key survey highlight was that venues with higher<br />

levels of staff training and participation in LAM are<br />

significantly more likely to be promoters and have<br />

stronger relationships with Keno.<br />

And while there were high ratings of satisfaction<br />

overall, venues who ran an in-venue promotion in the<br />

previous 12 months were significantly more satisfied,<br />

just as they were in the 2021 survey.<br />

“This survey tells us that on the whole, the closer<br />

you work with us and understand our product, the<br />

better your experience and the happier you are with<br />

it,” reveals Paul Malek, Keno’s General Manager of<br />

Licensed Venue Operations.<br />

“The best message the Keno team could hope for<br />

is hearing that the work we’ve been putting into<br />

supporting our Queensland hotel partners, your<br />

customers and your communities, has been fruitful.<br />

“After the two-year Covid hiatus, we were all pleased<br />

to be back. We are absolutely delighted that, in a<br />

tough trading climate, we’ve come out with such a<br />

positive response from our hotel partners, and we are<br />

very appreciative.”<br />

Survey participants affirmed that Keno is an important<br />

part of their venue’s entertainment mix, with 72%<br />

strongly agreeing customers expect Keno as part of<br />

the venue offering.<br />

“This reminds us that whether we are a small or<br />

large part of your hotel’s turnover, we can still be an<br />

important part of your venue’s wholistic entertainment<br />

offering,” says Malek.<br />

Survey participation was strong, with 20% of<br />

active venues getting involved and almost half of all<br />

participants being senior decision-makers (49%).<br />

Also known as The QL, The Queensland Hotel is<br />

one of the state’s oldest pubs established in 1878<br />

– although it certainly doesn’t look it. Besides its<br />

old and charming timber features, the 145-yearold<br />

venue resembles a modern pub perfect for<br />

an afternoon of darts and a cold drink in the beer<br />

garden.<br />

Vicki and Tony Carter are the licensees, owners<br />

and faces of The QL. Since they took over in late<br />

2020, the venue has received a refreshing glow<br />

up with a focus on community, entertainment<br />

and relaxing outdoor functional spaces. Vicki said<br />

they take great pride running and renovating the<br />

beautiful old pub alongside their team.<br />

“Our hotel has it all – a fully-renovated and petfriendly<br />

beer garden, large outdoor and indoor<br />

dining, a great team of friendly staff, delicious<br />

food, affordable accommodation, 20 gaming<br />

machines and an attached bottle shop.<br />

“Our venue is currently undergoing a complete<br />

renovation makeover. While updating many<br />

features we are also highlighting the beautiful<br />

original features of the building, modernising the<br />

classic ‘pub vibe’ and hoping to bring something<br />

new for our patrons and community to enjoy,”<br />

she said.<br />

The QL has garnered a lot of attention in the<br />

community with its newly renovated backyard –<br />

complete with a bespoke caravan bar and beer garden<br />

that doubles as a picturesque private function area.<br />

This space is now known as the QL Backyard, but it<br />

wasn’t always that way.<br />

When Vicki and Tony first purchased the venue, the<br />

area was nothing more than a smoking area – a few<br />

tables, a tv and a patch of grass. Vicki said now,<br />

functions in the beer garden, the main bar, the red<br />

room and the pit are one of the main things that make<br />

the hotel stand out among the rest.<br />

“This was our number one project once we took over.<br />

We wanted to create a space that was beautiful,<br />

relaxing and reflected our personal styles. The<br />

transformation was a huge one, but we now have an<br />

inviting space where everyone wants to be.<br />

“A majority of our functions are booked in The QL<br />

Backyard, as it has many features including a large TV<br />

screen, two decks, a stunning patio and grassed area<br />

with twinkling lights, free pool and darts, a beer garden<br />

and of course the QL Backyard Bar.<br />

“Everyone wants their function here because we have<br />

extensive food options and so many areas to hire our<br />

guests are spoilt for choice. We cater for all types<br />

of functions, large and small, onsite or offsite. Our<br />

functions team are dedicated to creating an effortless,<br />

perfect event for our guests and we are really proud of<br />

that,” she said.<br />

Situated right on the Queensland and New South<br />

Wales border at a junction of five major highways,<br />

the hotel finds its home in the rural community of<br />

Goondiwindi on the Macintyre River. Vicki said the<br />

town is full of a diverse and supportive people whose<br />

main focus is family, farming and sports.<br />

as the Goondiwindi Liquor Accord, which successfully<br />

alongside other hoteliers allows us to create a safer<br />

community environment within our industry.<br />

“We also contribute to our community by sponsoring<br />

local sporting clubs such as Goondiwindi Rugby<br />

League Football Club, Ladies Touch Football,<br />

Goondiwindi Golf Club and Border Tarawera Cricket<br />

Club,” she said.<br />

While Vicki and Tony are committed to freshening<br />

up the venue and welcoming new patrons, they also<br />

know their community very well. QL’s bar and lounge,<br />

the pit, has always been a beloved live music spot for<br />

the locals and has never been more popular after its<br />

recent renovation.<br />

Vicki said they would love to hire some new artists for<br />

the pit in 2023, but new entertainment is not the only<br />

thing on the horizon for the hotel.<br />

“There is always something new happening here. We<br />

are looking forward to the busy year ahead with our<br />

renovations continuing and our new website being<br />

launched soon.

Despite the hospitality industry having its<br />

difficulties with staffing shortages and the<br />

Goondiwindi community experiencing a further<br />

housing crisis, Vicki said the QL is going well<br />

regardless of any roadblocks.<br />

“We consider having our doors open and<br />

being able to provide excellent food, drinks<br />

and service to our valued customers each day<br />

a win,” she said.<br />

Even after being passed down through the<br />

decades to over 33 licensees, The QL remains<br />

a cherished meeting place of the community<br />

that is down-to-earth enough for an afternoon<br />

out with mates and beautiful enough for a<br />

wedding reception in the beer garden.<br />

This month we are celebrating Queensland Women’s<br />

Week (5 to 12 <strong>March</strong> 2023) and this year’s theme is<br />

Empower her voice; Secure her future.<br />

The theme is a celebration of women and girls who<br />

have stood up to be heard and acknowledges the<br />

fundamental right of every woman and girl to equally<br />

participate and be safe in all areas of our society<br />

including the workforce.<br />

Access to secure jobs is essential for Queenslanders,<br />

especially women. We know that economic security is<br />

the cornerstone of achieving gender equality, because<br />

a lack of economic security amplifies every other<br />

barrier that prevents women from achieving equality.<br />

At its most basic level, it ensures access to a stable<br />

income, financial independence and workforce<br />

participation which are vital protective and enabling<br />

factors that contribute to safety, empowerment, secure<br />

housing, and access to better health, education and<br />

training outcomes.<br />

I am proud that Queensland’s hotel sector includes a<br />

strong workforce of women – more than 54 per cent of<br />

our pubs, taverns and bars’ employees are women.<br />

Women are making their mark in the sector, both at<br />

the bar and behind it.<br />

I would like to commend the <strong>QHA</strong> in helping set the<br />

tone for a culture that acknowledges and celebrates<br />

the skills and qualities women bring to the table.<br />

The <strong>QHA</strong>’s long-running, annual Women in Hotels<br />

event is a great example of the value it places on the<br />

impressive contributions women make to the industry.<br />

But we know there is still a long way to go. Australian<br />

women earn about $263 less per week than men and<br />

they retire with about 23 per cent less superannuation.<br />

Even in industries where women are overrepresented,<br />

women earn less than men.<br />

That is why the overarching priority of the Queensland<br />

Women’s Strategy 2022-27 is genuine economic<br />

inclusion and successful economic participation for<br />

women and girls.<br />

The Palaszczuk Government is committed to working<br />

with employers to support women into good, secure<br />

jobs. This starts with changing workplace cultures,<br />

creating equal leadership opportunities for women and<br />

men and actively promoting flexible work arrangements<br />

that break down traditional gender roles.<br />

As we look to strengthen women’s economic security<br />

and secure futures for women in the hospitality<br />

industry, there is a range of tangible actions that can<br />

be taken in workplaces to make a real difference,<br />

including:<br />

• recognising the gender pay gap and conducting<br />

regular audits of your business to assess women’s<br />

roles, seniority and pay parity<br />

• understanding that change must come from<br />

the top, and make gender equality part of core<br />

business<br />

• seeking out women for development and<br />

promotion to counter the societal conditioning<br />

that women should be in ‘second place’<br />

• introducing and promoting the uptake of flexible<br />

workplace policies such as paid parental leave for<br />

everyone, including men<br />

• calling out and acting against sex discrimination,<br />

sexist language, sexual harassment and sexist<br />

workplace norms, without causing further harm to<br />

women.<br />

DISABILITY AWARENESS TRAINING<br />

The Office of Liquor and Gaming Regulation (OLGR)<br />

is committed to working with licensees to keep your<br />

venues enjoyable, healthy and safe for everyone.<br />

More than 4.4 million Australians live with disability.<br />

The disability community is broad and diverse and it is<br />

important to recognise that not all disability is visible to<br />

others, and that people with disability have a right to<br />

access the community on an equal basis.<br />

OLGR is aware of several instances in which people<br />

with disability have been mistakenly identified as being<br />

unduly intoxicated and have been refused entry or<br />

service at Queensland licensed venues.<br />

Responsible service of alcohol (RSA) remains a key<br />

responsibility for licensees and venue staff, however,<br />

it is important to avoid general assumptions about<br />

intoxication based solely on physical or behavioural<br />

attributes.<br />

OLGR’s RSA refresher training encourages venue staff<br />

to consider people with disability when carrying out<br />

their obligations under the Liquor Act 1992 (the Act).<br />

If venue staff observe a physical or behavioural<br />

indicator of potential intoxication in a patron’s<br />

conduct, they should assess if there could be causes<br />

other than intoxication. Having an open and<br />

accessible conversation with a person can help ensure<br />

you are not unlawfully discriminating against a person<br />

with disability but also meeting your obligations under<br />

the Act.<br />

The best way to prepare your staff for these types<br />

of situations is through disability awareness training.<br />

Venue staff, especially those engaging in RSA, should<br />

undertake additional disability awareness training<br />

and seek out additional ways of learning about<br />

the experiences of people with disability through<br />

conversations and open and active listening.<br />

The Australian Government has developed free training<br />

on disability awareness which can be accessed online<br />

at disabilityawareness.com.au/about. I encourage<br />

anyone who interacts with patrons to take advantage<br />

of these training resources.<br />

Licensees looking to implement strategies to raise<br />

disability awareness in their venues are encouraged to<br />

adopt a co-design approach with people with disability.<br />

Further advice and comment can be sought from the<br />

Queenslanders with Disability Network, which provides<br />

an overarching leadership and coordination role across<br />

Queensland Government funded peak bodies.<br />

I would like to acknowledge the <strong>QHA</strong> for their efforts<br />

in promoting diversity and inclusion in hotels, including<br />

through the new Disability Inclusion and Access Award<br />

category in their annual Awards for Excellence. The<br />

Award recognises those who go above and beyond to<br />

ensure everyone’s experience is exceptional.<br />

The Queensland Government will continue to advance<br />

positive outcomes for people with disability through the<br />

recently released Queensland Disability Plan which can<br />

PROFILE<br />

It’s the David and Goliath story that is still talked<br />

about in reverent tones when people reminisce about<br />

the beer industry back in the eighties. That heady<br />

time when a publican from Queensland took on the<br />

big boys of brewing and hit the big time!<br />

You can just imagine the conversation back in the<br />

day in southern headquarters when this passionate<br />

publican by the name of Bernard Power said he<br />

was building a brewery and making our own beer. It<br />

would have been like that other bunch of Queensland<br />

upstarts, the Brisbane Broncos, who made a play for<br />

the big league and joined the Sydney rugby league<br />

premiership prior to the launch of Power’s.<br />

It’s no accident that the formation of Power’s Brewing<br />

and the launch of the Brisbane Broncos are heavily<br />

intertwined as Bernard privately provided the seed<br />

capital to the fledgling Broncos with the belief that<br />

“their founding chairman, Paul Morgan and his board<br />

were men of absolute integrity and outstanding<br />

Queenslanders with a passionate love of rugby<br />

league”.<br />

Power’s naturally became the Broncos main sponsor,<br />

and both organisations shared similar DNA – they<br />

were both set on shaking up the status quo and they<br />

each did exactly that. Together.<br />

Bernard has always known about the power of<br />

pubs and pints. This old school publican has always<br />

believed that gathering over a beer provides a<br />

powerful touchstone for conversation, connection<br />

and community.<br />

He is still fiercely parochial, loves his sport and,<br />

at 82 years young, still has that spark, drive and<br />

legendary self-belief that his OG brewery staff say,<br />

“could motivate a brick”. He also created a beer that<br />

resulted in one of the most successful launches in<br />

the world.<br />

The Power’s story is firmly enshrined in Queensland<br />

folklore. If you have the privilege to shoot the breeze<br />

over a pint with Bernard, which he still enjoys, he will<br />

downplay his role in the Power’s story and say it was<br />

all about the people behind the scenes.<br />

Bernard said he simply gathered the best in the<br />

business with a shared vision to do great things.<br />

“The secret to Power’s success was that the<br />

planning, construction and product development<br />

was in the hands of men and women who were and<br />

are acknowledged in the international brewing world<br />

as being without peer.<br />

“It is important to understand that each individual<br />

team member contributed, without exception, to<br />

the success of the brewery, and is testament to<br />

just how good Australians are when they share<br />

challenges together,” he said.<br />

Bernard has an intense loyalty to his team, many<br />

of whom after all these years continue to play an<br />

important role in this now giant state-of-the-art<br />

brewery – the largest in Australia.<br />

Bernard visited the Yatala Brewery recently to be<br />

the first to see the new Power’s brew come off<br />

the line and marvelled that the brewery continues<br />

to “provide an outstanding example of innovation,<br />

commitment to its employees, absolute quality<br />

product and just being a great Australian company”.<br />

Bernard’s encyclopaedic knowledge of the industry<br />

and the beer barons is impressive – his memories<br />

run deep, but they are firmly based around respect<br />

and reverence. However, he still fires up about that<br />

time back in the eighties that Bondy bought XXXX<br />

and changed trading terms which would have sent<br />

many of his contemporaries to the wall.<br />

That’s when you witness the fire that drove Bernard<br />

Power to take a stand and ‘BUILD OUR OWN<br />

BREWERY AND BREW OUR OWN BEER’. The<br />

implication of that statement may have lost power<br />

over time, particularly as the number of breweries<br />

in Australia continues to grow, having doubled<br />

between 2015 and 2019 from 360 to 740, but<br />

that’s Bernard’s legacy – not just the brew or the<br />

brewery, but the brewers that have been able to<br />

follow in his footsteps because of his re-writing of<br />

the industry rule book.<br />

Of course, the brewery is testimony to Bernard’s<br />

vision, as he built it on a block of dirt in the middle<br />

of nowhere – next to the long-gone Bullen’s Lions<br />

Park, with unconfirmed rumours that one member<br />

of staff back in the day enjoyed a few too many<br />

brews post-shift, took a wrong turn, and had to run<br />

for his life.<br />

When it comes to how Bernard thinks about the<br />

new brew, he has given it the thumbs up – which<br />

must have seen the CUB brew team breathe a<br />

sigh of relief behind closed doors. With Power’s<br />

returning back to bars and clubs, he is chuffed the<br />

big guys have brought back the brand, which is as<br />

Queensland as it comes.<br />

TRIAL TO IMPROVE LIQUOR AND<br />

GAMING APPLICATION TIMEFRAMES<br />

Following <strong>QHA</strong> representations on the timeliness of the<br />

application process, the Office of Liquor and Gaming<br />

Regulation (OLGR) is trialing new measures to help<br />

improve the efficiency of the licence transfer process.<br />

The undermentioned new measures have been<br />

implemented with the intention of further decreasing<br />

the processing time for licence transfers and alleviating<br />

industry concerns:<br />

• where no changes are proposed to the business<br />

model, OLGR will approve liquor licence<br />

transfer applications and new gaming machine<br />

applications on condition that a risk assessed<br />

management plan (RAMP) is provided within 60<br />

days of the licence being issued;<br />

• the same conditions will apply with respect to<br />

approved gaming plans. As OLGR has approved<br />

plans on file for all approved gaming premises,<br />

OLGR will impose a licence condition requiring the<br />

gaming plans to be provided within 60 days of the<br />

licence being issued;<br />

• to avoid delays waiting on tenancy documents<br />

(leases, title searches etc), the application form<br />

will be amended to include a declaration that no<br />

one other than the licensee has, or will have, a<br />

direct or indirect interest in the conduct of gaming<br />

should a licence be granted;<br />

• OLGR previously required evidence of settlement<br />

prior to approving an application. However,<br />

as settlement occurs in approximately 60%<br />

of applications prior to the transfer/licence<br />

assessment process being completed, where<br />

evidence of settlement is provided to OLGR<br />

during the assessment process, OLGR will not<br />

require further evidence to finalise the application.<br />

The obligation rests with the applicant to advise<br />

OLGR if/when circumstances change; and<br />

• OLGR has updated its procedures to ensure<br />

staff provide advice to an applicant of any leave<br />

periods and who to contact in their absence.<br />

The best way to ensure your application is processed<br />

efficiently is to make sure you lodge a complete<br />

application with all required supporting documents<br />

in the first instance. The greatest cause of delay in<br />

licence transfers is lodging an incomplete application<br />

or not providing the information requested by OLGR.<br />

Some of the common matters that are missed include:<br />

• incomplete application forms, including material<br />

required for police and creditworthiness checks;<br />

• missing or incorrect signatures; and<br />

• insufficient information about associates or<br />

executive officers of the applicant.<br />

The trial will run for six months, after which OLGR will<br />

review the impact and effectiveness of the changes.<br />

OLGR will also be further reviewing the Form 3 –<br />

Application for a gaming machine licence and will be<br />

seeking feedback from industry on how the application<br />

forms can be improved for users.<br />

When an employee is absent from work, they may be<br />

entitled to access a type of paid or unpaid leave. The<br />

National Employment Standards (NES) within the Fair<br />

Work Act 2009 (Act) provides employees legislated leave<br />

entitlements. Leave entitlements are also provided by<br />

applicable enterprise agreements or modern awards,<br />

such as the Hospitality Industry (General) Award 2020<br />

(HIGA). As leave is a legislated entitlement, it’s important<br />

that employers understand the different entitlements and<br />

their eligibility criteria. This article provides a high-level<br />

overview of the types of leave that an employee may be<br />

eligible to access.<br />

Annual leave<br />

Permanent employees are entitled to four weeks of paid<br />

annual leave for each year of service. Some of the key<br />

provisions include that:<br />

• annual leave accrues progressively according to the<br />

employee’s ordinary hours of work and carries over<br />

from year to year (the balance doesn’t reset)<br />

• annual leave may be taken at an agreed time between<br />

the employee and their employer. This means, if<br />

an employee has not sought agreement from their<br />

employer prior to being absent from work, they don’t<br />

have an automatic entitlement to access their annual<br />

leave for that period<br />

• an employer must not unreasonably refuse an annual<br />

leave request<br />

• an employee can only be directed to take their annual<br />

leave in specific circumstances, as permitted by<br />

the Act, the applicable modern award or enterprise<br />

agreement<br />

• employees covered by a modern award or enterprise<br />

agreement may be entitled to 17.5% annual leave<br />

loading, depending on their employment type<br />

• on termination of employment, any unused annual<br />

leave (including leave loading where applicable) must<br />

be paid to the employee<br />

An employee who meets the applicable definition of shift<br />

worker is entitled to five weeks annual leave.<br />

Personal/carers leave<br />

Permanent employees are entitled to 10 days of paid<br />

personal (sick) carers leave for each year of service. The<br />

balance accrues progressively according to the employee’s<br />

ordinary hours of work and carries over from year to year.<br />

Permanent employees may access this entitlement:<br />

• when they are not fit for work because of illness or<br />

injury; or<br />

• to provide care or support to a member of the<br />

employee’s immediate family, or household, who<br />

requires care or support because of illness, injury or<br />

unexpected emergency.<br />

The Act defines who can be a member of the employee’s<br />

immediate family or household. Immediate family includes<br />

the employee’s spouse or de facto partner (including<br />

former), child, parent, grandparent, grandchild or sibling,<br />

and a child, parent, grandparent, grandchild or sibling<br />

of a current or former spouse or de facto partner of the<br />

employee. A household member is any person who lives<br />

with the employee.<br />

Casuals do not have an entitlement to paid personal/<br />

carers leave, however they can access two days of<br />

unpaid carers leave per permissible occasion.<br />

Where an employee intends to take personal/carers<br />

leave, the employee must give notice to their employer<br />

as soon as practicable and advise the employer of their<br />

expected leave period. Where reasonable, employers<br />

can direct an employee to provide evidence to support<br />

their leave request. It must be evidence that would satisfy<br />

a reasonable person that the employee is entitled to<br />

the leave, such as a statutory declaration or a medical<br />

certificate. An employee who fails to comply with the<br />

notice or evidence requirements, will not be entitled to<br />

access personal/carers leave for the period.<br />

Employees have a workplace right to access personal/<br />

carers leave. Employers should ensure that they do not<br />

take adverse action against an employee as a result<br />

of them accessing this leave. The <strong>QHA</strong>’s Employment<br />

Relations (ER) team can provide tailored advice to<br />

members where an employee is accessing personal/<br />

carers leave for regular or prolonged periods.<br />

Compassionate leave<br />

An employee is entitled to two days compassionate leave<br />

for each permissible occasion, which includes:<br />

• to spend time with a member of the employee’s<br />

immediate family or household who has contracted or<br />

developed an illness or injury that poses serious threat<br />

to their life;<br />

• where a member of their immediate family or<br />

household dies;<br />

• where a baby in their immediate family or household<br />

is stillborn;<br />

• where the employee has a miscarriage, or their current<br />

spouse or de facto partner has a miscarriage.<br />

For permanent employees, the leave is paid at the<br />

employee’s base rate of pay for their ordinary hours of<br />

work in the period. For casual employees, compassionate<br />

leave is an unpaid entitlement.<br />

Where an employee intends to take compassionate leave,<br />

the employee must give notice to their employer as soon<br />

as practicable and advise the employer of their expected<br />

leave period. Where reasonable, an employer can direct<br />

an employee to provide evidence to support their leave<br />

request (a death or funeral notice or statutory declaration).

Long Service Leave<br />

Long Service Leave (LSL) is a form of paid leave available<br />

to all employees, including casuals. In Queensland, LSL<br />

entitlements are provided by the Industrial Relations Act<br />

2016 (IR Act). Upon 10 years of continuous service, an<br />

employee is entitled to 8.6667 weeks of paid LSL leave,<br />

and there are further entitlements after 10 years. Employees<br />

with between 7 and 10 years’ continuous service will<br />

be entitled to a proportionate payment of LSL if their<br />

employment ends for one of the reasons prescribed in the<br />

IR Act, which include where:<br />

• the employee’s service is terminated by their death;<br />

• the employee terminates their service because of<br />

their illness, incapacity or because of a domestic or<br />

pressing necessity;<br />

• the employer dismisses the employee because of the<br />

employees illness;<br />

• the employer dismisses the employee for a reason other<br />

than the employee’s conduct, capacity or performance<br />

(such as termination as a result of redundancy); or<br />

• the employer unfairly dismisses the employee.<br />

Employers should be aware that not all types of unpaid<br />

leave count towards continuous service. To assist <strong>QHA</strong><br />

members, the <strong>QHA</strong>’s ER team can complete three LSL<br />

calculations per member per calendar year at no cost.<br />

Parental leave<br />

An employee with 12 months continuous service, will be<br />

eligible to take unpaid parental leave where:<br />

• the employee gives birth or adopts a child under 16<br />

years of age; or<br />

• their spouse or de facto partner gives birth; and<br />

• the employee will have responsibility for the care of the<br />

child.<br />

To be eligible for unpaid parental leave, a casual must have<br />

12 months of regular and systemic continuous service<br />

and a reasonable expectation of continuing regular and<br />

systematic work. Eligible permanent and casual employees<br />

may access up to 12 months unpaid parental leave, and<br />

may request to extend the period for a further 12 months.<br />

When resuming work, an employee is entitled to return to<br />

their pre-parental leave position and can make a flexible<br />

work request to reduce or change their hours of work. In<br />

addition to unpaid parental leave, an employee may apply<br />

to Services Australia for parental leave pay.<br />

There are additional leave types that an employee may be<br />

eligible to access, such as:<br />

• unpaid pre-adoption leave;<br />

• unpaid special maternity leave – where an employee<br />

is not fit for work due to a pregnancy-related illness or<br />

due to their pregnancy ending;<br />

• no safe job leave – where an employee cannot work<br />

their position, and another safe job is not available.<br />

The NES details notice, evidence and eligibility<br />

requirements for employees to access parental leave and<br />

associated leave types. <strong>QHA</strong> members who have queries<br />

about parental leave requirements are encouraged to<br />

contact the <strong>QHA</strong>’s ER team.<br />

Family and domestic violence leave<br />

Effective 1 February 2023 (delayed until 1 August 2023<br />

for small business employers), all employees can access<br />

up to ten days paid family and domestic violence leave<br />

each 12-month period. Prior to this, family and domestic<br />

violence leave was an unpaid entitlement of five days.<br />

An employee can access the paid leave to deal with<br />

the impact of the family and domestic violence, where<br />

it is impractical for the employee to do so outside of<br />

the employee’s ordinary hours of work. Actions that<br />

could covered by this leave include attending medical,<br />

legal, police or counselling appointments, attending<br />

legal proceedings, accessing police services and<br />

organising alternative accommodation, care or education<br />

arrangements for children.<br />

Employers are legally required to ensure that the following is<br />

not recorded on an employee’s payslip:<br />

• that an amount paid to an employee is a payment for<br />

paid family and domestic violence leave;<br />

• a period of leave taken by an employee has been<br />

taken as paid family and domestic violence leave;<br />

• an employee’s paid family and domestic violence leave<br />

balance.<br />

the introduction of this paid leave type and the specific<br />

rules that apply.<br />

Community service leave<br />

The NES provides that an employee engaged in an eligible<br />

community service activity is entitled to be absent from<br />

work. The NES specifies an eligible community service<br />

activity includes jury service and voluntary emergency<br />

management activities. Where <strong>QHA</strong> members have an<br />

employee who may be eligible for such leave, the <strong>QHA</strong>’s<br />

ER team can provide specific advice about eligibility<br />

criteria, paid or unpaid entitlement and notice and<br />

evidence requirements.<br />

As most of you would know, I joined the <strong>QHA</strong> in April<br />

2022. I was the newest addition to the <strong>QHA</strong> family with<br />

my appointment as the training manager. The last 11<br />

months have seen some changes to our training team,<br />

so I thought I would take this opportunity to introduce<br />

you to our new members, the change to some roles<br />

within the team and a brief overview of what we do.<br />

Pam Hague<br />

Pam joined us in mid-November as a trainer and<br />

assessor. Her main role is delivery of both face-toface<br />

and live online learning across Responsible<br />

Management of Licenced Venues (RMLV), Customer<br />

Liaison Officer (CLO) and Gaming Nominee Training<br />

(GNT). Pam is an experienced and professional<br />

trainer with a demonstrated history of working in the<br />

Hospitality Industry and Vocational Education and<br />

Training (VET) sector. Skilled in coaching, hospitality,<br />

training, assessment, team building, training delivery<br />

and management, she is a strong education<br />

professional and a former flight attendant with strong<br />

communication and customer service experience.<br />

Becky Davidson<br />

Becky joined <strong>QHA</strong> in December and has taken on<br />

the role of training administration assistant. Becky is<br />

responsible for taking bookings, printing certificates,<br />

assisting the trainers with preparing learning materials<br />

needed for training and dealing with general enquiries.<br />

Becky’s role will develop as her knowledge of the<br />

Registered Training Organisation (RTO) world grows.<br />

Becky moved here from across the ditch to play rugby<br />

in Brisbane. After playing for the mighty Tasman Makos<br />

in New Zealand she was excited to get involved with<br />

Queensland rugby. She completed studies at Lincoln<br />

University with a bachelor’s in Sports and Recreation<br />

Management and had been working in sports<br />

administration. She’s very excited to be involved in<br />

something new with the hospitality industry and get to<br />

know our wonderful members.<br />

Change in role: Susan Sykes<br />

Many of you would be familiar with Susan as another<br />

strong and experienced trainer. Sue has been with<br />

<strong>QHA</strong> for nearly two years and for most of that time<br />

held the position of training coordinator. She is also<br />

a hospitality trainer with an Advanced Diploma of<br />

Hospitality Business Management.<br />

In September, Sue took on the role of trainer/assessor<br />

and compliance officer. There’s a lot of compliance<br />

involved with delivering accredited and non-accredited<br />

training. Not only is Sue a great trainer, but her<br />

knowledge of the RTO world is fantastic. This, along<br />

with her passion for training, made this a natural<br />

position for her to fill.<br />

the Queensland Government through its Growing<br />

Workforce Participation Fund. The <strong>QHA</strong>’s Training team<br />

offers a range of training sessions, covering current<br />

work health and safety information, obligations and<br />

advice. Training can be provided online, in-house or in<br />

various locations across Queensland.<br />

The outlook from the recent Colliers’ report on the<br />

accommodation supply in Australia’s ten major<br />

markets demonstrates they have continued to expand<br />

with the opening of around 3,420 rooms in 2022,<br />

representing a moderation from 2021.<br />

2023 now presents as the peak of the hotel<br />

development cycle. Growth in hotels is being offset<br />

by a reduction in Short Term Rental Accommodation<br />

(STRA) with a 15% reduction in active rentals over the<br />

past year across all markets. This trend is helping to<br />

alleviate any potential impairment from increased hotel<br />

supply and is a positive outcome for hoteliers.<br />

Sustainability considerations are also starting to make<br />

an impact. New government policy has the potential to<br />

further delay construction commencement as owners<br />

and operators tackle purposeful change and focus on<br />

sustainable initiatives.<br />

Chinese tourists, a very sought-after market by all<br />

competitors and one that moves quickly and to scale,<br />

are now able to travel again from last month with<br />

spending by international visitors predicted to surpass<br />

its pre-pandemic levels towards the end of this year<br />

or by early 2024. Spending in 2019 was just shy of<br />

$45 billion and is predicted to rise to almost $49 billion<br />

by 2027 according to Tourism Australia. Given more<br />

than 1.43 million Chinese tourists visited Australia in<br />

2019 and spent $12.4 billion, the ability of Chinese<br />

citizens to go abroad again is something the Australian<br />

tourism industry has been waiting for – even with the<br />

fraught issue of Chinese travellers requiring a negative<br />

Covid-19 test result to enter Australia.<br />

It’s good news for Australian tour operators who have<br />

felt the loss of their biggest foreign source market.<br />

From January to October last year, the first year of<br />

relatively easy travel in and out of Australia since<br />

<strong>March</strong> 2020, international visitors recovered to more<br />

than 34 per cent, while Australians travelling overseas<br />

recovered to 43 per cent according to Tourism<br />

Research Australia data. That meant about 3.2 million<br />

foreign tourists arrived in Australia, versus more than

4.3 million Australians heading overseas on shortterm<br />

trips. It might still be a far cry from 2019 when<br />

9.4 million incoming tourists (led by Chinese travellers)<br />

virtually made up for more than 10 million outgoing<br />

Australians.<br />

Deloitte’s Australian tourism sector leader Adele<br />

Labine-Romain hails the inbound figures as a ‘pretty<br />

impressive achievement after almost two years of<br />

closed borders’. This was especially so given Australia<br />

is an expensive long-haul destination for most foreign<br />

tourists – especially those flying from the northern<br />

hemisphere. Australians are among the most frequent<br />

travellers to be found anywhere, and our wanderlust<br />

continues, despite economic headwinds. It’s evident<br />

we plan to keep spending on leisure travel according<br />

to the Deloitte Global State of the Consumer Tracker<br />

as of last October.<br />

“Inflation and the cost of everyday purchases is topof-mind<br />

according to their data, but the intention to<br />

spend on travel is staying firm, and that is across<br />

all travel expenditure price points. We are not easily<br />

dissuaded from our plans to travel,” said Ms<br />

Labin-Romain.<br />

The Accommodation Division meetings for 2023 have<br />

now been set with the first meeting on Tuesday 21<br />

February for the Brisbane General Managers and<br />

Thursday 23 February for the Gold Coast General<br />

Managers. Kurt Thomas, Director Hotels Colliers<br />

will be the presenter at both meetings. Given the<br />

beginning of a new year and 2022 was record<br />

breaking in terms of RevPar led by ADR, it’s ideal to<br />

have a presenter who could talk to this context and<br />

demand factors that may need to be considered in<br />

2023 to continue the drive forward for RevPar.<br />

This year the annual Hotel Market & Economic Outlook<br />

event will take on a somewhat different and shorter<br />

style. It will be a breakfast event with an update<br />

from STR, an economist, an update on the Tourism<br />

Accommodation Australia (TAA) /Accommodation<br />

Australia (AA) amalgamation and two additional<br />

presenters pertinent to the accommodation sector<br />

who will provide insights for the purposes of forecasts<br />

and budgets. These events will be delivered in<br />

Brisbane on Tuesday 18 April, the Gold Coast on<br />

Thursday 20 April and FNQ on Tuesday 15 August.<br />

Another addition in this year’s schedule is the holding<br />

of a boardroom lunch in Brisbane Tuesday 13 June<br />

and the Gold Coast Thursday 22 June with both<br />

events including a keynote presenter. Other than<br />

these, additional bimonthly meetings will continue<br />

in Brisbane, Gold Coast and Far North Queensland<br />

together with two meetings planned this year on the<br />

Sunshine Coast.<br />

Thank you to those who have renewed their 2023<br />

membership. An increase in membership levies is<br />

never ideal as we see to minimise costs to members.<br />

However, in order to sustain our Association and<br />

continue to advocate for the industry at a high level<br />

there was a necessary increase in 2023 renewals.<br />

Whilst as a membership organisation we understand<br />

any increase is never ideal as we wish to always<br />

minimise costs to members our stated goal is to keep<br />

representing and advocating for members at a high<br />

level not just this year but well into the future.<br />

Finally at the time of this article the amalgamation<br />

of TAA with AA is on track to take place on 1 July<br />

2023. This amalgamation will result in the <strong>QHA</strong>’s<br />

Accommodation Division doubling not only in<br />

membership numbers but also with an end result of<br />

27,500 accommodation rooms.<br />

Months down the track of an instrumental<br />

renovation, Central Lane Hotel has grown into its<br />

freshly planted greenery and has since made a<br />

name for itself in the hospitality industry by winning<br />

Regional Hotel of the Year and other awards at the<br />

2022 <strong>QHA</strong> Awards for Excellence.<br />

The Gladstone hotel’s incredible success and<br />

reputation as a welcoming pub for all can be<br />

attributed to a single decision made by the owner<br />

of Central Lane Hotel, Rick Adams, five years ago.<br />

During renovations in 2020, Rick said he decided<br />

to eliminate the hotel’s strip club upstairs in favour<br />

for more unique, vibrant and accessible pub<br />

experiences.<br />

“We received the pub in 2012 when it was called the<br />

Port Curtis Hotel. We did a name change in addition<br />

to a bit of renovation. Other than that we traded it as<br />

it was for those first five years until 2017.<br />

“It was then that I really started to work on a big<br />

change. I wasn’t sure what I wanted to do, I just<br />

knew that I couldn’t keep trading it as it was, as<br />

I didn’t think there was longevity in the current<br />

business model.<br />

“So that’s when I started to look around and where<br />

the idea for a bowling lanes came from,” he said.<br />

With a full-blown bowling alley and karaoke room,<br />

Central Lane Hotel is definitely not your typical pub<br />

location.<br />

While still a hotel with gaming machines, TAB, live sports and a<br />

smart yet casual bar and bistro, the venue also commits to a perfect<br />

balance of fun and relaxation for all ages and personalities. Rick said<br />

at the start, a lot of people disagreed with his decision and asked<br />

why he would surrender the strip club licence and replace it with<br />

lanes and bowling balls.<br />

“The reality of it is, I didn’t see a long-term future in it. So we’ve got a<br />

different model, and I think it’s more sustainable. We’ve got so much<br />

repeat business now, which anyone in hospitality knows is the key,<br />

so we are over the moon about that.<br />

“Now that we also accommodate young patrons and their families<br />

with the bowling lanes, we find people waiting at the door before<br />

traditional opening hours and we are near capacity by 10:30am.<br />

“We had a function the other day for a local accounting firm’s 10-<br />

year anniversary. They invited over 100 people and to celebrate they<br />

did a little bowling tournament. We opened upstairs and provided<br />

food, beverages and prizes. It was very cool and exactly what<br />

Central Lane is all about,” he said.<br />

Rick’s decision led to a major renovation for Central Lane Hotel<br />

which started in October 2020. Constructed by ICM and designed<br />

by BSPN, the renovation improved the overall layout and atmosphere<br />

of the pub – making it the stylish venue it is today and propelling it<br />

into winning the Statewide Best Redeveloped Hotel award at the<br />

2022 <strong>QHA</strong> Awards for Excellence.<br />

Rick’s personal touches for Central Lane Hotel also included a<br />

Banksy-inspired art piece on the side of the venue and a giant sign<br />

of Castlemaine XXXX’s mascot, Mr Fourex, on the roof of the pub.<br />

Rick said after Covid, they were on a tight budget, but BSPN worked<br />

with them, and as a result they had a nice collaboration.<br />

“The venue really needed a renovation. For example we had the<br />

kitchen upstairs, so every bit of food we cooked we had to be sent<br />

down in a dumbwaiter in a space that only allowed for eight plates.<br />

The insufficiencies of that were enormous – especially when we had<br />

tables of 20.<br />

“So we moved the kitchen downstairs, and now we use the<br />

dumbwaiter to send function food up, which is a lot easier. The<br />

renovation also allowed us to remove external walls, create<br />

a car park and so<br />

much more.<br />

With a renovated bar and bistro also came a revitalised<br />

menu, which had garnered a good enough reputation<br />

in the community that Central Lane Hotel took out the<br />

Regional Best Bistro award at the 2022 <strong>QHA</strong> Awards<br />

for Excellence.<br />

Rick said their food and venue has been well<br />

embraced by the community with eclectic bunches of<br />

people coming through the hotel doors every day.<br />

“We’ve really been building our food business, to the<br />

point where we now have a few signature dishes that<br />

have become very well known within the community.<br />

It’s just simply good food.<br />

“The general feeling when we won those awards was<br />

great – it just blew our minds. It was quite a good year<br />

for us really and a treat to be recognised in that way.<br />

All of the positive feedback is very rewarding.<br />

“We often get really nice praise for our staff. I am big<br />

on staff culture by design. We are a modern venue, but<br />

we really work on those traditional hospitality values,<br />

and that resonates through all of the staff,” he said.<br />

It’s clear that Central Lane Hotel has come a long way<br />

from its beginnings as a late-night venue.<br />

Rick said the venue was made to be a place that<br />

is welcoming to anyone from the entire community<br />

– from nine-year-olds having birthday parties, to a<br />

group of mates having a catch-up with some beers to<br />

grandparents bowling with their grandchildren.<br />

“We are creating a safe pathway for younger patrons<br />

where they are comfortable coming to our venue<br />

because they’ve already been visiting for years.<br />

“Overall, we just thought outside the box. We have a<br />

very up-to-date gaming room and that is a big part of<br />

any modern-day pub, and we have good, traditional<br />

service values,” he said.<br />

Over years of thoughtful decision making, planning<br />

and curating, the pub has managed to handcraft a<br />

welcoming atmosphere for all – complete with their<br />

signature food and drink, amazing service and of<br />

course who could forget the bowling.<br />

“It’s kind of neat, being able to welcome everyone<br />

including the next generation of pub-goers. I think<br />

that’s where we have really set ourselves apart. That’s<br />

what makes us stand out in the industry and that’s<br />

why we are more than just a pub,” Rick said.

The awards capped off another incredible year<br />

for Hostplus.<br />

Our merger with Statewide Super saw an additional<br />

140,000 members, 24,000 employers and $11 billion<br />

transferred into Hostplus. The merger has confirmed<br />

our position as a truly national and multi-sector<br />

industry fund.<br />

We also made a formal commitment to transition<br />

our investment portfolio to net zero emissions by<br />

2050. This move puts Hostplus in line with Australia’s<br />

commitment to the Paris Agreement. We’re aiming to<br />

help protect members’ retirement savings as the world<br />

adapts to a lower-carbon future.<br />

Across the year, we also introduced three new<br />

investment options, improved our Member Online<br />

platform and launched a retirement projection<br />

HOTEL FINANCING 101:<br />

REGISTERING AND RELEASING SECURITIES<br />

There are many ways in which a business owner may<br />

be able to finance the acquisition or refurbishment of<br />

their hotel business. When funds are borrowed, it is<br />

common for the lender to require security, or several<br />

forms of security, to secure the debt against the<br />

borrower. This security may be over the borrower’s<br />

personal assets, business assets, real property or<br />

a combination of these. In this article, we discuss<br />

the most common forms of security which may be<br />

required from hotel owners when obtaining a loan.<br />

Mortgage<br />

A lender may require a mortgage against the borrower<br />

to be recorded with the Queensland Titles Registry<br />

over the business premises until the debt has been<br />

paid in full, where the borrower owns the land. Whilst<br />

the borrower will still be the legal owner of the land,<br />

it is subject to the terms of the mortgage which has<br />

been granted to the lender.<br />

A mortgage will usually include terms that prohibit<br />

the borrower from leasing, sub-dividing or otherwise<br />

changing the use of the land without first obtaining the<br />

lender’s consent. Where a borrower defaults in their<br />

repayments of the debt, under the mortgage the lender<br />

will have the right to take possession of the land and<br />

sell it to recover the outstanding balance of the debt.<br />

Where the hotel premises is leased from a third party,<br />

the lender may require a mortgage over the<br />

registered lease of the hotel premises which would<br />

generally be accompanied by a side deed (or right of<br />

entry agreement). Where the business owner defaults<br />

in their repayments, the mortgage and the deed<br />

(which creates a contractual relationship between<br />

the lender and the landowner), will allow the lender to<br />

enter into possession of the business premises and<br />

deal with the business in accordance with the terms of<br />

the mortgage.<br />

Personal guarantee<br />

Personal guarantees are commonly requested from<br />

directors and shareholders of a company borrowing<br />

money. This form of security allows a lender to pierce<br />

the corporate veil and requires the guarantor to<br />

personally guarantee the payment of debt and other<br />

obligations of the borrower. Where the borrower<br />

defaults in repayments, the lender may call upon the<br />

personal guarantee which requires the guarantor to<br />

remedy such default.<br />

A personal guarantee may be limited to a certain<br />

amount of money or duration. It is important to fully<br />

understand the extent of any personal guarantee, in<br />

particular whether the personal guarantee includes a<br />

‘charging clause’. This ‘charging clause’ usually grants<br />

the lender the right to secure their interest against the<br />

personal assets of the guarantor, including over real<br />

property owned by the guarantor in their name. The<br />

guarantor must also carefully review and receive legal<br />

advice on any guarantee documents accordingly.<br />

Registered security<br />

The lender may also decide to register their security<br />

against the borrower on the Personal Properties<br />

Securities Register (PPSR) if the terms of the loan<br />

provide for this. Depending on the purpose of the loan,<br />

the security interest may be registered against specific<br />

assets of a business or over all assets of a business<br />

(which is commonly the case where a major bank is a<br />

financier for the acquisition of hotel businesses).<br />

By registering their interest, the lender has assured<br />

priority for payment over unsecured creditors of the<br />

borrower in the event the borrower is unable to pay its<br />

debts and is wound up.<br />

Release of securities for sale<br />

In the event of a sale, it is a requirement that the hotel<br />

business (and the land, where applicable) is transferred<br />

to a purchaser unencumbered. If a business has<br />

borrowed money and granted any of the above forms<br />

of security to a lender, it must be able to provide<br />

evidence that releases the security in so far as it relates<br />

to the business and the assets being sold.<br />

In hotel and pub transactions, this will often require<br />

pre-emptive communication with secured lenders to<br />

ensure that the lender releases their secured interest in<br />

time for settlement in so far as it relates to the business<br />

and assets being sold.<br />

Vancouver, a city surrounded by mountains and sea that provides<br />

awe-inspiring vistas on the grandest scale. It also happens to<br />

be a bustling hotbed of hop-fused alchemy and that’s what had<br />

me doubly excited about visiting Canada’s coastal gem. I must<br />

confess though, “excited” is probably a gross understatement,<br />

“jumping out of my skin” is a more fitting description. I couldn’t<br />

wait to traipse around the city, talking in all its beauty before<br />

finishing the day with some delectable, knock-your-socks-off<br />

IPAs. It was almost too good to imagine. Aside from the famed<br />

Granville Island precinct, which I will talk about in another edition,<br />

the area I was most keen to check out was Gastown in<br />

downtown Vancouver.<br />

Gastown is the original settlement that became the core of the city<br />

of Vancouver. Its name funnily enough originates from a publican.<br />

How many can lay stake to such a claim? As legend has it,<br />

“Gassy” Jack Deighton, a Yorkshire seaman, steamboat captain<br />

and bartender arrived in 1867 to open the area’s first saloon. He<br />

was famous for talking a lot (“or gassing”) and so his saloon soon<br />

became known as Gassy’s town. The name evolved into Gastown<br />

and the area is now regarded as Vancouver’s first neighbourhood.<br />

Gastown quickly became a general centre of trade and<br />

commerce thanks to it being the site of the seaport and the<br />

Hastings Mill sawmill.<br />

There was no shortage of loggers, fishermen and shipping crew<br />

keen to patronise the saloons and local shops. However, in the<br />

60s, the area was earmarked to be demolished to make way<br />

for a major freeway into the city’s downtown. Citizens became<br />

concerned with preserving Gastown's distinctive and historic<br />

architecture. A campaign led by local businesspeople and<br />

property owners thankfully put an end to its destruction and<br />

Gastown lived on.<br />

Today Gastown is a mix of hip contemporary fashion and interior<br />

furnishing boutiques, restaurants, brewpubs, bars, internet<br />

businesses and professional offices, along with art galleries,<br />

music and art studios, film and acting schools. Its heritage listed<br />

buildings and cobblestone streets add to its eclectic appeal.<br />

Its most famous, though nowhere near its oldest landmark is the<br />

steam-powered clock on the corner of Cambie and Water Street.<br />

It was built in 1977 to cover a steam grate, part of Vancouver's<br />

distributed steamheating system. It was a way to harness the<br />

steam and to prevent street people from sleeping on the spot in<br />

cold weather. Apparently the original design was faulty though<br />

and it had to be powered by electricity after a breakdown. The<br />

steam mechanism was then completely restored with the financial<br />

support of local businesses (as it had become a major tourist<br />

attraction) and is now promoted as a heritage feature although it is<br />

of modern invention.<br />

Anyhow, back to those microbreweries and watering holes<br />

specialising in local craft beers. The three I was most keen to<br />

visit were renowned for their beers, unique décor and ambience.<br />

Neither of them failed to disappoint.

Sprawling two floors with 20 rotating taps pouring<br />

fresh steam beer from copper fermenters, this place<br />

is the stuff of dreams for lovers of equisitly crafted<br />

brews. An iconic part of the craft beer community for<br />

more than 25, Steamworks have a myriad of brews<br />

to wet your whistle from traditional styles like Pilsner,<br />

Lager and Pale Ale through to their multi awardwinning<br />

Flagship IPA that I was hankering after - rest<br />

assured, it sent my tastebuds on a heavenly journey<br />

I will not forget anytime soon. Perfectly paired classic<br />

modern day pub fare and three distinct dining areas<br />

sees the venue cater for all tastes and all kinds of<br />

patrons, whether it be couples, business meetings or<br />

large groups.<br />

Adding to the appeal is undeniably the steampunk<br />

décor. It’s not only super cool it is fitting considering<br />

the brewpubs origins. The original steam piping in<br />

the building was found by accident but soon became<br />

the inspiration for their unique proprietary steam<br />

brewing method that has helped the company garner<br />

numerous industry accolades.<br />

The beer, the food, the service and the view over<br />

Vancouver harbour... all receive a huge thumbs up<br />

from me.

Given the name I was initially confused whether<br />

it was a pub or a housing commission building<br />

but this was soon rectified when I entered the<br />

premises, and a super friendly waitress promptly<br />

took our order. You have to hand it to the<br />

Canadians, their service manner and friendly<br />

nature are exemplary.<br />

The Lamplighter is located on the ground<br />

floor of the storied Dominion Hotel (est. 1899).<br />

This beautiful historic brick-lined building is a<br />

Vancouver pub institution famed for its local craft<br />

beer focus paired with handsome cocktails and<br />

a humble yet modern food menu. It’s lively, easygoing<br />

and welcoming and just my scene. What’s<br />

most interesting however is the structural change<br />

the pub underwent as a result of the recent<br />

pandemic.<br />

The Donnelly Group which started 23 years after<br />

its launch in 1999 with a single pub is now a<br />

national business which includes cannabis stores<br />

and a brewery, barber shops, public houses<br />

(of which the Lamplighter is one), nightlife, and<br />

events all under one umbrella.<br />

The company did more than survive the<br />

pandemic, they used the lessons learned over the<br />

past two years and funnelled them into building<br />

new foundations intended to carry it forward<br />

through another 23 years.<br />

The re-founding came with the launch of<br />

Freehouse Collective, a new name to house the<br />

hospitality businesses. The identity is explained as<br />

fusing two ideas together being: the “Free House”<br />

as a nod to pub history when publicans staked<br />

independence from brewery influence, freeing<br />

them to focus on personalised guest experiences,<br />

and “Collective”, to reflect the diverse and<br />

independent hospitality brands.<br />

More than simply a change of name, it is<br />

philosophy that now guides and inspires the<br />

people within the business who are the backbone


of the company as they spark new concepts and<br />

create indelible guest experiences. Company sayings<br />

such as “good hospitality is seen. Great hospitality is<br />

felt”, “we serve people for a living. It’s our passion”<br />

and "be true to yourself and your neighborhood, the<br />

people will follow", are clearly more than just that,<br />

their staff have clearly bought in are living this ethos<br />

and it shows.<br />

Equally impressive is their social responsibility<br />

arm, the Donnelly Fund. It takes this ideal to the<br />

communities in which they do business as a social<br />

enterprise which empowers their people to foster<br />

a culture of giving. This value is the belief that<br />

philanthropy, like hospitality, is about enriching<br />

people’s lives through service and compassion and<br />

so it is over the past 20 years the Donnelly Fund has<br />

worked in the neighbourhoods and communities<br />

where the group does business.<br />

SIX ACRES<br />

Six Acres is a stunning venue with exceptional<br />

service. Quaint, cozy, rustic, warm and inviting, there’s<br />

many superlatives to label this pub with but it is the<br />

exceptional food and drink, which elevates it to another<br />

level. Upon entering you soon understand how Six<br />

Acres has become incredibly popular with locals and<br />

tourists alike. This gastropub doesn’t overcomplicate<br />

its offering, it simply does what it does exceptionally<br />

well. Located in the heart of Gastown right beside the<br />

statue of “Gassy” Jack, it is a must visit when venturing<br />

to Vancouver.<br />

WINE<br />

XANADU MARGARET RIVER VINEYARD<br />

Xanadu was established by an Irishman who arrived<br />

in Margaret River in 1968 with his wife Eithne and was<br />

inspired by the pioneering spirit of the region. In 1977<br />

Dr John Lagan planted the first of many vines and the<br />

potential of this Margaret River plot was only just being<br />

realised.<br />

A state-of-the-art restaurant and cellar door was<br />

constructed in the early 2000s with extensive use of<br />

local granite and gneissic rock excavated during the<br />

planting of the original vineyard.<br />

From 2005 under the new ownership and clear<br />

direction of the Rathbone wine group, it was at this<br />

time that winemaker Glenn Goodall stepped into the<br />

role of Senior Winemaker after having been with the<br />

team since 1999.<br />

Glenn was to focus on quality and embrace the<br />

distinct characteristics of the Margaret River region<br />

and gently guide the wine from vine to bottle instead<br />

of beating it into submission. With multiple national<br />

awards to his credit – he’s not only doing a great job,<br />

but building a fantastic brand.<br />

End of vintage is a great time to connect with other<br />

wine producers in the region and swap notes whilst<br />

sampling the product of their toils. The Inter winery<br />

ping pong challenge was just one of these occasions.<br />

Let`s just say Glenn was one to watch for future<br />

events. Great right hand smash, probably from all that<br />

cap plunging and stirring of lees!<br />

Deep crimson with a nose of<br />

blackcurrant and mulberries,<br />

entwined with hints of mocha,<br />

black olive and bay leaf. The<br />

generous palate offers a core<br />

of inky berry fruits, cassis<br />

and blood plums. Builds up<br />

to a chocolaty firm finish with<br />

some tobacco leaf notes<br />

delivered on supple tannins.<br />

Perfectly approachable<br />

in its youth, this wine will<br />

comfortably cellar for several<br />

Semillon<br />

Passionfruit, crunchy melon<br />

and gooseberry – they’re all in<br />

there creating quite an aroma.<br />

The palate is zingy and crisp,<br />

lemon thyme, guava, kaffir<br />

lime and a little spice. The<br />

influence of wild fermentation<br />

in barrel has added complexity<br />

and weight to this otherwise<br />

quintessentially crisp, fruit<br />

driven blend. Great consumed<br />

in its youth, but with careful<br />

cellaring will gather complexity.<br />

XANADU VINEWORK<br />

2020 Chardonnay<br />

This elegant yet powerful<br />

Chardonnay has aromas of fresh<br />

pears, nectarine, and citrus fruits<br />

with underlying hints of jasmine,<br />

oyster shell and oatmeal. The<br />

elegant palate is medium bodied,<br />

displaying white peach and<br />

tangy grapefruit, complimented<br />

by a layer of texture derived<br />

from lees stirring whilst in<br />

barrel. The vibrant fruit and<br />

crisp acid backbone combine<br />

to focus the wine perfectly<br />

to a lingering fruit finish. An<br />

exceptional wine at this price<br />

point.<br />

Pubs, Pots & Profits Forum - Bowen<br />

A thank you to Bruce and Halina Hedditch and their<br />

team at the Larrikin Hotel Bowen for hosting the <strong>QHA</strong><br />

& CUB Pubs, Pots & Profits forum. The event was well<br />

attended from hoteliers who received insights from<br />

the <strong>QHA</strong> and CUB teams, along with presenters from<br />

Cooking the Books and Bunnings Trade focusing on<br />

reducing costs and maximising profits. The next Pubs,<br />

Pots & Profits event will be held in July.<br />

Footy Tipping Competitions<br />

It is a time of year that football followers love, and if<br />

you will be one of the hundreds of venues hosting footy<br />

tipping competitions please contact the <strong>QHA</strong> if you have<br />

any questions in regard to your prizes or promotions. We<br />

Gold Coast Region Hoteliers Meeting<br />

On Tuesday 14 <strong>March</strong> the <strong>QHA</strong> will host a publican’s<br />

lunch for hoteliers and their key staff from the<br />

Gold Coast region. The lunch will feature business<br />

development presentations from a range of <strong>QHA</strong><br />

staff and corporate partners. PFD Food Services will<br />

showcase their products and provide a delicious lunch<br />

for all attendees, and our beverage partners will ensure<br />

everyone remains hydrated. Details of the lunch have<br />

been sent to all venues around the Gold Coast region<br />

and you still have time to register your attendance.<br />

One-off extended hours permit – Easter<br />

For any hoteliers looking to utilise a one-off extended<br />

hours permit over the Easter long weekend, remember<br />

you must have your application in to OLGR by no later<br />

than Friday 17 <strong>March</strong>. Conditions for these applications<br />

can be found on the OLGR website through your client<br />

portal. If you intend on featuring live music at your event<br />

you can also apply for a temporary removal of noise<br />

conditions permit.<br />
