With its origins in “Abraham’s bread,” enjoyed by the<br />
Hebrews and Egyptians over five thousand years ago,<br />
pizza as we know it today developed its toppings, flavors<br />
and round shape from the Italians. History has it coming<br />
to Italy through the harbor in Naples. The novelty was<br />
accepted by the Neapolitans, who soon added their own<br />
touch by putting tomatoes, cheese and herbs over the<br />
thin dough made of wheat flour and water. Popular and<br />
cheap, the delicacy soon started to be produced and<br />
sold on the streets.<br />
The first recorded name for pizza is Margherita, made<br />
with red tomatoes, white mozzarella and green basil,<br />
a tribute to the late 19th century queen of the same<br />
name. This milestone marks when pizza was first tried<br />
by, and then captured the taste of, the upper classes of<br />
that time.<br />
A pioneer in specialized pizza houses, Old Pizzeria<br />
Port’Alba, founded in 1830 in the city of Naples, is<br />
still operating at the same address. However, the<br />
dissemination of pizza and the spread of pizzerias around<br />
the world only happened<br />

Brought to America by<br />

started to be sold in the<br />

New York. It was first sold<br />
on doorsteps and avenues<br />
and later gained space in cafes and grocery stores.<br />
Nowadays, large pizza chains have multiplied all over<br />
the world. In Brazil, pizza is enjoyed throughout the<br />
country, with Sao Paulo being the city with the second<br />
largest pizza consumption in the world, after New York,<br />
which also has a large number of Italian immigrants.<br />
The versatility of this food, with its many possible<br />
variations and combinations of toppings and ways of<br />
preparing the dough, continues to win over people of all<br />
ages and cultural backgrounds.<br />
Nacida a partir del Pan Pita, apreciado por hebreos<br />
y egipcios, hace más de cinco mil años, la pizza que<br />
conocemos hoy sólo recibió los condimentos, sabores<br />
y la forma redonda por interferencia de los italianos.<br />
La historia marca su entrada en Italia por el puerto<br />
de Nápoles. Aceptada por los napolitanos, que luego<br />
le dieron su toque agregándole tomates, quesos y<br />
condimentos a la masa fina de harina de trigo y agua,<br />
el manjar popular y barato comenzó a producirse y<br />
venderse en las calles.<br />
La primera pizza cuyo nombre se registró es la<br />
Margherita, hecha con tomates rojos, mozzarela blanca<br />
y albahaca verde, en homenaje a la reina que lleva el<br />
mismo nombre, al final del<br />
siglo XIX. Ese fue el marco<br />
para que el alimento<br />
comenzase a probarse y<br />
finalmente cautivase el<br />
paladar de las clases de<br />
prestigio de la época.<br />
Precursora de las<br />
casas especializadas en la<br />
preparación de pizzas, la<br />
antigua Pizzeria Port’Alba, fundada en 1830, en Nápoles,<br />
continúa funcionando en la misma dirección. Pero, la<br />
diseminación de la pizza como alimento y de las pizzerías<br />
en los demás países ocurrió sólo al final de la Segunda<br />
Guerra Mundial.<br />
Llevada para América del norte por los emigrantes<br />
italianos, la pizza pasó a comercializarse en los reductos<br />
donde ellos se concentraban - Filadelfia, Chicago y<br />
Nueva York. Primero, en las puertas de las casas y en<br />
las avenidas y, más tarde, adquirió espacio en cafés y<br />
almacenes.<br />
Actualmente, grandes redes de pizzerías proliferan<br />
en diferentes partes del mundo. En Brasil, el alimento<br />
es apreciado en todo el territorio nacional, siendo São<br />
Paulo la segunda mayor ciudad consumidora del mundo,<br />
después de Nueva York, donde también hay una gran<br />
concentración de emigrantes italianos.<br />
La versatilidad del alimento, con su gama de<br />
variaciones y combinaciones de sabores para la cobertura<br />
y de preparación de la masa, continúa conquistando<br />
gente de todas las edades y culturas.<br />
