Brazilian Shrimp & Pumpkin Stew Ingredients: - 1 ½ lb. (700g) medium/large shrimp in shell - Apx. 1 lb. (400g) pumpkin or winter squash - 1 ¾ cups (400ml) coconut milk - 3 tbsp. palm oil (dendê oil) - ½ onion, chopped - 1 red bell pepper, diced - peperoncino flakes, or other chili peppers, to taste - cilantro, finely chopped, to taste - salt, to taste Directions: Use fresh (not frozen) shrimp, if available. Peel shrimp and set aside. Discard shells. Prepare pumpkin purée: cut pumpkin into large pieces. Cook pumpkin in a pot of boiling water until tender. Do not overcook as the pumpkin can get too soft very quickly. Puree pumpkin using a masher or food processor. Set aside. Then sauté chopped onion and bell pepper in hot palm oil until golden. Add pumpkin purée and coconut milk. Mix thoroughly. Add peeled and deveined shrimp, cilantro and chili pepper. Cook, stirring frequently, until shrimp are just cooked through. Shrimp cooks quickly so add just before serving. Serve with rice for a perfect combination. 46 | Tramontina Farroupilha “Bobó” de camarones con zapallo Ingredientes: - 700 g. de camarones con cáscara - 400 g. de zapallo - 400 ml de leche de coco - 3 cucharadas de sopa de aceite de dendé - ½ cebolla picada - 1 morrón rojo cortado en cuadraditos - ají picante a gusto - cilantro a gusto - sal a gusto Preparación: Comience la receta eligiendo los camarones, siempre que posible con cáscara, porque esos son los camarones frescos. Pélelos y guárdelos. En una olla con agua hirviendo, cocine el zapallo en pedazos grandes, hasta que se ablande, pero cuide para que no se pase del punto de cocción, porque se deshace con mucha facilidad. Después, haga un puré; puede ser con puretera manual o procesador. Para comenzar el plato, rehogue la cebolla en el aceite de dendê caliente y agregue el morrón. Cuando estén dorados, agregue el puré de zapallo y la leche de coco, mezclando bien hasta que quede una mezcla homogénea. Finalmente, agregue los camarones, el cilantro y el ají picante; los camarones se cocinan muy rápido, por eso, se agregan casi a la hora de servir. Sirva con arroz, es una bella combinación.
