How about stopping halfway through an exhausting<br />
job, study or reading and make some art in the kitchen?<br />
Preparing cupcakes and other sweets can be relaxing and<br />
enjoyable. There can be a lot of satisfaction in mixing<br />
together flour, sugar, eggs, milk, chocolate, candies and<br />
fruit when it results in creative and beautiful shapes. The<br />
aroma fills the air and the colorful treats melt in your<br />
mouth. They are little works of art that bring happiness<br />
to those who make them and those who receive them,<br />
because they are gifts appreciated for their delicacy and<br />
taste.<br />
¿Qué tal dar un aparada en el medio de un trabajo<br />
exhaustivo, del estudio o lectura, y hacer arte en la<br />
cocina? Preparar cupcakes y otros dulces puede ser algo<br />
relajante y placentero. La satisfacción de juntar harina,<br />
azúcar, huevos, leche, chocolate, confites y frutas con<br />
creatividad, tiene como resultado bellas formas. El<br />
aroma ocupa los espacios de la casa y el colorido de los<br />
dulces son una ternura que se deshace en la boca. Son<br />
pequeñas obras de arte que repercuten en alegría para<br />
quienes las hacen y para quienes las reciben, porque son<br />
regalos muy apreciados por su delicadeza y sus sabores.<br />
Strawberry cream cheese cupcakes<br />
Ingredients<br />
Cupcakes:<br />
75g / 2.7 oz semi-sweet chocolate<br />
165g / 5.8 oz unsalted butter<br />
4 eggs<br />
200g / 7.1 oz sugar<br />
70g / 2.5 oz all-purpose flour<br />
2 tbsp cocoa powder<br />
½ tsp baking powder<br />
12 baking cups<br />
Frosting:<br />
½ cup diced strawberries<br />
225g / 7.9 oz cream cheese (room temperature)<br />
170g / 6 oz butter (room temperature )<br />
1 ¾ cups powdered sugar<br />
½ tsp lemon juice (optional)<br />
1 tsp vanilla extract<br />
Instructions<br />
Preheat oven to 180°C / 350°F.<br />
Place baking cups in muffin pans. Set aside.<br />
Cut the chocolate into small pieces and place in the upper pot of a double boiler. Add the butter<br />
and stir over low heat until chocolate is fully melted and mixture is smooth. Add the sugar and mix<br />
well. Remove from heat and let cool for approximately 10 minutes.<br />
Beat the mixture for 3 minutes using a mixer fitted with the flat beater attachment<br />
Add the eggs, one at a time, beating well after each addition.<br />
Sift together the flour, cocoa powder and baking powder in a separate bowl and mix thoroughly.<br />
Add the flour mixture to the chocolate mixture and beat together until the batter is smooth.<br />
Scoop batter into lined muffin pan, filling each cup 3/4 full. Bake for 25 min or until a cake tester<br />
(or a wooden toothpick) inserted into the center of each cupcake comes out clean.<br />
Remove from oven and place on rack to cool.<br />
Frosting:<br />
Puree the strawberries in a food processor. Put the puree through a sieve or cheesecloth to<br />
remove seeds. Set aside.<br />
In a mixing bowl, beat the cream cheese and butter for 3 to 5 minutes using the flat beater<br />
attachment.<br />
Add powdered sugar and mix until smooth.<br />
Add vanilla and lemon juice.<br />
Finally, add strawberry puree a little at a time to achieve the desired consistency for the frosting.<br />
For thicker frosting, use less puree.<br />
If frosting is runny, add some powdered sugar or cool it in the refrigerator for a few hours before<br />
frosting the cupcakes.<br />
After cupcakes have cooled, frost using a pastry bag and desired pastry tip.<br />
Serve immediately.<br />
Cupcake de chocolate con frutillas y cream cheese<br />
Ingredientes<br />
Para los cupcakes:<br />
75 g. de chocolate semimargo de buena calidad<br />
165 g. de manteca sin sal<br />
4 huevos<br />
200 g. de azúcar<br />
70 g. de harina<br />
2 cucharadas de sopa de chocolate en polvo<br />
½ cucharadita (té) de fermento<br />
12 moldes de papel para cupcake a su elección<br />
Para la cobertura:<br />
½ taza de frutillas picadas<br />
225 g. de cream cheese a temperatura ambiente<br />
170 g. de manteca sin sal a temperatura ambiente<br />
1 ¾ taza de azúcar impalpable cernido<br />
½ cucharadita (té) de jugo de limón (opcional)<br />
1 cucharadita (té) de extracto de vainilla<br />
Modo de preparación<br />
Caliente el horno a 180ºC.<br />
Separe los moldes para cupcakes y ponga los moldes de papel que desea usar dentro de ellos.<br />
Pique el chocolate en pedacitos y póngalo en un bowl, arriba de una olla con agua para baño<br />
maría. Agregue la manteca y revuelva a fuego lento hasta que el chocolate se derrita y la mezcla<br />
esté homogénea. Agregue el azúcar y mezcle bien. Saque la mezcla del fuego y déjela enfriar<br />
durante aproximadamente 10 minutos.<br />
Bata la mezcla en la batidora con las palas durante 3 minutos.<br />
Agregue los huevos, uno a uno, batiendo algunos segundos después de cada uno.<br />
En otro bowl, cierna la harina, el chocolate y el fermento y mezcle todo.<br />
Agregue la mezcla de harina y chocolate a la batidora. Bata hasta que la masa quede<br />
homogénea. Llene los moldes de cupcake hasta 3/4 de su capacidad con la masa y ase durante<br />
25 minutos. Haga la prueba del escarbadientes antes de retirar los cupcakes del horno. Si sale<br />
limpio, están prontos.<br />
Deje enfriar en una rejilla.<br />
Para la cobertura:<br />
Pase las frutillas por el procesador hasta que queden como un puré. Pase el puré por un<br />
cernidor mediano para sacarle todas las semillas. Resérvelo.<br />
En el bowl de una batidora, bata el cream cheese con la manteca durante 3 a 5 minutos con las<br />
palas. Agregue el azúcar impalpable y mézclelo hasta que la masa quede homogénea.<br />
Agregue la vainilla y el jugo de limón.<br />
Por último, agregue el puré de frutillas de a poco. Ponga la cantidad necesaria para la<br />
consistencia que desea en la cobertura. Si quiere una cobertura más firme, agregue poco.<br />
Si la cobertura queda demasiado líquida, agregue más azúcar impalpable o deje la mezcla en la<br />
heladera durante algunas horas antes de cubrir los cupcakes.<br />
Cubra los cupcakes usando una manga de repostería con la boquilla que desee.<br />
Sirva inmediatamente.<br />
