e acerca el verano, nuestras preferencias<br />
gastronómicas cambian un poco, nos permitimos<br />
explorar otras opciones, cambian<br />
menús, cambian platillos y es el momento ideal de<br />
darle la oportunidad a nuevas texturas, a nuevos<br />
aromas y nuevos sabores.<br />
Una gran opción que ha venido tomando<br />
fuerza cada vez más en los recientes años son los<br />
vinos rosados secos.<br />
Tenemos como referencia en América que los<br />
vinos rosados son principalmente semi-secos, la<br />
referencia es un White Zinfandel, pero este no es<br />
el único estilo de vino rosado. Mucho tiempo antes<br />
ya se elaboraban vinos rosados de gran calidad;<br />
los griegos producían este estilo de vino desde<br />
hace casi 2000 años. Actualmente, podemos<br />
encontrar grandes ejemplos de estos vinos<br />
provenientes de Chile, Argentina, México, Italia,<br />
España y el sur de Francia, en la región de<br />
Provence.<br />
¿Pero, de qué manera se elaboran estos vinos,<br />
con qué uvas y cuáles son sus características?<br />
Aunque hay diversos métodos para su<br />
producción, la manera mas común es mediante<br />
una maceración corta, es decir, dejar el jugo<br />
obtenido de las uvas en contacto con sus pieles<br />
por un corto periodo de tiempo; unas horas<br />
solamente.<br />
Estos vinos son elaborados principalmente de<br />
uvas con estructura robusta, uvas con las cuales<br />
normalmente se crean vinos tintos potentes.<br />
Las principales uvas utilizadas son Cabernet<br />
Sauvignon, Merlot, Cabernet Franc, Tempranillo,<br />
Grenache, Malbec, y en el caso de<br />
Provence, Cinsault.<br />
Una de las mejores características de<br />
estos vinos es su gran facilidad para<br />
complementar casi cualquier tipo de platillos.<br />
Estos vinos son secos, tienen una acidez<br />
ligeramente marcada. Con platillos especiados<br />
como en caso de la cocina thai, hará<br />
brillar sus sabores. Cuando encontremos<br />
mayor presencia de condimentos, como en la<br />
comida mexicana, los hará más suaves. Sin<br />
olvidar que son una excelente opción para<br />
acompañar platillos frescos, como mariscos en<br />
la playa…<br />
Este verano son una gran opción para redescubrir<br />
un estilo de vinos muy agradables.<br />

explore other options, menus change, dishes<br />
change and it’s the ideal moment to give a chance<br />
to new textures, new aromas and new tastes.<br />
A great option that has become more and<br />
more popular in recent years are dry rosé wines.<br />
In America rosé wines are mainly semi-dry, the<br />
reference being White Zinfandel, but this is not the<br />
only kind of rosé wine. Long ago, top class rosé<br />
wines were already being produced; the Greeks<br />
have been producing this kind of wine for almost<br />
2000 years. Nowadays we can find great examples<br />
of these wines in Chile, Argentina, Mexico, Italy,<br />
Spain and the South of France, in the<br />
Provence region.<br />
But how are these wines produced, with<br />
which grapes do we produce them and<br />
what are their characteristics?<br />
Although there are different production<br />
methods, the most common method is by<br />
means of a short maceration, in other<br />
words by leaving the juice extracted from<br />
the grapes in contact with their skins for a<br />
short period of time; just a few hours.<br />
These wines are mainly produced using<br />
grapes with a robust structure, grapes<br />
from which we usually produce strong<br />
red wines. The main grapes used are<br />
Cabernet Sauvignon, Merlot, Cabernet<br />
Franc, Tempranillo, Grenache, Malbec,<br />
and in the case of Provence, Cinsault.<br />
One of the best characteristics of<br />
these wines is the ease with which<br />
they complement almost any kind<br />
of food. These wines are dry, with a<br />
slightly marked acidity. With spicy<br />
dishes, as in the case of Thai<br />
cuisine, they bring out the flavours.<br />
When there is a stronger presence<br />
of condiments, as in Mexican food,<br />
they make them milder. Also don’t<br />
forget that they are an excellent<br />
option for accompanying freshly<br />
cooked dishes, such as seafood on<br />
the beach…<br />
Without a doubt they are a great<br />
option for rediscovering a very<br />
pleasant kind of wine this summer.<br />
