Always a fresh option Por / By: FELIPE BRISEÑO 24 FOTO - José Antonio Granados LOS GRIEGOS PRODUCÍAN ESTE ESTILO DE VINO DESDE HACE CASI 2000 AÑOS S S e acerca el verano, nuestras preferencias gastronómicas cambian un poco, nos permitimos explorar otras opciones, cambian menús, cambian platillos y es el momento ideal de darle la oportunidad a nuevas texturas, a nuevos aromas y nuevos sabores. Una gran opción que ha venido tomando fuerza cada vez más en los recientes años son los vinos rosados secos. Tenemos como referencia en América que los vinos rosados son principalmente semi-secos, la referencia es un White Zinfandel, pero este no es el único estilo de vino rosado. Mucho tiempo antes ya se elaboraban vinos rosados de gran calidad; los griegos producían este estilo de vino desde hace casi 2000 años. Actualmente, podemos encontrar grandes ejemplos de estos vinos provenientes de Chile, Argentina, México, Italia, España y el sur de Francia, en la región de Provence. ¿Pero, de qué manera se elaboran estos vinos, con qué uvas y cuáles son sus características? Aunque hay diversos métodos para su producción, la manera mas común es mediante una maceración corta, es decir, dejar el jugo obtenido de las uvas en contacto con sus pieles por un corto periodo de tiempo; unas horas solamente. Estos vinos son elaborados principalmente de uvas con estructura robusta, uvas con las cuales normalmente se crean vinos tintos potentes. Las principales uvas utilizadas son Cabernet Sauvignon, Merlot, Cabernet Franc, Tempranillo, Grenache, Malbec, y en el caso de Provence, Cinsault. Una de las mejores características de estos vinos es su gran facilidad para complementar casi cualquier tipo de platillos. Estos vinos son secos, tienen una acidez ligeramente marcada. Con platillos especiados como en caso de la cocina thai, hará brillar sus sabores. Cuando encontremos mayor presencia de condimentos, como en la comida mexicana, los hará más suaves. Sin olvidar que son una excelente opción para acompañar platillos frescos, como mariscos en la playa… Este verano son una gran opción para redescubrir un estilo de vinos muy agradables. A great option that has become more and more popular in recent years are dry rosé wines. In America rosé wines are mainly semi-dry, the reference being White Zinfandel, but this is not the only kind of rosé wine. Long ago, top class rosé wines were already being produced; the Greeks have been producing this kind of wine for almost 2000 years. Nowadays we can find great examples of these wines in Chile, Argentina, Mexico, Italy, Spain and the South of France, in the Provence region. But how are these wines produced, with which grapes do we produce them and what are their characteristics? Although there are different production methods, the most common method is by means of a short maceration, in other words by leaving the juice extracted from the grapes in contact with their skins for a short period of time; just a few hours. These wines are mainly produced using grapes with a robust structure, grapes from which we usually produce strong red wines. The main grapes used are Cabernet Sauvignon, Merlot, Cabernet Franc, Tempranillo, Grenache, Malbec, and in the case of Provence, Cinsault. One of the best characteristics of these wines is the ease with which they complement almost any kind of food. These wines are dry, with a slightly marked acidity. With spicy dishes, as in the case of Thai cuisine, they bring out the flavours. When there is a stronger presence of condiments, as in Mexican food, they make them milder. Also don’t forget that they are an excellent option for accompanying freshly cooked dishes, such as seafood on the beach… Without a doubt they are a great option for rediscovering a very pleasant kind of wine this summer. 25
