Ayant fait ses classes à Paris dans des établissements de<br />
renom, la chineuse de saveurs s’amarre il y a six ans au caillou<br />
et se jette alors dans les bras ouverts de l’île avant de<br />
racheter l’établissement qui deviendra son “petit coin intime<br />
à Saint-Jean”.<br />
A la découverte de nos propres sens, on s’installe au très<br />
confidentiel Papillon Ivre le palais averti. Un wine tasting<br />
souple et bigarré nous invite alors, sans carte des vins et<br />
toujours selon goûts et envies, à découvrir la sélection minutieuse<br />
et continuellement renouvelée du lieu, du petit vigneron<br />
indépendant aux plus grands crus classés... La “Librairie<br />
des Vins” s’ouvre ainsi à nous et avec elle son explosion d’adjectifs,<br />
noms et couleurs, la minéralité d’un Saint-Aubin aux<br />
joues framboisées, d’un Sancerre charpenté, d’un vin vivant,<br />
biodynamique parfois, salin, poudré ou à la belle longueur,<br />
aux notes d’écorces et de vanille.<br />

Julie Campion simply adores sharing updated versions of<br />
the best in French regional cuisine at the delightful Papillon<br />
Ivre, the first and only wine bar in Saint Barthélemy.<br />
Asimple exchange with the owner gives you a glimpse<br />
into the spirit of the menu: character, freshness, and<br />
sunny accents. In her “food and wine cellar,” this most<br />
Parisian of Bordeaux natives stocks over two hundred and<br />
fifty kinds of 100% French wine, in reverence to her kinship<br />
with wine-growing regions.<br />

En passionnée, Julie Campion partage et revisite le meilleur de<br />
la gastronomie française et inscrit le Papillon Ivre bien au-delà<br />
du premier et unique bar à vin de Saint-Barthélemy.<br />
Un simple échange avec la propriétaire des lieux laisse<br />
déjà entrevoir le ton de la carte : caractère, fraîcheur<br />
et accents solaires. Dans sa “cave à manger”, la “plus<br />
Parisienne des Bordelaises” compose avec plus de 250<br />
références de vins 100% français, révérence à une parenté<br />
modelée dans la terre viticole.<br />
Having learned her art at well-known restaurants in Paris,<br />
this collector of flavors settled on the little rock of St Barth six<br />
years ago and threw herself into the open arms of the island<br />
before buying the place that would become “her intimate<br />
little corner in Saint Jean.”<br />
To enhance our own senses, we take a table at the rather<br />
confidential Papillon Ivre, the palate primed. A varied wine<br />
tasting, without a set list of wines, and always adaptable<br />
to tastes and desires invites us to discover their meticulous<br />
and continually renewed selection, from small independent<br />
vineyards to the best of the grands crus classes… The<br />
“wine library” opens before us, and with it, an explosion of<br />
adjectives, names, and colors, from the minerality of a Saint-<br />
Aubin with its raspberry blush to a full-bodied Sancerre, or<br />
a lively wine, perhaps biodynamic, slightly salty, dry, or with<br />
long-lasting notes of tree bark and vanilla.<br />
At a wine tasting or at the stove, the owner always maintains<br />
her professional standards; and the blackboard, from vegan<br />
to carnivorous, features a playlist of the grand classics<br />
of French cuisine, often updated, other times rustic, but<br />
always delicious “nuggets.” Among the French tapas: stuffed<br />
cabbage, definitely pâté in a pastry crust, white asparagus,<br />
sea urchin taramasalata, raw zucchini millefeuille… Or ham<br />
from a Basque pig cured for 30 months in the open air.<br />
“What would you recommend for me this evening?” “Oyster<br />
tartar with milk-fed veal served on a Brittany oyster number<br />
1. And with that, may we suggest a Condrieu from Château<br />
Grillet in the Rhone Valley…”<br />
Passion, sharing, and sustainable sourcing are the buzzwords<br />
here. Le Papillon Ivre also provides one of the most enjoyable<br />
restaurant experiences on the island, with a staff that<br />
attends to every detail during its evening-only service. Julie<br />
is looking toward the future with the creation of a gourmet<br />
grocery, Le Minute Papillon, still in its chrysalis stage, which<br />
will offer a range of regional products, condiments, and<br />
tisanes selected directly from small producers. As well as<br />
wine during the day to continue to tease the palate, but this<br />
time, why not on a beach in Saint Barthélemy.<br />
A la dégustation et au fourneau, la maîtresse des lieux prétend<br />
toujours à un standing de qualité : l’ardoise, qu’elle soit<br />
vegan ou carnassière, propose une playlist faite des grands<br />
classiques de la cuisine française, parfois revisités, tantôt<br />
rustiques mais toujours “pépites”. Parmi ses french tapas,<br />
choux farci, pâté en croûte bien sûr, asperges blanches ; tarama<br />
d’oursin ou millefeuille de courgette crue… Ou encore<br />
un jambon de truie basque affiné trente mois à l’air libre.<br />
“Qu’est-ce que vous me conseilleriez ce soir ? – Un tartare<br />
d’huître et son veau de lait, servi sur une huître bretonne<br />
numéro 1. Et avec ça, sans doute, un condrieu de Château<br />
Grillet, de la vallée du Rhône…”<br />
Ici passion, partage et sourcing responsable sont maîtres<br />
mots. Le Papillon Ivre propose autrement l’un des services<br />
les plus confortables de la restauration sur le caillou, avec<br />
un personnel au petit soin pour son unique service du soir.<br />
Julie voit enfin plus loin avec la naissance d’une épicerie fine<br />
de l’autre côté de la rue : Minute Papillon, encore chrysalide,<br />
proposera une gamme de produits du terroir, condiments ou<br />
tisanes sélectionnés chez les petits producteurs ainsi que des<br />
vins de journée pour continuer d’entraîner son palais mais<br />
pourquoi pas, cette fois, sur une plage de Saint-Barthélemy.<br />
