Debauve & Gallais 是 1800 年 創 業 的 皇 家 巧 克 力 供 應 商 。 站 在 店 門 前 就 感 受 到 歷 史 的 痕 跡 , 店 內 的 裝 潢 也 頗 具
皇 家 氣 勢 。 店 裡 有 200 多 種 巧 克 力 , 每 一 種 都 有 一 段 歷 史 。 創 始 人 Sulpice Debauve 是 路 易 十 六 國 王 的 御 用 藥
劑 師 , 應 路 易 十 六 王 后 瑪 麗 • 安 托 瓦 內 特 要 求 首 創 了 固 體 巧 克 力 - les Pistoles de Marie-Antoinette, 據 說 有
治 王 后 頭 疼 的 功 效 。 百 合 花 的 巧 克 力 是 為 查 理 十 世 加 冕 儀 式 而 造 。 早 在 1825 年 就 做 出 了 現 在 流 行 的 胡 椒 薑
糖 巧 克 力 。 來 這 裡 主 要 是 可 以 享 用 一 下 當 年 皇 室 御 用 的 巧 克 力 。
Debauve & Gallais the royal chocolate supplier since 1800. Standing in front of the store we can feel the traces of
history, the decoration inside is also rather regal. The shop provides more than 200 kinds of chocolate; each of them
has a history. The founder Sulpice Debauve was the pharmacist of King Louis XVI and had to meet the expectations
of Queen Marie Antoinette • Pioneer of the solid chocolate - Les
Pistoles de Marie-Antoinette are said to help with the Queen’s
migraines; as for the fleur-de-lys chocolates, they were created for
the coronation ceremony of Charles X; as early as 1825 they had
already invented the now popular pepper Ginger chocolate. People
mainly come here to have the opportunity to taste chocolates that
were developed for royalty.

到 非 常 獨 特 的 熱 巧 克 力 。 牡 蠣 熱 巧 克 力 端 上 來 的 時 候 , 盤 子 上 既 沒
有 調 羹 也 沒 有 像 普 通 咖 啡 店 放 糖 在 桌 上 或 在 盤 子 上 。 喝 了 一 口 才 知
道 , 無 需 攪 拌 , 也 無 需 添 加 任 何 其 它 。 牡 蠣 是 冰 凍 之 後 高 速 打 碎 ,
用 自 家 秘 方 , 調 製 成 乳 狀 , 然 後 澆 在 熱 巧 克 力 上 , 總 之 結 果 就 是 說
不 出 的 鮮 香 , 非 常 細 膩 , 一 股 淡 淡 的 海 水 味 , 巧 克 力 和 牡 蠣 的 味 道
互 相 烘 托 , 熱 熱 地 喝 下 去 , 甜 鹹 恰 到 好 處 , 非 常 清 爽 , 口 齒 留 香 。
店 裡 還 出 售 一 盒 四 種 乳 酪 餡 心 的 巧 克 力 , 作 為 飯 前 小 點 推 薦 配 汝 拉
山 區 黃 酒 。 品 過 之 後 感 覺 出 乎 意 料 : 乳 酪 的 味 道 淡 淡 的 , 沒 有 想 像
中 的 嗆 人 氣 味 , 非 常 柔 和 地 融 化 在 巧 克 力 中 , 留 下 的 只 有 對 乳 酪 的
美 好 記 憶 。
Nearby the Place Vendôme, on Saint-Honoré Street, there is a very unique
hot chocolate at Jean-Paul Hévin’s. When the oyster hot chocolate is
served, neither a little spoon nor any sugar are provided. Indeed, once you
take a sip, you understand that nothing more is needed. Oysters are frozen
and fragmented at high-speed, then reduced to a creamy mixture according
to a secret recipe, poured in the hot chocolate, in short, the result is
indescribably delicious, very delicate, a hint of sea flavor, the flavors of
chocolate and oysters enhance each other, with just the right combination
of salty and sweet flavours, warm yet very refreshing, leaving a fragrant
after-taste.
The store also sells a box of four kinds of cheese-filled chocolate, recommended
to serve with Jura wine as appetizers. The first bite gives an unexpected
feeling, a hint of cheese, no choking smell, but is very gently melted
with the chocolate, leaving only the best memory of the cheese.
