Leim gebende Substanzen befin<strong>den</strong> sich im tierischen Gewebe, dort vor allem in Haut und Knochen. Diese können durch das Auskochen herausgefiltert wer<strong>den</strong>.<br />
Träger dieser Substanzen ist das Protein Kollagen, das im Tierkörper als Gerüsteiweißstoff vorhan<strong>den</strong> ist. Durch Hitzeeinwirkung verwandelt sich das wasserunlösliche<br />
Kollagen in das wasserlösliche Protein Glutin. Das Glutin bewirkt die Klebe- und Bindekraft des Leims. Dieser Vorgang trifft auf alle aus tierischem<br />
Gewebe gewonnenen Leime zu, deshalb nennt man Haut-, Knochen- und Fischleime auch Glutinleime.<br />
