SHOW NEWS www.gourmetnews.com ■ JANUARY 2011 ■ GOURMET NEWS
Dave’s Gourmet (Con’t. from p. 1)
the National Fiery Foods Show. Since that
time we have made drink mixes, snack items,
dips, cooking sauces, pasta sauces, salsa,
salad dressings and other items. We have won
dozens of awards and sold millions of bottles
of sauce. Currently most of our sales are derived
from our award-winning pasta sauces
and our incendiary hot sauces.
GN: What would you say makes your
company special and relevant?
DH: We are really excited that we won the
sofi for Best Pasta Sauce in both 2009 and
2010. Within a year of launching our butternut
squash pasta sauce, it became our best
seller and our new Masala Marinara is already
creating impressive demand. Even
more exciting to us is that we have doubled
our R&D ability and have a number of great
items in the R&D pipeline. We really feel
like we bring a different perspective to
designing food products and that this helps
us make the world a little bit happier
through our sauces.
GN: What was the most significant event or
series of events affecting your company in
the past year?
DH: Our business has grown about 60 percent
this year and is projected to grow about
the same amount next year. Our Butternut
Squash Pasta Sauce and Masala Marinara
are pushing the boundaries of the pasta
sauce market. All this has helped us to work
with even more talented people and continue
to push our standards higher.
GN: Describe your current marketing strategy.
DH: Our strategy is to make products that
are innovative and delicious. We make items
that have a clear-cut point of difference and
create interest. This interest then allows us
to attract a significant amount of media
attention, which then helps to create
consumer demand. The PR and consumer
demand help create wholesale demand. Our
talented sales force converts that wholesale
demand to distribution and sales.
GN: Compare the position of your
products and their technology against the
current market.
DH: All you need to do is look at a store pasta
sauce shelf and see marinara, basil, arrabiata,
marinara, basil, caponata, vodka, vodka,
puttanesca, etc. You see the same six or seven
flavors over and over again, with some, but
not a huge range of quality difference. Now
think about Butternut Squash Pasta Sauce,
Wild Mushroom Sauce, Masala Marinara,
etc. The difference is clear. The task now is
to extend that difference with more new
flavors and potentially apply the same
methods to other undifferentiated categories.
GN: How do you see the next year in
terms of economy, sales, technology and
product evolution?
DH: The food industry is the most recession
resistant industry. Specialty food has done
well over the last couple of years. I see more
of the same. People need to eat and can afford
small indulgences. There are challenges
with how Americans eat and those who can
help solve those challenges have huge opportunities.
People want food that is fresher,
tastier, more interesting, healthier, more indulgent,
more sensitive to the environment
and a better value. There are many successful
combinations of these factors. Larger
companies give consumers what they ask
for in surveys, but don’t take risks and don’t
use imagination to make new creations that
consumers want, but weren’t able to imagine.
Smaller innovative specialty food companies
are in a fantastic position.
Crystal Noodle (Con’t. from p. 1)
Noodle provides a nutritious and truly
authentic Asian meal within minutes.
Crystal Noodle’s namesake stems from
the dried (not fried!) mung bean noodle,
which acts as the foundation for their soups.
Because it is not fried, the soup remains low
in calories while still providing a filling dose
of authentic Asian taste. Added to the
noodles are freeze-dried toppings of the
highest quality. Consumers are often surprised
by the abundant quantities and freshness
of the gourmet mushrooms, silken tofu,
bok choy, cabbage, carrots and green onion.
Each of the four varieties (6 Kinds of Mushrooms,
Spicy Tofu, Vegetables, Spicy
Sesame) come alive with uniquely authentic
flavors that are sure to satisfy.
This year, Crystal Noodle has taken their
creativity to an entirely new level. Not only
are they now offering MSG-free items, but
they have developed two exciting new flavors
to draw further appeal from their customers.
First off is Savory Shoyu, a truly
authentic soy sauce-based broth inspired by
the soul-warming aesthetic of Japanese
ramen. Added to this soup’s robust flavor are
bountiful amounts of green onion, corn and
carrots. Second up is Hot and Sour, a tangy
broth steeped in tradition that is sure to excite
the taste buds. Even more exciting are the
unique textures created by the soft tofu,
mushrooms and carrots. Mmm mmm good!
Crystal Noodle truly strives to be the innovator
of bringing quality Asian soups to
the mainstream market, and with their constant
innovation they are proving themselves
to do just that. Crystal Noodle is located in
booth 241. Please stop by and warm up.
Twinings of London (Con’t. from p. 1)
Twinings’ teas are drunk all over the world.
True to Thomas Twining’s exacting standards,
the company only blends the finest
tea from the finest tea gardens. Their expert
blenders—more of them than any other
company—taste more than 3,000 cups of tea
every week. So you can be sure the next cup
you taste will be every bit as good as the one
yesterday or the day before.
Blending the Perfect Tea.
Did you know that Twinings’ expert
blenders train for five years, then travel the
world to select teas from thousands of tea
estates to find the perfect leaves that go into
each of their signature blends? Since no two
tea harvests are ever the same—even those
from the same garden—the art of blending is
extremely complex and a critical first step
in preparing you the perfect cup of tea.
Twinings is also one of the few tea makers
to blend their own herb and fruit ingredients.
By controlling what goes into their teas, they
ensure the recipes are unique.
Tea Tasting.
Creating the perfect balance of flavor, taste
and aroma is a complex dance of art, science
and experience. Twinings’ master tasters
train for years, exercising their taste buds in
the name of teatime perfection.
Master tasters examine the tea leaves, assess
the brew’s color and clarity, then taste
each sample using special spoons to draw
liquid against the back of the palate where
the sense of taste and smell meet. This
is where years of experience pay off, as
Twinings’ tasters can identify the location,
elevation and growth characteristics of each
sample, which helps detect the slightest
variation on their exacting standards.
There’s A Blend For You.
Twinings offers a full range of more than 50
varieties. Available in delicious flavored and
traditional blacks, spicy chais, refreshing
greens and flavorful herbals. Twinings. You
deserve a better cup of tea.
