Fabrique Délices: The Art
Of Artisanal Charcuterie
Founded in 1985 by co-owners Marc
Poinsignon and Antonio Pinheiro, Fabrique
Délices has grown from coast to coast with
commitment to quality, tradition, service and
constant innovation.
From Rosette de Lyon to pork-free truffle
mousse, Fabrique Délices has established
themselves in the marketplace as the leader
of Artisanal Charcuterie. Over 100 products
are developed in their plant everyday, allnatural
pâtés, mousses, magret, duck confit,
duck rillettes, sausages and other specialty
items, for restaurants, hotels, airlines, cruiseline
and specialty food stores.
Although principals Marc Poinsignon, Executive
Chef Antonio Pinheiro and Sébastien
Espinasse hail from regions of France known
for artisanal charcuterie, they have become
successful in the American marketplace by
placing a strong emphasis on innovation,
coupled with an understanding of the growing
trend in America towards all-natural
meats and chemical-free food.
Fabrique Délices, the leader in artisanal
charcuterie, opened up a new market for
themselves in 1996 by the decision to incorporate
only all-natural raised meats & poultry
in their mousses, pâtés, sausages and other
delicacies. The creativity and commitment of
the team is evident. “We need to generate new
recipes and new ideas every year,” says Chef
Antonio Pinheiro, who brings a wealth of
experience to the charcuterie arena. Having
graduated from the French chef school L’école
Lenotre in Plaisir, France after an apprenticeship
in Paris’ most prestigious
charcuterie Fauchon, Chef Antonio Pinheiro
comes to America with a deep understanding
of this traditional French charcuterie method.
Great taste and consistency is our goal at
Fabrique Délices, achieved through our strict
suppliers guidelines that include ensuring
that farmers treat animals humanely, feed
them all-natural feeds, and allow them to
mature naturally. This commitment has established
our reputation for the best-tasting
Artisanal Charcuterie available.
Bakto Flavors: What’s In Your Bottle?
Bakto Flavors, LLC, is a flavor company focused
on the production, commercialization
and distribution of natural products. These include
various vanilla products, natural flavors,
spices, herbs, teas and natural
preservatives. Bakto Flavors offers a line of
vanilla and other natural flavor products to
gourmet retailers and food services. The
company is science-based and offers a wide
range of consultancy, education and services.
Bakto Flavors and Rutgers University carried
out a study to evaluate the quality and authenticity
of vanilla extracts in the marketplace,
because Bakto and other companies take pride
in the value of their vanilla products, and because
of a desire to protect authentic product
and secure value for the consumer.
The purpose of this study was to evaluate
the composition of products sold in retail
stores as “vanilla extract”. Labeling of vanilla
extract is regulated by the FDA Standard of
Identity. Accordingly, a package that carries
the name “vanilla extract” has to be at least
one-fold. The ingredients have to be listed
from the highest to the lowest amount, appearing
in the following order: water, alcohol,
vanilla bean extractives. If other
Pepper Creek Farms’
Award-Winning Flavors
Pepper Creek Farms is a family-owned business
founded in Lawton, OK in 1984. They
originally produced eight products which
were sold locally. However, because of their
award-winning flavors and small-batch production
concept, they now produce over 200
different products distributed worldwide. It
seems consumers have an appreciation for
the quality of their products. The team at
Pepper Creek Farms is dedicated to quality
control in every aspect of the production
process. They are extremely selective when
purchasing their fruits and vegetables, many
of which are acquired from local growers.
This allows them to bring in the best ingredients
at the peak of their perfection. Because
of this, they are able to consistently
produce superior quality products for very
discriminating palates.
Pepper Creek Farms competes in a variety
of popular categories, including flavor-
permitted optional ingredients (sugar, glycerin,
propylene glycol, corn syrup, dextrose)
are added, they should follow the same consistent
order.
Samples were collected from all over the
United States sold in various retail stores.
The samples were analyzed for the four
major components commonly associated
with vanilla extract. From these analyses, it
is clear that many of the products do not adhere
to the standard of identity or to their
own labeling specification. The study also
revealed that large reputable companies that
produce and assign their own name to the
label do adhere to the standard of identity
and provide consistent products.
A sensory evaluation test revealed that
vanilla samples, labeled as being from the
same sources, were vastly different. When a
vanilla extract carries a label “100-percent
Pure Madagascar Bourbon,” one expects that
the taste will be similar due to common origins
of the beans, even when obtained from
different companies. The dissimilarities in
products, presumably from common bean
origin, hints that there is no standardization
of vanilla extracts in the retail business.
of sweet spices, bread-dipping seasonings,
cocktail mixers and rim dippers, gourmet
cocoas, and a wide assortment of sprinkles
and dessert toppings for every season, reason
and holiday.
Additionally, Pepper Creek Farms offers
a broad selection of delicious jams that
bring out the true taste of freshness. Using
only fully ripened fruit, evaporated cane
juice and natural pectin, they hand craft
each recipe in small copper kettles to preserve
the color, texture, and flavor and
Having a blend of extracts from beans of
different origins or quality is allowed and
can often result in a better product. However,
it is expected that the products are accurately
labeled. For example, an extract
labeled 100-percent Madagascar Bourbon
should include only beans from Madagascar
(only Vanilla planifolia). In addition, although
the quality of the beans is the main
factor that affects the extract quality, there
are no specific regulations regarding bean
quality―a loophole that is exploited to label
vanilla extract as top of the line.
From our analysis of the flavor components
in a large sample of vanilla extracts, it
is obvious there are many companies that
have very little knowledge of the subject or
the FDA regulations regarding proper preparation
or labeling. Retail vanilla extract is
like expensive perfumes; for some, it is more
important that the bottle looks gourmet without
paying enough attention to the product. It
is advised that retailers request more information
before they purchase vanilla extract.
