Bakto Flavors: What’s In Your Bottle?<br />

Bakto Flavors, LLC, is a flavor company focused<br />

on the production, commercialization<br />

and distribution of natural products. These include<br />

various vanilla products, natural flavors,<br />

spices, herbs, teas and natural<br />

preservatives. Bakto Flavors offers a line of<br />

vanilla and other natural flavor products to<br />

gourmet retailers and food services. The<br />

Bakto Flavors and Rutgers University carried<br />

out a study to evaluate the quality and authenticity<br />

of vanilla extracts in the marketplace,<br />

The purpose of this study was to evaluate<br />

the composition of products sold in retail<br />

stores as “vanilla extract”. Labeling of vanilla<br />

extract is regulated by the FDA Standard of<br />

Identity. Accordingly, a package that carries<br />

the name “vanilla extract” has to be at least<br />

one-fold. The ingredients have to be listed<br />

from the highest to the lowest amount, appearing<br />

in the following order: water, alcohol,<br />

label do adhere to the standard of identity<br />

and provide consistent products.<br />

A sensory evaluation test revealed that<br />

vanilla samples, labeled as being from the<br />

same sources, were vastly different. When a<br />

vanilla extract carries a label “100-percent<br />

Pure Madagascar Bourbon,” one expects that<br />

the taste will be similar due to common origins<br />

of the beans, even when obtained from<br />

different companies. The dissimilarities in<br />

products, presumably from common bean<br />

origin, hints that there is no standardization<br />

of vanilla extracts in the retail business.<br />

vanilla extract as top of the line.<br />

From our analysis of the flavor components<br />

in a large sample of vanilla extracts, it<br />

is obvious there are many companies that<br />

have very little knowledge of the subject or<br />

the FDA regulations regarding proper preparation<br />

or labeling. Retail vanilla extract is<br />

like expensive perfumes; for some, it is more<br />

important that the bottle looks gourmet without<br />

paying enough attention to the product. It<br />

is advised that retailers request more information<br />

before they purchase vanilla extract.<br />
