Coffee Review Rates White Coffee’s
Primaveral “Outstanding”
The Coffee Review has rated White Coffee
Corporation’s new Primaveral Coffee with a
score of “90”, which is considered “outstanding”
by the largest and most respected
coffee buying guide in the world. The review
was completed through a series of blind, expert
cuppings―or tastings―of coffees. The
findings are reported in the form of a 100-
point rating system, similar to that of the
wine industry.
According to Kenneth Davids, noted coffee
expert, author and co-founder of the
Coffee Review, the November 2010 blind
assessment offered an “orange, raisin,
roasted nut, dark chocolate in aroma and
cup.” In addition, the cupping imparted a
“dry … medium body, silky mouth feel.
The raisiny dark chocolate carries into a
rich finish.”
The review recommends that “lovers of
crisp, discreetly (and naturally) dark-chocolatetoned
breakfast coffees” try this brew. “We are
seeing a return, especially in café/food
service, to the medium-roasted cup … from
darker-roasted brewed coffee,” says Davids.
White Coffee imports Asociación Primaveral
Cooperative Coffee from the rich, deep
volcanic soil of south Huila. “Huila is probably
the most admired of Colombian coffeegrowing
regions,” says Davids. The Huila
main harvest is concluded in early December.
“We are very proud of the outstanding
rating provided by Coffee Review,” says
Alejandro Renjifo of Fairfield Trading,
LLC, the Colombian exporter and Primaveral
Cooperative Coffee coordinator.
“We are privileged to offer superlative
beans that yield a delicious, mediumbodied
coffee with intense fragrance,
sweet notes and a lasting flavor. We are
very excited and optimistic about the early
interest in this fine brew.”
Coffee Review’s goal is to entertain and
educate coffee drinkers, foodservice professionals
and the coffee trade with a credible
and easy-to-use coffee guide based on objective,
blind reviews from some of the most
experienced individuals in the specialty coffee
industry. The publication can be found at
Asociación Primaveral is a non-profit cooperative,
registered in the Chamber of
Commerce in Huila, Colombia. Fairfield
Discover The Taste Of Smoked Basmati
So you think you’re a gourmet?!
If you are, then you’ve probably heard of
smoked rice before. You have not? Then introduce
yourself to a one-of-a-kind taste. The
story of smoked rice reaches far into the past
and tradition. The root of this recipe actually
comes from two small towns in the old Persia
where many fishermen and rice growers
had their home. In order to make a healthy
living, growers not only consumed rice for
themselves but also started to trade the valuable
commodity. Whatever was left over
from the trade was smoke dried until the next
bakery since 1924,
of ownership from Benny
returns to Byrd with over 20
years of gourmet and retail
with both a respect
for the steep history of her
family’s legacy and a tireless commitment to
exploring new ground in the future.
In addition to baking such classics as
harvest. The local wood blessed the rice with
a special flavor, which was soon to become
a real delicacy of that region. Today, only a
handful of people know the real recipe of
smoking rice. Founded by Persians, Basmati
Rice GmbH Europe has worked over many
years to perfect this special smoking process
and is proud to be able to offer, probably, the
most delicious, international award-winning
Smoked Basmati on the market.
Their Smoked Basmati soon reached a
high level of popularity among Michelin star
chefs all over the world.
Tradition Meets Innovation
Harry Forsberg, Vice President of Sales
and Marketing for Conifer Specialties, told
Gourmet News about the strategies and
challenges of selling quality foods in today’s
marketplace.
GN: Tell us a little about Conifer Specialties.
HF: We manufacture Canterbury Naturals
artisan soup mixes and hand-crafted baking
mixes for grocery and retail. Our most popular
mixes include Classic Crepe, Roasted
Garlic Potato Chowder, Coconut Macaroons
and Northwest Apple Cake. The products are
all-natural and free of trans fat, hydrogenated
oils, and artificial ingredients. We also offer
Benne Wafers, Key Lime Coolers,
and Cheddar Pecan Biscuits,
Stephanie is taking the
company in new directions and
back to the basics. The first step
is a new look—inspired by the
classic cookie jars that made
Byrd’s Famous Cookies a staple
of southern culture in the mid-
20th century. “My great grandfather
built this company by
placing these wonderful cookie jars in all of
the corner stores throughout the Southeast.”
says Lindley. “He would fill them up weekly
GN: Consumers continue to move toward
natural foods and home cooking. How do
Canterbury Naturals products fit into today’s
marketplace?
HF: We’ve seen tremendous success over
the last decade as more consumers turn to
the types of all-natural, artisan products
that Canterbury Naturals offers. Consumers
are looking for healthy, natural ingredients
in flavorful products that are simple to prepare
at home. They are also looking for a
good value.
Even internationally known
rice specialist chef Rainer
Mitze from Germany, who has
cooking schools all over the
world, was overwhelmed by the
unique taste of this Basmati:
“This rice is unbelievable in
both taste and aroma. You can
serve it with almost every fish
and even chicken.”
But to be honest, the Smoked
Basmati is that tasty that you
can eat it as a main course. Simply add some
butter and onions to the rice and you are
good to go.
The ATRY Smoked Basmati rice was
with cookies that the stores would sell two
for a nickel, and Byrd and the store would
split the profit.” Lindley seeks to create that
sense of nostalgia with the launch of Cookies
by the Ounce—an experiential shopping
experience where you get to scoop your
Byrd favorites out of great oversized cookie
jars, reminiscent of the ones of her greatgrandfather’s
era. Byrd Cookie Company
President Geoff Repella states, “Since we
launched Cookies by the Ounce in our factory
store, we’ve seen traffic and sales increase
by double digits. It’s a family
experience, enjoyed by cookie lovers of all
ages. It’s fun to see a new way to put a smile
on our shopper’s face.”
Lindley has also launched another great
cookie experience with the introduction of
Byrd Cookie and Savory Dough. “It’s been a
They are tasty and economical, and
they balance home cooking with the
daily time crunch. The natural products
just have a few ingredients and
are easy to make with one or two
added items from your pantry.
GN: And that has translated into
sales, even in the down economy?
HF: Absolutely. Canterbury Naturals is a
brand consumers have grown to trust and it’s
shown in our sales. Last year, some retailers
saw sales increases of more than 125 percent
on our artisan soup mixes, and we’ve added
more than 1,500 new points of distribution
in approximately 700 stores.
