Barbara Lynch est la « Boston’s queen of<br />

empire gastronomique — femme d’affaires,<br />
elle gère neuf établissements de haut niveau<br />
dans la capitale du Massachusetts —, la chef<br />

Barbara Lynch for years. In 2003, the James<br />
Beard Foundation (the Academy of the cooking<br />
world) named her Best Chef Northeast and in<br />
2009 she was crowned “Boston’s queen of<br />
cuisine” by the New York Times. The chef/businesswoman<br />
now sits at the head of a veritable<br />
gourmet empire, overseeing nine outstanding<br />
establishments in the Boston area. Among them,<br />
No. 9 Park, a majestic, imposing building located<br />
in historic Beacon Hill where she meticulously<br />
concocts updated renditions of classic Italian<br />

Sis à San Vito Chietino, bord de mer des montagneuses<br />
et grandioses Abruzzes italiennes,<br />
le Bottega Culinaria Biologica est un lieu de<br />
plaisirs et de sciences. Dans les cuisines de<br />
ce laboratoire-boutique-restaurant, la chef<br />
Cinzia Mancini — jadis apprentie de la chimiste<br />
et chef double étoilée du Caino Valeria Piccini<br />
— mène des recherches et expérimentations<br />
passionnées, s’ingéniant à sublimer sans<br />
dénaturer, à cuire sans consumer, à harmoniser<br />
sans dissoner. Purement biologiques,<br />
regorgeant des légumes et des herbes du<br />
foisonnant terroir local, ses créations — de<br />
déliquescentes pâtes chitarrina abruzzese au<br />
chocolat, ail, huile et chili notamment —, sont<br />
des chefs-d’oeuvre de minutie.<br />

Bottega Culinaria Biologica<br />
San Vito, Italie<br />
Located in the coastal town of San Vito Chietino<br />
in Italy’s mountainous Abruzzo region, Bottega<br />
Culinaria Biologica is a veritable centre of arts<br />
and science. In the kitchens of this lab/boutique/restaurant,<br />
chef Cinzia Mancini—formerly<br />
apprenticed to Valeria Piccini, chemist and<br />
holder of two Michelin stars for her restaurant<br />
Caino—passionately conducts her research and<br />
experiments, striving for sublimation without<br />
denaturation, cooking without consuming, and<br />
consonance without dissonance. Her creations<br />
are intricate organic masterpieces loaded with<br />
local herbs and vegetables, like the sinfully delicious<br />
chitarrina abruzzese pasta featuring chocolate,<br />
garlic, oil, and chili.<br />

Dans la cuisine immaculée du Marconi —<br />
décoré d’un macaron Michelin en 2008 —,<br />
Aurora Mazzucchelli dresse ses assiettes<br />
avec l’intention du poète : susciter l’émotion,<br />
engendrer le beau. Avec un souci du détail et<br />
une créativité remarquables, acquis de ses<br />
illustres mentors, notamment le triple étoilé<br />
Martin Berasategui, un des maîtres à penser<br />
de l’Espagne gastronomique, et l’éminent chef<br />
italien Gaetano Trovato, à la tête du double<br />
étoilé Arnolfo, la jeune et jolie rouquine, parmi<br />
les femmes chefs les plus estimées du pays,<br />
œuvre à la réinvention des traditions gourmandes<br />
de la splendide Rossa. Une entreprise passionnée<br />

Élève en Avignon de Christian Étienne, maître<br />
cuisinier de France auquel elle est restée fidèle,<br />
puis de grands chefs de Londres, New York et<br />
Saint-Barthélemy dans les Antilles avant de<br />
revenir en France pour joindre les brigades des<br />
double et triple étoilés Jean-Pierre Vigato et<br />
Alain Passard, Flora Mikula a su faire sien cet<br />
univers d’hommes, avec une tranquille mais<br />
farouche détermination, défendant avec caractère<br />
une cuisine franche, émotive, spontanée…<br />
absolument féminine. Évoluant au rythme de<br />
ses escapades gourmandes en terre étrangère,<br />
ses plats exhalent des parfums de voyages,<br />
épices, légumes oubliés, produits nobles,<br />

In the immaculate kitchen of the 2008 Michelinstarred<br />
Marconi restaurant, Aurora Mazzucchelli<br />
composes her dishes like a poet—sparking emotion<br />
and rendering beauty with every oeuvre.<br />
The young and beautiful redhead acquired her<br />
attention to detail and remarkable creativity<br />
from illustrious mentors, most notably treblestarred<br />
Martin Berasategui—one of the Spanish<br />
masters of gastronomy—not to mention eminent<br />
Italian chef Gaetano Trovato of the double-starred<br />
Arnolfo. Among the most esteemed female<br />

Flora Mikula studied with the crème de la crème,<br />
notably Avignon’s Christian Étienne, French<br />
Master Chef to whom she remains faithful, not<br />
to mention the great chefs of London, New York,<br />
and Saint-Barthélemy in the Caribbean, before<br />
returning to her native France where she joined<br />
the two- and three-starred brigades of Jean-<br />
Pierre Vigato and Alain Passard. Mikula certainly<br />
held her own in the world of male-dominated kitchens—with<br />
gentle, yet fierce determination she<br />
defended her honest, emotional, spontaneous<br />
and totally feminine cuisine. Evoking her stints<br />
in faraway lands, her dishes exude travels, spices,<br />
forgotten vegetables, superior ingredients,<br />
and foreign flavours in an expression of passion,<br />
refinement, and elegance.<br />
