David & Vivienne Warland | GARDENING FOLK Water is not a problem on the 200-acre property “We mostly grow vegetables from heritage seeds; they usually grow better. We don’t want any GM seeds and we prefer not to have hybrids.” Among their vegetables are garlic, potato, pumpkin, carrot, green beans, artichokes, beetroot, tomato, capsicum and kale. They also grow herbs such as rosemary, comfrey, thyme, lemon balm, oregano and borage. The fruit crops are extensive, including four varieties of apples — Pink Lady, Fuji, Bramley and Cox’s Orange Pippin — as well as cherries, different varieties of plums, pears, feijoa and figs. They also grow grapes, boysenberries, raspberries and mulberries. Strawberries and blueberries do particularly well, says David: “Our soils are acidic; we apply lime and they thrive.” And their figs have had a good year, thanks to extended warm weather and the absence of frost. “Our garden always looks healthy,” says David with pride. “We keep the weeds down, keep up with the watering and keep a watchful eye on everything we grow.” And what do they do with all this wonderful produce? “We cook casseroles using legumes, beans, nuts, fruit, tofu and organic soy milk. We use Bramley apples for cooking and make a special dish using strawberries that’s like apple crumble. “Vivienne dehydrates Bramley apples and tomatoes. I freeze tomatoes whole. When you want to use them you toss them frozen in the cooking and you don’t worry about the skins — you need the skins. “We use our green vegetables to make smoothies: kale, lettuce and spinach mixed with fruit juice and banana, blended. Usually we drink it with any meal.” The excess bounty is given away to friends and family. David adds, “Our family come around Christmas time to pick the blueberries — cartons of them.” It sounds like an echo of an earlier generation when visitors helped to pod Les’s green peas. David and Vivienne’s top tips Keep mulching the garden. Keep the water up. Let strawberry runners grow until the bed is full; they keep the weeds down. Keep an eye on the pests and net if possible.
