Orange & Almond Cake
This is one of the moistest cakes I’ve made. Serve it with your choice
of creamy yoghurt, mascarpone or cream.
Serves 8
Ingredients
• 2 oranges
• 6 eggs
• 150g honey
• 1 tsp ground cardamom
• 250g ground almonds (almond meal)
• 1 tsp baking powder
Jo’s tip
You could try using half coconut flour and half
almond or hazelnut meal instead and it would
still retain its moisture. The only difference is
it will be a little heavier in texture.
Method
1. Preheat oven to 160°C.
2. Boil whole oranges for 1 hour, changing
water twice to remove bitterness from skin.
3. Blend whole oranges in food processor.
4. Beat eggs, honey and cardamom until
creamy, then stir in orange pulp.
5. Add almond meal mixed with baking powder
(the mixture will be fairly soft).
6. Pour into square or round tin and bake for
20–30 mins. Check that the batter is cooked
by inserting a skewer.
7. Cool before lifting out and serving. Decorate
with crushed nuts or candied peel and a
light dusting of icing sugar
