My two little nieces are giggling with each other, building their “old” snowman. However severe winter is, it brings something miraculous to little kids. They are excited to go around, showing off their colorful new winter clothes. They look like pretty bears with the wool gloves and hat that their grandmother knitted for them. And the happiness of an adult like me is watching them and seeing enjoyment sparkle in their eyes. I love curling up in a small corner of Hanoi, sipping a cup of hot chocolate with sweet marshmallow. Just a sip can warm up your entire winter. This winter, my family is travelling to a foreign country in which winter is far different from that in Hanoi. Outside the hotel, where my children are playing, snow has already covered the entire roof, putting its white coat on the land, trees, and fields. And who doesn’t love snow? But suddenly I miss my Hanoi with bitter winds which usually chill while I am strolling down narrow streets. Losing my train of thoughts, when I look back, the children have finished their snowman and start playing with snowflakes in various shapes. I just relax and silently take in the winter far from home. And you, have you prepared for your winder journey? Don’t hesitate to share it with us!

Melting<br />

WITH CHEESE RACLETTE<br />

As winter comes, everyone seeks delicious and warm dishes. Therefore, people usually gather with friends to<br />

enjoy various types of hotpot, from Thai hotpot to crab or c∏ kÃo (goby) hotpot. Fondue "hotpot" is a unique<br />

choice. To make Fondue, all you need is to melt Gruyere with Emmental cheese and add a little white wine.<br />

Dip vegetables and bread into the fondue and enjoy its hot greasy taste. As Vietnamese people prefer healthy<br />

foods, they choose fruits such as grapes, strawberries, apples, and kiwi to serve with Fondue instead of<br />

sausage or bacon. If you love sharp cheese, then choose Cheese Raclette - the grilled cheese dish that can<br />

"melt" numerous diners around the world.<br />

THERE ARE FEW restaurants<br />

in Vietnam offering Raclette as<br />

this dish is rarer, more expensive,<br />

and requires more cooking tools<br />

than Fondue. Raclette originated<br />

in Switzerland 700 years ago. As<br />

the stories go, when shepherds<br />

built their camps and prepared<br />

their meals, they put cheese near<br />

the fire. It melted and stuck to the<br />

stone. To save it, the shepherds<br />

scraped the cheese from the stone<br />

and realized it tasted much more<br />

greasy and aromatic. Raclette is<br />

a hard cheese made from cow's<br />

milk. Before being melted, it has a<br />

bad odor but the grilled cheese is<br />

delicious and pleasant to smell. If<br />

you are on a diet, remember not to<br />

approach the stall where Raclette<br />

is melting because you will be<br />

mesmerized by this delicious dish.<br />

They grill the entire block of<br />

cheese and then enjoy the melted<br />

part. Most restaurants serve<br />

Raclette in acoupelles (cast-iron<br />

pan) as it's more convenient or<br />

slice it with a mandoline (cheese<br />

wheel raclette). Before modern<br />

devices, Raclette was put near<br />

the fireplace. Traditional grilled<br />

cheese is always better. The tasty<br />

melted Raclette is best served<br />

with potatoes, dill pickles, onions,<br />

bread, herbal tea, or Kirsch cherry<br />

wine. The French politician and<br />

gastronome, Jean Anthelme Brillat<br />

Savarin said "A dinner concluded<br />

without cheese is like a beautiful<br />

woman missing an eye". Why<br />

don't you gather your friends and<br />
