LAMB SALAD WITH<br />

BLACKBERRIES AND<br />

AVOCADO<br />

Ingredients<br />

600g of lamb<br />

1 serving oil spray<br />

2 tsp dry mixed herbs<br />

1<strong>30</strong>g mesclun leaves, with herbs<br />

16-20 blackberries<br />

1 large avocado, halved, stoned<br />

and sliced<br />

½ cup balsamic vinaigrette<br />

Directions<br />

Trim the lamb and snip the<br />

edges, if required. This will<br />

prevent the lamb from curling<br />

during cooking.<br />

Spray with the oil.<br />

Combine the mixed herbs and<br />

black pepper and rub onto the<br />

lamb.<br />

Cover and refrigerate for at<br />

least <strong>30</strong>min.<br />

Return to room temperature<br />

before cooking.<br />

Barbecue, grill or pan-fry for<br />

3-6min each side, depending on<br />

thickness.<br />

Combine the salad greens,<br />

blackberries and avocado in a<br />

salad bowl.<br />

Thinly slice the lamb and toss<br />

with the salad and dressing.<br />

HOW TO COOK LAMB LEG CHOPS ON THE BARBECUE<br />

Ingredients<br />

1/4 cup white vinegar<br />

2 teaspoons salt<br />

1/2 teaspoon black pepper<br />

2 cloves garlic, crushed<br />

1 brown onion, thinly sliced<br />

2 tablespoons olive oil<br />

1kg lamb leg chops<br />

Directions<br />

Mix together the vinegar, salt,<br />

pepper, garlic, onion and olive oil<br />

in a large resealable bag until the<br />

salt has dissolved.<br />

Add lamb, toss until coated<br />

and marinate in refrigerator for<br />

two hours.<br />

Preheat a barbecue or the grill<br />

to medium high.<br />

Remove lamb from the<br />

marinade and leave any onions<br />

that stick to the meat.<br />

Discard any remaining<br />

marinade. Cook chops for about<br />

3-4min each side for medium or<br />

until cooked as desired.<br />
