What drink says celebrate to you?<br />
The ‘Addiction’ is a very unique drink that<br />
we make at the Vices & Virtues bar. With its<br />
chilli and ginger flavours it can pack a punch<br />
that leaves your taste buds tingling. It is my<br />
personal favourite cocktail and is always the<br />
one I will first recommend our customers.<br />
What’s your favourite ingredient?<br />
I always love it when we make the<br />
ingredients ourselves. In the Addiction<br />
we will infuse a bottle of vodka with fresh<br />
chillies for at least 48 hours to give us the<br />
flavoured spirit to use as the base, and in<br />
another cocktail of ours, the apple, rum<br />
and raisin flavoured ‘Deception’, we use<br />
a puree made specially by our chefs from<br />
fresh granny smith apples and raisins. For<br />
me, whenever a bar has ingredients made<br />
by themselves it means that they can<br />
produce drinks that you aren’t going to find<br />
anywhere else and it always feels good to<br />
be making a unique drink.<br />

What is the most versatile cocktail base?<br />
Vodka; classic and simple vodka. The<br />
smooth and delicate flavour profile of a<br />
good vodka means that it can be used in a<br />
wide range of cocktails that vary hugely in<br />
flavours. As well as adding fresh chillies for<br />
the Addiction’s spicy flavour, the vodka in<br />
‘Passion’ is mixed with crushed raspberries<br />
and lime juice to give a fresh fruity taste and<br />
a bright pink colour.<br />
Do people really tell you their problems?<br />
Oh the stories I have from my time as a<br />
bartender! From elderly men complaining<br />
about the failures of modern politics and<br />
helping two friends plan a road trip, to<br />
separately meeting both sides of an ugly<br />
break-up over the course of an evening and<br />
giving my opinion of growing up in New<br />
Zealand to a young Irish couple thinking of<br />
starting a family here. Being a bartender can<br />
be as much about careful word choice and<br />
tact as it is about making drinks.
