15ml lemon juice<br />
3 sticks of ginger,<br />
freshly peeled<br />
ginger beer<br />
METHOD<br />
Muddle ginger, add lemon<br />
juice, chilli vodka, top up with<br />
ice and shake. Pour into glass,<br />
top with ginger beer and<br />
garnish with candied ginger.<br />

40ml rum<br />

10ml balsamic vinegar<br />
20ml raisin puree<br />
30ml cream<br />
METHOD<br />
Shake and double strain<br />
with a spoon. Put sugar<br />
syrup on rim of the glass<br />
and dip in cinnamon<br />
powder and sugar.<br />
