FAO is working with countries
around the world to improve food
systems and ensure that everyone
has access to safe and nutritious
food. FAO and the World Health
Organization (WHO) celebrated
the first ever World Food Safety
Day on 7 June 2019.
Jointly with the WHO, FAO
is responsible for the Codex
Alimentarius, a collection of
internationally adopted food
standards that protect consumer
health and ensure fair practices in
food trade. The regularly updated
publications Understanding Codex
and the Procedural Manual of the
Codex Alimentarius Commission
(p. 91) provide useful overviews
of how the Codex works.
To achieve safe food, standards
must be implemented. FAO
has developed guides and
training tools to address official
food controls and support
implementation of standards,
which provide regulators and the
private sector with the guidance
needed to ensure that consumers
have access to safe and quality

food. FAO also provides guidance
regarding the risk to consumers
from specific food-borne diseases
(pp. 92–93) and the safety of food
additives and drug residues in
foods (p. 94).
FAO’s publications on nutrition
provide data and guidelines,
including food composition tables,
indicators and dietary assessments,
to help countries scale up nutritionsensitive
agricultural policies.
Strong emphasis is given to school
meal programmes that support both
human and environmental health
as well as local food production
(pp. 95–97). •
