Great villages for white include Chassagne-Montrachet, Meursault and Puligny-
Montrachet. These tend to be aged in oak barrels and are fabulously complex and
rich. Famous names to remember for reds here are Volnay – perfumed and elegant
with soft strawberry fruit and tannins, and Pommard - the “Pomerol of Burgundy”,
offering more structure and body.
Chablis is the northernmost wine area of Burgundy, creating only white wines

that are quite different to the Côte d’Or. Its cool climate and special soil, called
Kimeridgian clay, give the wines a crisp acidity. Unlike the Côte d’Or, little or no oak
is used here, creating light bodied wines with aromas of citrus fruit, green apples
and minerals. Further south in Beaujolais, the grape Gamay is used to make easydrinking,
juicy and fruity red wines.
