Deboners has been specifically

developed for harder bones than

poultry ones and especially for

pork and lamb bones.

Specifically, many LIMA’s

customers in the Pork industry

around the world are already

taking great benefits of the DSP

technology by separating meat

from typical pork bones such as

backbones, neckbones and ribs at

LOW pressure.

The objective is clearly to recover

the highest quality of meat in

texture, as close as possible to

ground/minced meat while still

ensuring optimal yields and the

lowest calcium content in the

recovered meat as possible. Such

high quality mechanically deboned

meat is usually referred to on the

market as structured or 3 mm

mechanically separated meat.
