Did you know that white asparagus, white bean<br />
sprouts and white endive are grown without<br />
sunshine under heavy canvas in the dark?<br />
Asparagus Rolls<br />
1 large, very fresh loaf of sandwich bread<br />
8 oz. cream cheese<br />
3 oz. blue cheese<br />
1 egg<br />
Fresh or frozen asparagus, cooked crisp-tender<br />
3/4 cup melted butter<br />
Mix cream cheese, blue cheese and egg. Cut crusts off bread and roll flat<br />
with rolling pin. Spread each slice of bread with cheese mixture. Place 1<br />
asparagus spear on each slice of bread and roll up. Dip each roll in melted<br />
butter. Place rolls on cookie sheet and freeze (very important!). When ready to<br />
serve, cut each roll into thirds and bake on greased cookie sheet for 15 to 20<br />
minutes in a pre-heated 400 degree oven.<br />
Asparagus Lasagna<br />
4 lbs. asparagus<br />
1/3 cup butter<br />
1/2 cup all-purpose flour<br />
5 cups milk<br />
8 oz. cream cheese, cubed<br />
1 tsp. grated lemon rind<br />
1 tbsp. lemon juice<br />
Bend asparagus until stalks snap at natural breaking point, reserve bases<br />
for another use. Cut asparagus into 1-inch pieces. In large pot of boiling<br />
water, cook for 3 mins. Drain and refresh under cold running water, drain<br />
again. Reserve 1 1/2 cups of asparagus tips, set aside. In saucepan, melt<br />
butter over medium heat. Gradually whisk in flour and cook, whisking for 1<br />
min. Whisk in milk, bring to boil, whisking. Reduce heat to medium-low;<br />
cook, stirring for 10 mins. or until thickened. Remove from heat. Stir in<br />
cream cheese, lemon rind and juice, salt, pepper and nutmeg until cheese is<br />
melted.<br />
Meanwhile, in large pot of boiling salted water, cook noodles<br />
for about 10 mins. or just until tender.<br />
Arrange 3 noodles in 13x9 inch baking dish. Spread with 1 cup<br />
of the sauce, then one quarter of the asparagus, then one<br />
quarter of the mozzarella. Repeat layers 3 more time, then top<br />
with final layer of noodles and sauce. Sprinkle Parmesan over<br />
top. Place pan on baking sheet; bake in 375 degree oven for 35 to<br />
40 min. or until bubbly and top is light golden. Sprinkle reserved<br />
asparagus over top. Bake for 5 minutes or until asparagus is<br />
heated through. Let stand for 10 mins. Makes 8 servings.<br />
Cream of Asparagus<br />
If you have a small family, this recipe is easy to cut in half.<br />
1/2 cup chopped onion<br />
1 tbsp. cooking oil<br />
2 cans or 2 1/2 cups chicken broth<br />
2 1/2 lbs. fresh asparagus, trimmed<br />
and cut into 1-inch pieces<br />
1/4 tsp. dried tarragon<br />
1/4 cup butter or margarine<br />
1/4 cup all-purpose flour<br />
1/2 tsp. salt<br />
1 1/2 tsp. salt<br />
1/2 tsp. pepper<br />
1/4 tsp. nutmeg<br />
15 lasagna noodles (about 3/4 of a lb.)<br />
2 cups shredded mozzarella cheese<br />
1/3 cup freshly grated Parmesan cheese<br />
1/4 tsp. white pepper<br />
3 cups half and half cream<br />
1 1/2 tsp. lemon juice<br />
Shredded Swiss cheese (optional)<br />
In a large saucepan over medium heat, saute onion in oil until tender. Add<br />
broth, asparagus and tarragon; simmer until asparagus is tender, about 8-10<br />
minutes. In a blender or food processor, puree the asparagus, a third at a<br />
time; set aside. In a Dutch oven or soup kettle, melt better; stir in flour, salt<br />
and pepper. Cook and stir for 2 mins. or until golden. Gradually add cream.<br />
Stir in the pureed asparagus and lemon juice; heat through. Garnish with<br />
cheese if desired. Makes 8 servings (about 2 quarts).<br />
