Tandis que dans les cuisines, familles et amis s’activent pour préparer les<br />
boudins créoles, les pâtés salés et les jambons glacés qui seront partagés<br />
à l’occasion des kantiks et des différentes veillées de fin d’année, les<br />
pâtissiers, de leur côté, se dédient corps et âme au chocolat…<br />

black pudding, savory turnovers, and glazed hams to be shared during<br />
kantiks (carols) and all the other year-end events, confectioners<br />
work non-stop making chocolate to accompany the festivities.<br />
Tous aux fourneaux ! ~ C’est notamment<br />
le cas de Naomi Martino, formée à Paris par les<br />
Meilleurs Ouvriers de France, qui a ouvert son<br />
atelier-boutique en 2013 à Jarry. À 31 ans, cette passionnée<br />
de cacao imagine et concrétise bonbons,<br />
rochers, tablettes, mandiants et croquants qui<br />
réjouissent petits et grands. Noël, c’est la période<br />
la plus chargée de l’année, confie-t-elle avant de préciser<br />
: heureusement, j’aime me lever très tôt ! Et<br />
son énergie lui réussit ! À ce jour, elle est la seule<br />
agro-transformatrice de cacao du Papillon, ce qui a<br />
élevé la Guadeloupe au rang des « Pays producteurs<br />
de cacao ». Avec son équipe, elle gère donc toutes<br />

confectioner who opened her shop in 2013 in Jarry.<br />
Having trained with France’s best confectioners in<br />
Paris, the 31-year-old chocolate enthusiast imagines<br />
and creates bonbons, rochers, bars, mendiants and<br />
brittles that delight young and old alike. “Christmas,<br />
that’s the busiest time of year,” admits Naomi, before<br />
adding: “It’s a good thing I like getting up early!” And<br />
her hard work has brought her success! Currently, she is<br />
Guadeloupe’s only cocoa farmer and bean-to-bar<br />
confectioner, raising the island’s rank of “cocoa-producing<br />
country.” With her staff, she oversees every single step,<br />
