DES COULEURS DU JAPON DURANT 10 SEMAINES À<br />
PARTIR DE SEPTEMBRE <strong>2018</strong>.<br />
Parfait connaisseur de l’art culinaire nippon, Joël Robuchon a ouvert<br />
« Yoshi » (Bonté en japonais), il y a 10 ans, sous l’égide de<br />
Christophe Cussac. En cuisine, ils recrutent le chef tokyoïte Takeo<br />
Yamazaki issu du premier restaurant gastronomique au Japon « Château<br />
Robuchon ». Après un passage à la célèbre école supérieure du maître<br />
Hiroshima Koyama, Takeo Yamazaki prend place à « Yoshi », où la magie<br />
opère. Le principe fondateur est un mélange magistral des influences<br />
françaises et nippones d’une créativité surprenante. Parmi les chefsd’œuvre<br />
culinaires, de prodigieux sushi, sashimi et maki et des plats<br />
signature tels que le sublime « Ebi Shinho », des boulettes de crevettes<br />
au consommé de Kombu ou le « Ghindara No Saikyo Yaki », un black<br />
cod mariné délicatement fondant. En 2009, « Yoshi » obtient une étoile<br />
au Guide Michelin, la première table japonaise jamais élue par le guide<br />
rouge. Pour ses 10 ans d’ouverture, de nouveaux sushis inédits seront<br />
créés en exclusivité, et la décoration, épurée et chaleureuse imaginée<br />
par le designer star Didier Gomez, fera peau neuve en dévoilant une<br />
nouvelle pièce maîtresse en plein cœur du restaurant : « la table de<br />
présentation ». Elle mettra en scène une sélection ultra-pointue des<br />
meilleurs sakés, whiskies et thés rares japonais. Durant ses 10 semaines<br />
de festivités, des ateliers mettant en valeur la culture nipponne seront<br />
organisés pour y découvrir la calligraphie, l’origami, l’ikébana (l’art de la<br />
composition florale) ainsi que des Master Classes autour du saké, du thé<br />
et du whisky. La décoration du lobby se transformera aux couleurs du<br />
Japon pour fêter ces 10 années de voluptés nippones !<br />

WEEKS FROM SEPTEMBER, <strong>2018</strong>.<br />
An infallible connoisseur of Japan's culinary art, Joël Robuchon opened<br />
"Yoshi" ("Goodness" in Japanese) ten years ago, under the aegis of<br />
Christophe Cussac. To run the kitchens, they brought Tokyo-born chef<br />
Takeo Yamazaki from "Château Robuchon", his first gastronomic<br />
restaurant in Japan. After a spell at the famous graduate school of the<br />
master Hiroshimo Koyama, Takeo Yamazaki took up his duties at<br />
"Yoshi", where the spell soon began to work. The founding principle is<br />
a masterful blend of French and Nippon influences of amazing<br />
creativity. Among the culinary masterpieces, divine sushi, sashimi,<br />
maki, and signature dishes such as a sublime "Ebi Shinho", little balls<br />
of shrimp in a Kombu consommé, or "Ghindara No Saikyo Yaki",<br />
marinated and soft, melting black cod. In 2009, "Yoshi" was awarded<br />
a star by the Michelin Guide, the first Japanese restaurant ever<br />
rewarded by the famous red guide-book. For its 10th anniversary,<br />
brand new sushi will be created exclusively for the restaurant, while<br />
its warm, sleek decor dreamt up by star designer Didier Gomez will be<br />
treated to a facelift and unveil a new centre-piece at its very heart: the<br />
"presentation table", offering a cutting-edge selection of the best sakés,<br />
whiskies and rare Japanese teas. During the 10 weeks of festivities,<br />
workshops demonstrating Japanese culture will be held for fans to<br />
discover calligraphy, origami, ikebana (the art of flower arrangement),<br />
together with Master Classes focusing on sake, tea and whisky. The<br />
decor in the lobby will be transformed to fly the colours of Japan, to<br />
celebrate these 10 years of richness from the Land of the Rising Sun!<br />
