No cooking with this cooling citrus based soup topped<br />
with fresh avocado, radish and cilantro.<br />
Ingredients:<br />

1 cup chopped onion<br />
1 tbsp. kosher salt<br />
3 firm ripe avocados<br />
1 qt. fresh orange juice<br />
(about 1 doz. oranges)<br />
1 cup fresh lime juice<br />
(6 limes)<br />
2 tbsp. olive oil<br />
1 tbsp. sugar<br />
½ tsp. black pepper<br />
¾ lb. plum tomatoes,<br />
diced ¼ inch, seeded<br />
1 cup diced radishes<br />
¼ cup white mushrooms,<br />
thinly sliced<br />
Chopped cilantro<br />
(garnish)<br />

Here’s Here’s how how you you do do do it…<br />

Toss onion with 1 tbsp. salt in a bowl, let stand<br />
30 minutes. Put onion in a sieve and rinse, and<br />
then squeeze out excess water with your hands.<br />
Quarter, pit and peel avocados and cut into ½<br />
inch cubes. Whisk together orange juice, lime<br />
juice, olive oil, sugar and pepper until sugar is<br />
dissolved, gently stir in onions, avocados,<br />
tomatoes, radishes and mushrooms. Chill<br />
covered, 1 hour. Serve chilled with cilantro<br />
garnish.<br />
Ya might even throw in some shrimp or crab.<br />
